Eiheiji Hakuryu! It seems to be an ANA onboard memorial! This is my first check-in at Sakenowa, but I'm drinking there! The aroma is quite gorgeous, not quite fruity? When you drink it, the sweetness is quite strong at first! It's sweet like sugar cane. And then, it gets sharp, but it stays quite a bit. It has a pithy feel to it. In conclusion, it was not for me 😭It's too bad because it's quite expensive for a Hakuryu. I find many Hakuryu's to be quite easy to drink. The cosmetics are awesome too. However, there are some that suit me and some that don't... I like the Mizuiteki, Dragon Water, and Yuu series quite a lot, but I don't like Hakuryu Nyan or the sticky sweetness. This sake was in the latter category. I see some reviews saying it's pretty dry, I wonder if there are differences from lot to lot or something? I'm not sure if there is a difference between lots or not 🧐I would drink the tekiteki series if it were priced this way myself.

Hanagaki, what a first Junmai! First, cold, you can feel the richness that is typical of classic Junmai! Next, warmed sake! The umami flavor comes through as the temperature rises! But it didn't have the 🌰 feel I like in heated sake, so I think I prefer Hanagaki for heated sake. Now that I've learned how to warm it up, I'd like to try the popular Namahashime Junmai and Yamahai Junmai!

Drinking Famous Sake! Houou Mita from Tochigi! The cover is too cool 😳 Here we go! The aroma is much milder. When you swallow, the sweetness flows nicely with little bitterness, and it finishes nicely! This is indeed a famous ginjo brewery! It is rude to compare it to other breweries, but it has the taste of sweet Kuroryu, which is familiar in a good way! And the important part... thank you for the slightly higher alcohol content! You will not get tired of drinking it, so you can suck on it as much as you want!

Drinking famous sake! Mimuro Sugi, Nara's famous sake along with Kaze no Mori The aroma is mild. Smooth mouthfeel, with a ripe sweet umami flavor flowing through! Sourness is a little in the back! Polite with no cloying taste! A slight carbonation accentuates the taste. An excellent sake that I would recommend to anyone! Delicious as sake should be! It is best when it goes from chilled to chilled rather than not at all cold. Mimuro cedar is always gone as soon as it comes in, so I stocked up on it when I bought some Tasake. This will be a big seller!

Drinking famous sake! Shinsei for the first time Fruity aroma different from tropical type, sweet and sour taste! The sweetness and acidity are strong! The acidity is seriously berry 🍓picky! I often compare it to fruit, but this one could have just as easily contained 🍓 as it is. Moreover, it is full of rice-derived umami. Is this the essence of a sake brewery? It is amazing that this is made from rice! On a side note It seems that the numbered tickets for Type A were sold out at 6:00 a.m. 😅I guess it's not a lottery, so it's not so bad.

Drinking Famous Sake! Tasake from Aomori! I had a few drinks of Tasake at the restaurant and thought it was a good idea! I was so happy to have a chance to meet him, but after that, I didn't have a chance to meet him. I found a liquor store in Fukui that carries this sake, so I was excited to buy it! This sake seems to be brewed with a rare sake rice from Aomori! I immediately opened the bottle! The aroma is sweet, like a 🍇? The aroma is sweet! The sweetness is surprisingly soft and the sweetness spreads gradually! It's a gentle, clear liquid with no acidity and no unpleasant taste. ☺️ It's a beautiful soft water... And a delightful, solid 16 degrees of royalty! Fukui doesn't have many sweet sake with soft water, so it's a good match for drinking. At any rate, Tasake is indeed delicious, and the cosmetics are great!

I wanted to try a sake with Kochi's masterpiece yeast, so I had my first Kochi sake! It was just as 🍍🍍🍍 as rumored! Thick bodied, firm, sweet and delicious! Sweet! Lingering finish is quite long. It's like a can of pineapple made into an elegant sake. No pizzazz. This is the first time I've seen a non-raw one of this type! While I like raw sake, I'm sad when it twists, so this may be my favorite spec. I wonder if there will be more of this. I've been looking for 🍍, and finally found it! I'd like to try the other CEL24! I think the only one I can get over here is Bikou.

