Banshu Issen Lipi from Hyogo! The Aizan one was really good. Reasonably priced despite using top quality Yamadanishiki, as expected from Hyogo! Clear, medium-bodied, with a mellow 🍈 aroma. Dense and sweet, just like biting into a 🍈 fruit! The acidity helps to bring it all together. Gee, it's delicious! I see, Banshu Issen, juicy fruity and much like it!

Kamo Nishiki Lipi! Delicious sake from Niigata! The ultimate form of sake that makes you drink more and more... I'm careful not to open a 4-unit bottle in one day... but it was opened in plenty of time 🤣 even though it's 15 degrees! Koshitanrei is a cross between Yamadanishiki and Gohyakumangoku, a rice used for Daiginjo, and seems to be a good match for Kamo Nishiki, which is based on Junmai Daiginjo. When poured, it has a clear light body! A mellow aroma of rum! The taste is light, but the sweet and sour carbonation makes it delicious and easy to drink! When you want to drink it quickly and easily, it tastes 100 points!

Drinking famous sake! Ni-Uto again from Aichi As the concept suggests, this sake changes quite a bit! I thought it was modern on its own until I drank it, but considering it together with what I drank the other day, it's a very middle-of-the-road sake! Full-bodied with a light greenish tinge! The aroma is mugwort? When you drink it, it's richly sweet and sharp with a classic mitarashi feel! I'm thinking it's more complex than I expected, and then the sweetness is a mysterious concept of fruity Japanese sweets! I'm not sure if I can keep it until next week... 😂

Drinking famous sake! Hanamup from Akita Mellow, sweet and umami taste like Yamagata's Jyushiyo Medium bodied with a slight yellowish green tinge! Aromatic 🍇 aroma and freshness stand out! The rich sweetness spreads pleasantly, and the acidity is low...or rather, the fruity acidity blends into the whole and is too harmonious to hide its presence. Finally, it finishes with an elegant bitterness. This is the type of sake that has a lot of flavor, or rather a sake with a lot of stamina. It is delicious! I was able to buy it at one of the liquor stores in Nagoya with no particular conditions 😳 This weekend we had two particularly high quality sake (I personally wanted acidity, so I went for the Tsuneyama).

Tsuneyama's Autumn Sake, it's on the level of the case! 🤯. It's brewed with Sakahomare and Yamadanishiki! The new indigo label is cool! The aroma is reminiscent of ripe autumn fruits! The thick mouthfeel and deep aftertaste ...... will make you want to taste it with your eyes glazing over! It's so good 🥹. Of course it tastes great when it's cold, and even when it's close to cold, it thickens and doesn't lose its sweetness, so you can drink it slowly! I bought it in a bottle, so I'm looking forward to seeing how it changes! I bought a bottle of this in the late summer, so I'm looking forward to seeing how it changes! This is the best sake I've had this year by far, and it may even surpass Ji Fat! (This is the opinion of a Tsuneyama fan.)

A summer sake with a more formal taste than Tsuneyama! It looks like they dare not to make it look like hiyaoroshi. I like this jacket of the spring sake Eihana no Narunaru Sake, which is one of the best of all the sake. Unlike last year, Gingetsu seems to be divided into two types of sake. Until last year it was Sakahomare, but this one is Gohyakumangoku? It has a light body with a slight yellowish tinge! It has a light 🍑 aroma. When you drink it, the sweetness is subdued on the first day, but on the second day, the sweetness and acidity kick in! The umami is moderate, and it finishes with the good part of hiyaoroshi, a barley-like bitterness. This is a sake that goes well with the recent severe lingering summer heat! I would like to drink it cooled down to the perfect temperature. We hope you will try it soon! It is a different type of sake from the mellow Gingetsu that impressed me last year, but I admire the technical skill in making sake that meets the target!

Since I am in Hokkaido, I tried Kamikawa Taisetsu, which I have been curious about for a while! There is a directly managed store in Sapporo that offers tasting for a fee, about 0.75 gou or so for 440-550 yen, served in Riedel glasses. The owner also taught me a lot of things and we had a good conversation. I was told that Kamikawa Taisetsu is mainly fired by one flame, which gave me a fresh impression. I compared a few of them, so I'll give you my impressions in short. Tokachi Key KEG I appreciate drinking KEG's fresh sake at this time of the year 🥹 It is fresh, sweet, sharp, and tasty. A new product brewed by a new employee from ESHIKOTO, a Fukui limited edition sake from the Kuroryu Sake Brewery! Unusually yellowish-green in color for a Kuroryu. Medium or full-bodied. Specs are a mystery? But it's impressive, with a fresh aroma reminiscent of ramune and a smooth throat! The ginjo structure is solid. Fruity acidity in the middle bone, with a moderate sweetness. Drinking famous sake! The first Toyo Bijin from Yamaguchi! The sake rice is Hakutsuru Nishiki, developed by Hakutsuru, the brother of Yamada Nishiki!
