I've had the Ura-no-shinshin before, but it seems to be a medium-brew.
I don't remember the difference (lol) I don't want to drink Omote anymore, but Ura-nama sake is good because it's easy to drink. It just makes you drunk... 🙄.

I have been interested in this sake for a long time.
The naming has a strong punch, but the sake has a good balance between the umami and aroma of the raw sake.
I drank it over a week or so while enjoying the changes, but the flavor did not lose at all even after the bottle was opened. It has a firm taste and a slightly rounded flavor that is different from that of the first saké.
Now let's drink the front side!

The back label has a clearer, clearer and more consistent taste with a more standard feel.
The color is also clear.
I like that kind of Shinigami, and I like regular Shinigami more than Ura-Shinigami.
Shimane has the best taste with pike from Masuda
Sake from the town of Onan, Shimane Prefecture. When drunk on its own, it has a rich and savory flavor that makes it seem sweet. When paired with horse sashimi, it also feels spicy and goes well with it. It is my favorite brand of sake.
I don't know why they chose this name for this sake from Shimane. When I looked up this brewery, I found that there are many twists and turns.
I had a chance to compare a Shinshin and a Ura-Shinshin.
The front one is so colorful lol.
Of course it wasn't my favorite lol.
I had been drinking the back but didn't know the front.
The color of the front side of the bottle is dark, which is surprising even for a mirin (sweet sake).
It has a strong sense of aging in the bottle, but it is surprisingly modest and moderately full.
The texture is clear and glossy.
It has a slight smoky flavor, like that of iburi goko.
The wine has a sense of unity of sweetness, acidity, bitterness, and umami.
It has a very rich, mellow, umami taste.
Surprisingly, the sweetness in the aftertaste is calm and not persistent.
To go with the stinky combination, we ordered seared dried firefly squid.
The savory flavor goes well with it.
It seems that there are different likes and dislikes.
The yellowish sake has a relatively easy-to-drink aftertaste.

Comparison of Shinshin and Ura-Shinshin. The amber-colored one on the left is Shinshin. It has a nice grassy, millet-like mature taste, and is easy to gobble up. It also goes well with Shizuoka oden, which has a strong dashi broth!
I was surprised when I saw the color. But it was not as rich as the old wine and was cleaner than I expected. As the days went by, it became less refreshing.
Brown sake. Perhaps because sake is used in the brewing process. It feels thick, but it is easy to drink. It is a wonder. Delicious with sashimi and oysters!
