Drinking famous sake! The first Toyo Bijin from Yamaguchi! The sake rice is Hakutsuru Nishiki, developed by Hakutsuru, the brother of Yamada Nishiki! The wine is clear, medium-bodied, sweet, with a firm umami flavor! It has a sweet, robust flavor and is very moist! The aroma was not my favorite on the first day, as it was like old sake. Another happy Jikin rep! Made with Senbon Nishiki, a sake rice produced in Hiroshima, where the National Sake Brewery Research Institute is located! It's really good from the second day! Everlasting Mountain! A classic for a long time! The perfect time of year for this! The color is clear, and although it is not a pure sake, it is full-bodied! A happy repeat of Jigokudo! They use Asahi, an old rice variety used for sushi rice! Mouth opening was light bodied, but on the second day, it started to thicken! Transparent! Strong 🍊 aroma! When it's kumquat, a mellow acidity like grapefruit or orange attacks! The sweetness and bitterness come together around the acidity! The bitterness is an art form that makes you want to drink more and more! As the temperature rises, it becomes quite sweet, but the acidity weakens and it becomes lackluster (although it is delicious), so I like it at 5-10 degrees. I like it at 5-10 degrees. It is a sake that can express its character even when served cold! It was good on the first day, but on the second day, the sweetness opens up while maintaining the best parts, making it even better! Jikin is also good for changing flavors, so when available, a bottle is a must! The longest I can stay in Fukui is only a little over a year and a half left 🥲 Fukui has a lot of local sake that is not well known throughout Japan, including Tsuneyama, which I adore, and Echizen Sake Shop Hayashi, where you can buy great sake from all over Japan, which is a blessing for sake drinkers.... It's just so nice to be able to line up and buy a bottle of Niimasa or Jikkai. That alone is worth moving to Fukui City. I don't want to leave 🥲.

The first local sake from Tsukuba, Nenogawa! We got it from one of our senpai (senpai means senior). It's a direct draft! A spec that you don't hear much about this time of year, thank goodness! Full-bodied and clear! Even when chilled, it is fresh, smooth, sweet and delicious! The slight bitterness gives it a sharp edge. No acidity at all. It has no off-flavor and is quite easy to drink! Drinking Famous Sake! ICHIHAKUSUISEI from Akita! Mild aroma! Transparent, medium-bodied! Lush! And gassy! Fuku Chitose's brewer is a graduate of the winemaking department Koshihikari 90% polished rice with wine yeast, a metamorphic spec! The most famous and most repetitive rice wine! Carbonated schwa sake! It is a different level of schwarziness from activated sake! It's a very strong stimulation, like Pepsi Cola >> this >> Mitsuya Cider! When the bottle is opened, you can't really taste the sake 🤣. After about 3 hours, the carbonation weakens and the cider becomes moderately sweet 🍎 with a hint of melon, it's about as good as it gets! At any rate, it goes down fast without any alu feeling for 15%! Maybe it's a sake that you can open the bottle and adjust the carbonation to your liking!

Congratulations! The 100th bottle of Sake no.1 is also Tsuneyama's series, which I usually have a hard time getting my hands on! This series uses sake rice grown with less agricultural chemicals by farmers in Miyamacho, Fukui Prefecture, which has close ties with the Tsuneyama Brewery! The producer's name is also on the bottle! When the bottle is opened, it has a wonderful peachy scent! When you drink it, you will be surprised by the high density of sweet and tasty flavors that come with a slight carbonation! The sourness comes after that, and the characteristic bitterness of Tsuneyama is emphasized more than usual, and it finishes slowly.......well......I'm being patronizing, but this is by far the most delicious of all the wonderful sake I've had recently! Tsuneyama has always been a brewer of precise and delicious sake, but this is a gem that shows the difference in the amount of effort that has been put into it! You don't see it very often at liquor stores that carry Tsuneyama, but if you see it, please try it! I want to drink the Yamadanishiki one too!

I want you to drink this sake when you come to Fukui! I wanted to drink it for the first time in a while and bought it in Sakai City! This brewery brews with hard water, but the taste is gentle!
