It is the first Collage with a sweet taste.
It is a very interesting bottle with a sweetness while keeping the style of the Collage. It's a little heavy and thick, but it's delicious.
Tonight, I'm opening my second bottle after yesterday🍶.
Another one that has been laid up for about a year and a half: 💁♂️
Collage Junmai Ginjo Natsugin Usu Nigori 2022BY✨
After the recent Oragami lot difference, I would like to drink the Natsugin Usugori ☺️
The aroma is not so strong, probably because it is fired. It has a hint of clear melon scent.
The sake has no gassy feeling, but it has a strong acidity and a moderate sweetness, with a dry, refreshing aftertaste that is easy to drink and delicious.
After the light nigori, there is no major change, but the bitterness has been added and the quality of the sake has become more mature 😊.
Four bottles of Aizan to be drunk in 2024
The first one is Collage Ken Aizan Junmai Ginjo
The first one is a very limited edition of Collage, only available at Suzuden in Yotsuya and some other stores.
It is brewed with Tokushima Prefecture's Ken-Aizan, and you can enjoy its acidity, umami and drinkability.
Miyazumi Meikozo is a brewery in Aizuwakamatsu, Fukushima, Japan. The brewery is a friendly rivalry with Hiroki Shuzo, the senior brewer of "HIROKI", and I wanted to try it once, but I couldn't find it with HIROKI.
However, after running some errands, I happened to encounter it at an udon restaurant I happened to enter.
It has a nice aroma like cherries, a gentle sweetness, and a refreshing finish. It was a cup of sake that is enjoyable as a mealtime drink.
The third picture shows sparrows with round winter hair.
⚫︎Raw material rice: Yume no Kou
⚫︎Polishing ratio: 60
⚫︎Nihonshu degree: +1
⚫︎Alcohol degree: 16
It has a gentle, full rice sweetness and umami, and the clear taste of pure brewing water.
The taste is clear and elegant, with no cloying taste even when the cask is stirred.
The taste of Collage is just wonderful. It is the pride of the brewery.
