Spend GW with this girl! This is a very limited edition sake from Tsuneyama that sits only in a limited number of distributors! I was hesitant to buy it because it's a bit pricey & it's a bottle, but I bought it after reading Nork's review! I was hesitant to buy it because it was a bit pricey & only available at a limited number of dealers, but I bought it after reading Nork's review! The picture below shows a gorgeous bottle of this sake made from a pure Daigin standard of Gohyakumangoku (Tsuneyama Kyokyu?) with a lot of sake lees from Sakahomare brewed with the same sake! Open the bottle! The pressure was so strong that I thought my fingers would be blown off 😂They are very vigorous! Automatic stirring as a matter of course lol... The aroma is quite mild. It has a nice sakekasu aroma! If it's a polar base, it will turn into melon in time 🍈. When you include it...it's delicious! 🫨🤣🫨🤣 Well, it's a Tsuneyama, so it's what you'd expect, but it's a dry, refined Tsuneyama with a stronger than usual carbonation! It's dry when cold and melon-like sweetness as the temperature rises. ☺️ It was quite dry at first sip, but after about an hour it became sweet, delicious and spicy carbonated, quite different from the Tsuneyama Kyoku. ☺️ Echizen dry is the best! It's designed to stick straight to those who properly like Tsuneyama!

Terroir sake brewed with Echizen-machi rice by Niu Shuzo of Echizen-machi, Fukui! Asukai The sake here is easy to drink and quite dry and delicious! This is a new item, a pure rice sake with no additives! The label is impressive! I'm going to explore the frontier because it's hard to find reviews on the net! I'm going to pioneer the frontier! Interesting specs: no additive yeast. That means only brewed? 🧐 The aroma is a blue melon type? Mild but beautiful! When you drink it, the umami acidity is strongly assertive! But it's on very clean water and disappears quickly with the sweetness. It is probably quite dry, but there is no cloying taste and it is very easy to drink! It is very robust even when served cold! It will probably be great warmed up, but I think I'll just drink it all cold 😂. I'm smiling at the refined high alu classic 😄The type of sake my body craves after a long day of modern types. I'm sure this type of sake will have some unpleasant taste, but it's great that it doesn't have any unpleasant taste! It seems that there was a time when the brewery was connected with a current toji, but now it seems that Mr. Io is brewing sake from the hip. First sogape, a shocking encounter🫨. The long sentence on the back of the label gives me a sense of the philosophy, and my expectations are high! The yeast mixture sounds really interesting! After reading the past reviews, I had a glass of it cold. As the back label says, the fragrance is restrained, and there is a yogurt feeling. It tastes ...... good when you drink it 🫨 This is delicious without bias... Very moderate sweetness, makes you understand that sweetness should be this much. And the characteristic acidity... The chemical reaction between the traditional sake yeast and wine brewing know-how is extraordinary. ......... This mellow acidity establishes a solid framework even when the sake is cold! Delicious! It's like a sake with wine in its previous life. As the temperature rises, the sweetness comes out as usual, but I would like to drink this sake cold. It is hard to find, but I can understand why it has a strong fan base. It is delicious! I want to buy it as soon as I find it. I seem to be under the spell of Sogape too! I went to Echizen Sake Noten Hayashi with the intention of stocking up on about three bottles of undrinkable sake. It's a magnum, so the shape is different from other bottles and it really stood out... Apparently there was a cancellation and it was a miracle that I was able to pick it up 😂I was seriously close to buying it because I hesitated to buy it for a moment...

I thought it was a progressive sake, but it's insanely sophisticated! Like Tenpyo from my hometown Nishi Brewery, I can see how a brewery that has reached the top of its game in a certain sake category can apply its know-how to other genres of sake as well!

Drinking out-of-prefecture sake! This is also my first time drinking Kido at home! I didn't know until after I bought it that it's an amazingly affordable sake... It's hard to believe that it costs less than 2,000 yen for a bottle! Good Sake with a melon-like aroma and sweetness!

Drinking famous sake! We stocked up on our first Jikin with a full bottle of sake! The Yongo bottles were already gone, so I took the plunge and got the Ichimasu bottles! It was the first Jikin to be released! Please try it 🫡! The aroma is mild, but the 🍏 yogurt aroma, which I also get from Kuroryu, really opens up! Tropical on the palate! The slight carbonation tickles your tongue even though it is fire-brewed! The balance of sweet, sour, and astringent aromas is excellent, and it flows smoothly! This is what you call minerality... The aftertaste is elegant 🍐. As the temperature rises, the elegant sweetness comes to the fore! Delicious 😋. It's not the type of sake that tries to win with one trick, but rather a hard-edged, honors sake that has stuck to the high standards. Mie terroir is also good! Also, the fact that it is not low alcohol with this taste is a good point!

Another takachiyo I purchased in Osaka! A luscious bitischuwa! Sweeter than strawberries! If you're not careful, you'll drink too much. ☺️ The saké glass is nice, but the Echizen ware choko (cup) accentuated the berry-like sweetness!

A new series of Kuroryu with different sake rice! Brewed with Kuroryu's original method and brewer's yeast! Is it sake rice from Hokkaido? ☺️ It has a good reputation! Day 1! A typical elegant Kuroryu! It's good, but it's hard to tell the difference from other Kuroryu, or is it too hard? Maybe I expected too much...? 🧐 3rd day! It's sweet! The tart, elegant sweetness spreads in a ripe banana-like manner ☺️ It's quite sweet, but the elegant bitterness makes me drink more and more of it! This change is why I can't stop drinking at home!

