Sake Shop Shichikura (Sapporo) When opened Almost no gas Slight pineapple and melon-like top notes The same fruity aroma, soft rice flavor and fresh sweetness spreads with lactic acidity, and the weak alcohol is spicy and slightly bitter, and it finishes quickly. The first half is fruity and you can taste the delicious sweetness of the rice, but the second half is interesting in how quickly it clears up. It is a good match for a meal as it finishes quickly, but it is also delicious on its own. It went well with pasta with shrimp, scallops, and mushrooms in tomato sauce and Andopan's focaccia. Ingredients : rice, rice koji, brewers' alcohol Rice used : 100% Niigata rice Purchased at a local supermarket Banana and melon-like top notes with a hint of alcohol The same fruity aroma as the top shelf, full sweetness and rice flavor spreads with a thin acidity, and the aroma and rice flavor remains, while the spiciness and bitterness of the alcohol makes it crisp and refreshing. Compared to new sake new rice ginjos and limited edition daiginjos, the sweetness was stronger. It has a strong alcoholic taste, but it goes well with meals and is also delicious on its own. It may be useful to be able to buy it anywhere at any time. It went well with Uchi's check-in recipe for seared yellowtail in karashi soy sauce, normal sashimi, simmered isotsubu (salted), udon, tempura, inari sushi, and maki sushi.

The sweetness of the rice malt tops it off. It has a fruity aroma like melon mixed with the top-fermented aroma, a full, fresh sweetness and rice flavor that spreads pichijuwatto with lactic acidity and a gaseous sensation similar to sparkling, and it is assertive, mildly bitter, and crisp. It is not too sweet, and the strong gassiness and bitterness make it a refreshing drink that goes well with meals and can also be enjoyed on its own. After the second day, the bitterness becomes less of an issue, which is a good sign. It went well with Beaver's ume flavored, wasabi-spiked Japanese pasta with pork, komatsuna and mushrooms.

It is hard to compare this sake with the new rice new sake ginjo nama sake (green can) that I drank before. It goes well with meals and is also delicious on its own. It went well with the cream cheese pickles I learned from Pon-chan, which I made with two kinds of soy sauce: boiled-down as per the recipe and choko kake shoyu. The sake went better with the recipe, which was less sweet and had more of a soy sauce flavor. It also went well with omelette rice and Barnabas wieners.

It has a strong gaseous taste. Melon, grape, and rice malt mixed in the top. The same fruity aroma as the first sip, the firm umami of rice and full sweetness spread pichijuwatto with a refreshing lactic acidity, leaving a lingering sweet umami of rice and soft aroma, and a mildly bitter and crisp finish. Elegantly balanced and refreshingly sharp, it is delicious on its own or as a mid-meal drink. It went well with two kinds of Maltese tuna on rice, yellowtail sashimi, and scallops with sansho (Japanese pepper). The cherry bonsai tree at home is almost in full bloom! The other day, I polished the surface of a coppa from Hakujishi-Yama in Kyoto, which was given to me by Mr. Funau, a climbing friend and mountain guide. I have a feeling that I will be using this stone more and more for small sharpening because it is easy to use.

The sake is rich and thick, but not too sweet, with a smooth mouthfeel and full of strawberry flavor. It is suitable as an aperitif or dessert sake, but surprisingly goes well with fried chicken and lebanilla.

This sake is well-balanced with the umami of the rice at the center, giving it a solid impression. It goes well with meals and is of course delicious on its own. After the second day, the sense of alcohol softens and it becomes mellower. Instead, a slightly bitter taste emerges. It went well with millefeuille nabe of pork belly with mushrooms, medium fatty tuna, 398 yen snow crab, and Kora sake. It also went well with tonkatsu (pork cutlet) and fried shrimp. The next morning, our cherry blossoms, which we had sheltered for the winter, were in bloom, so we could enjoy hanami-sake for a while.
