This Sake is a nice change from what I have been drinking recently. It has a sugary sweetness similar to a ripe muscat. There is a Medium mouth feel followed by a slight dryness at the finish for a clean aftertaste. Delicious. 😋

The sake I chose when I returned home for Obon was Gold Junmai Daiginjo by Popular Sake Brewery. This sake brewery is very particular about the traditional method of making sake, and everything is made in wooden vats. It is a junmai daiginjo that is polished to 50%, so there is no cloying taste at all ✨It starts with an elegant sweetness and rice flavor, with the aroma of the wooden vat and a slight bitterness at the end. Delicious 😊.

Hakkeikubiki is a series of the eight blessings of Kakizaki: sun, water, earth, sky, wind, trees, snow, and people. This is wind. Come to think of it, it was windy in Kakizaki. This is the second bottle from the Sake Rice Study Group. The sake rice is locally grown Koshitanrei. The aroma is light, but has the gorgeous flavor of a daiginjo. The taste is very broad. It is delicious.

Purchased at Sake-no-Oyama in Joetsu City in July. I rescued a spring sake that was left behind in the summer. I don't usually drink this brewery, but I picked it up because it is made from 100% Koshitanrei sake produced in Kakizaki. Pouring it into a glass, I noticed that it was slightly colored. The top rise is gentle, but the aroma is of rich rice. Perhaps it is because it was bottled in February, but it seems to have become richer than the original flavor with the passage of time, though not as much as the matured aroma. When you drink it, it has a robust Koshitanrei flavor! There is almost no sweetness, and you can feel the rice straight away. The passage of time also gives the impression that the umami has increased. The alcohol-derived acidity tightens the overall flavor. Since it is unfiltered, it is fresh and easy to drink. When asked what the umami of rice tastes like, this sake is the first to answer. I would like to be the first to offer this sake when asked what the umami of rice tastes like. It is not just sweet and tasty, but tasty and delicious. I have found the next best Koshitanrei sake after Yukihonbai and Kaminari. Koshitanrei is the best!

I've never seen this brand before. It's mostly consumed in Niigata Prefecture, so it's not sold outside the prefecture. I was lucky enough to drink it 😄. It's chilled but very juicy, and it's a true trendy combination of sweetness and refreshment. I drank it at the end of a drinking party, so there wasn't much left of the knob, but it's a very powerful drink that works well on its own. I'd really like to taste it at home, so if I find it somewhere else, I'll definitely buy it 😙. But I drank too much yesterday 😨