This year, Kutouryuu Jungin Dareguchi was overshadowed by Kuroryu Jungin Dareguchi and could not be found at all! The Kutouryuu series is characterized by its high cost performance and the use of sake rice produced in Fukui! Last year, when we had a first contact with this sake, we were impressed by its rich and fresh melon flavor. ...... is a twist, isn't it? I'm not sure if it's a good idea to buy a bottle of sake that's been in production for 6 months.... I'm not sure I would have noticed the twist if I hadn't had the experience of drinking it. On a side note, the master of the liquor store told me that Kutouryuu's new autumn sake will be hiyaoroshi, which is a hiyaoroshi with a dripping mouth. Sounds sweet!

Today is a fine day in Fukui! So, we will have spring sake from Tsunezan! The spring and fall seasonal sake comes from "Eika Gingetsu," which means to love the season and enjoy it honestly, which is wonderful! Gingetsu is also very tasty! The sake rice is Sakahomare! It is a variety characterized by its elegant sweetness! Aroma like melon or peach when you drink it. The chili flavor supports the sweetness and is delicious! This spring sake is a perfect match for the cherry blossoms along the Ashiba River (and the sake brewery is close by)! (And it's close to a sake brewery.) p.s. Maybe it's because Tsuneyama's reputation for seasonal sake has grown this year, but the larger liquor stores were out of stock, so I had to make the rounds of the liquor stores to get my hands on some!

Takachiyo stocked up in Osaka! I've been waiting all week for this 😍 What's up with going down south to stock up on sake from the north? I'm not sure 🧐. Since it's an orikara, I'll start with the top clear...oooh! Bichishuwa! It's a dry carbonated juice! Next, I shook it well and drank it with ori. Well, it is a rice cider! The sweetness increases, and you feel like you are drinking a moderately dry carbonated beverage! It is dry but thick, and I felt the limit of my ability to express myself in this area! If I didn't have to worry about money and my liver cells, I would pour this into a mug, cool it down, and drink it while it lasts! I want to drink this in summer!

I've been drinking past sake on the day I took a break from drinking! I'm about to drink Kuroryu Ginpu. It had a gentle floral aroma! It was quite similar to Eshikoto's Sakahomare Special Junmai in the third picture (I forgot to put a detailed taste note here 🫨, incidentally, a memorial service). It is a light, sweet and bitter sake that goes in as easily as a clear stream, but it is the kind of sake you want to drink while calming down and exhaling a sigh. I guess it means that you should enjoy the rich sweet taste with a Kutouryuu-doroguchi.

It's been a while since I've had a regular Tsuneyama! I've been drinking a lot of sweet sake lately, so the fine dryness of Tsuneyama really hits home. ☺️ The aroma is somewhere between modern and classic, and when served cold, it is dry and easy to drink with little sweetness! The sweetness increases as it gets closer to chilled. A standard that shows off Tsuneyama's individuality! Should have been bottled in a 4-ounce bottle at least!

I wasn't sure if I wanted to go to the first one because of the good selection, but I was caught by the restaurant-only offer and went to Saku-san. As the description says, it has a gentle apple aroma, and it also goes in smoothly and elegantly. ☺️ It was hot today, so I was very satisfied with the refreshing sake! I hope to have Saku in my house someday!

Since I came all the way to Osaka! I started with a cold sake. It was dry and refreshing, and went down smoothly...but there was a distinctive bitter taste in my throat, which I might not like 🧐...like I was drinking shochu when I was supposed to be drinking sake? I was cold when I was drinking it. The bitterness comes to the fore ...... is this surprising? I don't have the vocabulary to describe this flavor, but it has a kind of herbal bitterness. Bitterness can have a negative aftertaste, but when it comes to the front, it has a delicious herbal liquor or coffee-like flavor. Maybe it is because I served it cold, or maybe it is because it was exposed to air...at any rate, I liked it better cold than cold sake.

I was on a trip but had time until errands, so I hurriedly went to Hanami Sake! We were able to stock up fruitfully at a liquor store that also sells sake by weight! I chose Ishizuchi for my first hanami sake! Because it uses flower yeast? It is fragrant and has a classic, orthodox sweet taste! It went well with Hanami!

What a first for me, Kikusui Funaguchi! I have always been curious about it. The price was high for me when I didn't drink sake, and when I started drinking sake, it wasn't in my price range. Before thinking about it, I decided to give it a try! When I opened the lid, I was astonished by the smell of nama-zake, which I often smell! When you drink it, you will be astonished by the taste of proper nama-shu (not cheap sake)! (It must be kumquat). After a while after opening the bottle, the bitterness of the high ales are noticeable, but it's not bad!

Wakasa Sake Brewery! Hayaseura The label is always sparkling and cool with the words "Hayaseura" on it! Well, this Hayaseura is a sake that has been loved by fishermen in Wakasa. The introduction says that this sake has been loved by fishermen in Wakasa, so one might imagine it to be a heavy sake, but my personal impression is that it is a light sake with no off-flavors. There is no unpleasant taste anywhere. I think it is one of the best examples of Fukui's food sake. Drink it with gusto! Urasoko is quite a strong fruity sake, but basically it is consistent with this light, sweet and spicy taste. Even cold sake has a flowery, mellow aroma. The flavor is moderate. The gentle sweetness of Sakahomare is well expressed in Hayaseura. However, it is probably too light for those who think Kuroryu Jungin (including other Hayaseura) is too light. The hurdle for mellow has been raised too high, and it may be light and dry.
