This Sake is a nice change from what I have been drinking recently. It has a sugary sweetness similar to a ripe muscat. There is a Medium mouth feel followed by a slight dryness at the finish for a clean aftertaste. Delicious. 😋

The sake I chose when I returned home for Obon was Gold Junmai Daiginjo by Popular Sake Brewery. This sake brewery is very particular about the traditional method of making sake, and everything is made in wooden vats. It is a junmai daiginjo that is polished to 50%, so there is no cloying taste at all ✨It starts with an elegant sweetness and rice flavor, with the aroma of the wooden vat and a slight bitterness at the end. Delicious 😊.

Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft.
