New Year's Eve Sake! Hachitan-nishiki raw sake from Jikin, a long time ago! A bottle with a sense of stability and mellowness that is irresistible! Transparent, smooth and full-bodied! Aroma of 🍊 and 🍑 in the main! The sweetness and umami are so deeply penetrating...everything is perfectly balanced, including the chiliiness. ⚖️This is the first time I've had nama-shu ver, but it's not so different from hi-ire. I appreciate that I can enjoy it even if I leave it out of the fridge without losing its flavor! I was blessed with a lot of good sake in 2025! I hope to meet a lot of good sake in 2026 with good health!

I must drink this in winter! Kutouryuu Dorokuchi from Kuroryu! A bottle with a ripe melon taste and heavy alcohol! Full-bodied with a slight cloudiness! A hint of melon flavor! Direct sweetness as soon as you take a sip! The acidity is low and you can easily drink it, but it has 18 degrees of alcohol, so it's a bad boy!

Tsuneyama has sent us a very rare spec sake brewed with Miyamanishiki from Miyama-cho and Koshimizu, exclusive to the Echizen Miyama Jizake no Kai! As a Tsuneyama fan, I am honored to be able to review this sake 😎. A bottle of Tsuneyama style terroir shines through! Medium-bodied with a slight greenish tinge, it has a wonderful peach🍑 gin aroma! When you sip it, you will be overwhelmed by the tangy carbonation with moderate sweetness, and then spanked by the bitterness characteristic of Tsuneyama! The bitter taste, which is characteristic of Tsuneyama, makes it sharp and clean! As expected, there is no roughness! It is refined and extremely delicious! It is similar to the Miyamanishiki Tsuneyama, which I drank in the spring and was very impressed with! Miyama District: This is a mountainous area of Fukui City and the main production area for the sake rice used in Tsuneyama. The cold temperature difference is said to produce high quality sake rice. Echizen Miyama Jizake no Kai: This is a group where Tsuneyama brews Miyama Reimei, a local sake from the Miyama area, and is in essence a hanpukai run by Tsuneyama. Last year it was closed by the time I got into Tsuneyama, so this year I got my wish and signed up 😎.

Drinking famous sake! Haneya from Toyama A fresh, mellow, fruity and sweet bottle! Light body with a slight greenish tinge. The piquancy is a little bit reserved! The acidity is also moderate! This allows the mouth to be filled with smooth, juicy Muscat sweetness! I think this may be the first time I've ever had such an elegant and dark Muscat! Drinking famous sake! From Kyoto, Japan A new brand starting in 2020! A bottle with a unique and delicious taste with a Japanese touch! Transparent light body, bubbles visible in the glass, not too gassy. Mild but distinctive aroma when you put your nose close to it! Young 🍑? It also reminds me of Japanese citrus and persimmon! Delicate sweetness and umami melted in crystal clear water! The acidity is low compared to the aroma, and there is a perfect balance of sweetness, umami, and acidity! It is an interesting sake that has the potential to play a supporting role as an accompaniment to a meal, but also has the potential to be a gorgeous sake that stands alone in the front. Drinking famous sake! Kaze no Mori from Nara I heard that they have a unique method called ikakidori, which prevents oxidation as much as possible during bottling. Merikuri! So, a snowman from Senkin, Tochigi! Apparel? It looks like a collaboration with United Arrows of A 🍐-like mellow aroma! Medium-bodied Surprisingly moderate sweetness and acidity both in the mouth and in the mouth. First time to Niigata for various reasons. Tonight is a drinking party, but it's my first drink in two weeks, so I'm going to kick back and rehabilitate myself. It's been a long time since I've tasted Koshinotaka. In Fukui, where most of the sake is medium-bodied, this sake brewery seems to be known for its dry sake. They have been reviewing their style since the change of brewer, and they are going to focus on Junmai Ginjo. We will have a Sandeshi made from Sakahomare. Light-bodied with a slight color. It has a gentle ginjo aroma, but it is not very noticeable. It was introduced as 🍎 at the store. When you drink it, it gives a moist impression, with a hint of sweetness, along with low acidity, and a bitter taste that finishes with a kick. It is light. There is no cloying taste, which is nice, and it seems to go well with meals. However, it may lack impact... The standard Jungin is minerally dry and easy to understand, but when Sakahomare, which can easily produce a gentle sweetness, is introduced, the direction may still be a little off. I would like to see a little more flamboyance. Tonight's lineup is light and dry, so I will try to compare the two.

This is my first time to drink Toyama sake! I went to buy some Fat Koma, but they didn't have it, so I bought this one. It seems that there was a time when he was the toji (master brewer) of both Katsuyama and Toyama, and it is as good as ◯Koma! It seems that most of the sake is consumed in Toyama. Transparent light body! Fairly mild aroma of banana flavor. It was quite rough when it was first opened, but it settled down and became like clear water! Modest sweetness, no acidity, soft and sharp! Flows down the throat quite softly compared to modern types. I spent about a month drinking it and had it as an accompaniment during meals! I've never had Katsu Fat, but no wonder it's so highly rated!

Rice wine again! This is a version of Tokusyu Junmai made in Yamahai style! A bottle with rich umami that can be enjoyed at a wide range of temperatures! Transparent, medium-bodied, with a gentle 🍐 aroma! Gentle aroma of 🍐. When served cold, it has a slightly subdued sweetness, umami, and bitterness. I've heard that its true value is revealed when heated, so I warmed it up to the upper temperature and found a rich aroma of 🍐! The sweetness, umami, and acidity swelled up and it was delicious!