Summer sake from Tsuneyama! Refreshing light blue label with sea bream: ☺️ Designed to smell like ramune even when chilled to a crisp! The modest piquancy and gentle sweetness make it go down very well! The soft bitterness you can feel in the depths of the lower part of the bottle gives it a strong kick! Drinking Famous Sake! Eiko Fuji from Yamagata! 100% Comet, new yeast from Yamagata, and a new brand for the first time! Lactic sweetness and acidity! It is delicious, but not so characteristic? Kuroryu Shuzo is a Daigin brewery, but that does not mean that the Kutouryuu we drink every day has been skimpy! The clean taste and clean mouthfeel of Junmai sake is still there! It's a sake that speaks for itself, a sake that can be drunk without being overbearing, and for that I am grateful! The cheapest sake is also delicious, but it really does have a little bit of an "alu" taste to it. This one is soft and delicious!

A new series from Tanabe Shuzo, which brews Echizen Misaki! This is a limited edition sake from the brewery! It has a mild aroma of 🍏 and 🍌! When you taste it, you will be surprised at the sweetness and umami that flows through the mouth! The aftertaste is fruity! It is not a flashy type of sake, but it asserts its quality and robust flavor when compared to Koei Kiku or Eikoufuji! It seems to be brewed with pesticide-free rice grown by the brewer in Fukui's climate (i.e. no thermal tanks)! Compared to the same Gohyakumangoku rice, this rice is said to dissolve well! I feel that its umami is coming out well 😳. It was nice to talk with the toji-san! Both the brewer and the toji-san were very kind and I was able to ask them many questions! I highly recommend this sake! If you are ever in Fukui, be sure to stop by (there is also Kuroryu Shuzo nearby and Yoshida Shuzo of Eiheiji Hakuryu a little further away)!

Drinking Famous Sake! Koei Kiku, a rising star from Saga! First time but not Sky, first released summer sake! A light cider with little aroma and 🍎 on the palate and a fairly short aftertaste! A little bit of 🍋 and a little bit of rummy, a little bit of sweetness, and a lot of gulping! Hokkaido sake rice and Saga yeast! This beautiful sake is made with low rice polishing! Drinking famous sake! Packed tag sake from Niigata, the magical land of sake The design with a cargo tag pasted on the bottle is eye-catching all the way around! Without any ostentatious remarks, let's start with the first sake of the first match! The aroma is mild, as is typical of fine Hokuriku sake! Oh no! The sweet peach is delicious! Not too much acidity! The carbonation is not a bumblebee, but rather a pleasantly sharp carbonation that accelerates the sensation as it rushes down your throat! This carbonation is my personal favorite! It is truly fresh and light! It's not as spicy as I imagined, and it has a juicy texture... It's a nuance, but it's not the same as "mellow," but it's thick. It is juicy and light, which is a pleasant contradiction! In a good way, it is hard to believe that this drink is made from rice! Almost everyone who can consume alcohol will say it is delicious! I wonder if the 8:2 ratio of Gohyakumangoku:Yamadanishiki was also the result of trial and error to achieve this flavor 🧐. There are many varieties of sake with a lot of labels, so I went for the one with the most standard label. ☺️Takachiyo is not available here, but this one will satisfy your desire for a light and juicy sake! I'm not sure how long it will take me to write this review, but it's gone like an idiot..!

