The supernatant aroma is like ripe peaches.
The taste is fresh and fruity, even more so than the peach I imagined.
When mixed with ori, it becomes soft and elegant.
You can feel the rice flavor.
I wondered what would be good to pair with the first anglerfish I bought at my favorite Hoshikawa fish store 🤔 and chose this one👍.
Let's start with the first sip. The nose is fresh and lightly acidic with a hint of citrus. The sweetness in the mouth is refreshing, and the sourness is reminiscent of mikan 🍊 and the bitterness of eating the peel.
I first tried it with anglerfish and tomo-aye. The tomo-ae itself was very tasty, but the combination with the sake was so-so. I think heated sake would be a better match. Next, I served it with the sakekasu-marinated musuko (fish roe). The salty taste of the musuko and the unique flavor of the sake lees matched well with the Hatsushibori Ona 😁.