One of the best sake brands in Fukui! One of the best sake that makes me glad I came to Fukui! Summer sake is out... but it's just barely spring, isn't it? 🤣 It has a malty but elegant aroma similar to Hakuneri (Hakugakusen Jungin)! After the necessary sweetness, the sweet, sour, and bitter flavors flow like a clear stream with a beautiful effervescence! It's the kind of flavor that makes you want to drink it in gulps! This elegance...Good Echizen quailty..... I'm sure you like Hakugakusen's raw sake! I used to avoid Hakugakuzen's low alcohol seasonal sake because of its low alcohol content, but it's still delicious 🧐.

Spend GW with this girl! This is a very limited edition sake from Tsuneyama that sits only in a limited number of distributors! I was hesitant to buy it because it's a bit pricey & it's a bottle, but I bought it after reading Nork's review! I was hesitant to buy it because it was a bit pricey & only available at a limited number of dealers, but I bought it after reading Nork's review! The picture below shows a gorgeous bottle of this sake made from a pure Daigin standard of Gohyakumangoku (Tsuneyama Kyokyu?) with a lot of sake lees from Sakahomare brewed with the same sake! Open the bottle! The pressure was so strong that I thought my fingers would be blown off 😂They are very vigorous! Automatic stirring as a matter of course lol... The aroma is quite mild. It has a nice sakekasu aroma! If it's a polar base, it will turn into melon in time 🍈. When you include it...it's delicious! 🫨🤣🫨🤣 Well, it's a Tsuneyama, so it's what you'd expect, but it's a dry, refined Tsuneyama with a stronger than usual carbonation! It's dry when cold and melon-like sweetness as the temperature rises. ☺️ It was quite dry at first sip, but after about an hour it became sweet, delicious and spicy carbonated, quite different from the Tsuneyama Kyoku. ☺️ Echizen dry is the best! It's designed to stick straight to those who properly like Tsuneyama!

Terroir sake brewed with Echizen-machi rice by Niu Shuzo of Echizen-machi, Fukui! Asukai The sake here is easy to drink and quite dry and delicious! This is a new item, a pure rice sake with no additives! The label is impressive! I'm going to explore the frontier because it's hard to find reviews on the net! I'm going to pioneer the frontier! Interesting specs: no additive yeast. That means only brewed? 🧐 The aroma is a blue melon type? Mild but beautiful! When you drink it, the umami acidity is strongly assertive! But it's on very clean water and disappears quickly with the sweetness. It is probably quite dry, but there is no cloying taste and it is very easy to drink! It is very robust even when served cold! It will probably be great warmed up, but I think I'll just drink it all cold 😂. I'm smiling at the refined high alu classic 😄The type of sake my body craves after a long day of modern types. I'm sure this type of sake will have some unpleasant taste, but it's great that it doesn't have any unpleasant taste! It seems that there was a time when the brewery was connected with a current toji, but now it seems that Mr. Io is brewing sake from the hip. It is a small brewery with little distribution, so if you see it, please pick it up.

First sogape, a shocking encounter🫨. The long sentence on the back of the label gives me a sense of the philosophy, and my expectations are high! The yeast mixture sounds really interesting! After reading the past reviews, I had a glass of it cold. As the back label says, the fragrance is restrained, and there is a yogurt feeling. It tastes ...... good when you drink it 🫨 This is delicious without bias... Very moderate sweetness, makes you understand that sweetness should be this much. And the characteristic acidity... The chemical reaction between the traditional sake yeast and wine brewing know-how is extraordinary. ......... This mellow acidity establishes a solid framework even when the sake is cold! Delicious! It's like a sake with wine in its previous life. As the temperature rises, the sweetness comes out as usual, but I would like to drink this sake cold. It is hard to find, but I can understand why it has a strong fan base. It is delicious! I want to buy it as soon as I find it. I seem to be under the spell of Sogape too! I went to Echizen Sake Noten Hayashi with the intention of stocking up on about three bottles of undrinkable sake. It's a magnum, so the shape is different from other bottles and it really stood out... Apparently there was a cancellation and it was a miracle that I was able to pick it up 😂I was seriously close to buying it because I hesitated to buy it for a moment...
