At home. My first Kamo Nishikishu. Almost no aroma. Slightly carbonated and alcoholic in the mouth. It has acidity and umami, but the bitterness is strong at the end. I'll try to warm it up a little and see if the taste changes after tomorrow.

A mini-bottle of Kamelei Junmai Ginjo given to me by a friend who lives in Hiroshima. The supercilious aroma is of a faint apple-yellow flavor. The sweetness and bitterness spread in your mouth at the same time, but both of them disappear quickly, leaving a spicy alcohol aftertaste. But the spiciness isn't insistent, either, so it's an easy-drinking, dry sake that's easy to sip 😄 It goes well with sashimi of yellowtail 😋 In addition, there are quite a few people on Sake no Wa who are posting the same thing as Hiroshima's turtle age and Shinshu's turtle age... 😢

I bought this one after tasting it with Daikoku Masamune at Yamamoto Sake Shop in Kuise and wondering about it. I had tasted Tomikunaga in the past, but this was the first time I bought it. This is a rice called Yatanso, which is used only by Tomikunaga. It has just the right amount of gas and sweetness. Not too sweet, but just the right amount. It is like the sweetness and umami of rice. Balanced type. I would like to try other types of rice.

This sake is brewed by Miho Imada, who was selected as one of the "100 Women of the Year" in 2020. I've been wanting to try this sake for a long time because of its high reputation in magazines and without any special glasses. The first sip was soft and clear like water, and then I felt the sharpness. On the second sip, you can taste the umami and acidity. There is also a slight pleasant bitterness at the end. It is characterized by the softness of soft water and a clean mouthfeel with no miscellaneous flavors. And yet, it is a modern dry taste with a wide range of flavors, which I personally like very much and it's really delicious! The aroma and taste are not strong, so it doesn't seem like there is a "this" kind of weapon, but it has no peculiarities and anyone can enjoy it, so I take my hat off to its broad-mindedness. You can drink it all the time... or infinitely. I am also amazed at its wide range of defenses, going very well with greasy dishes like fried foods and crisp salads. To use a baseball player's analogy, it's like Shuta Tonosaki of the Seibu Lions, who can defend any position at a high level.

For my first Hiroshima sake in a while, I chose a new Seikagami sake, my first try 😀 . I knew the name, but it was my first time drinking it, so I was excited to open the bottle🍾 I've never tried it before, so I was very excited to try it! It's a mildly dry wine with a hint of sweetness, easy to pair with food, and I love it👍. I'm not sure what to make of this. I love it!

A drinking friend of mine wanted to drink a bottle of Takezuru by Toshi Ishikawa, who has moved to Tsuki no I. So I agreed to accompany him. We had it heated. The first aroma is like a matured Shaoxing sake. The first sip had a matured Shaoxing sake-like aroma, and the second had a mildly sweet taste with a Shaoxing sake-like acidity and umami. The sweetness is still there, but it's the kind of fully fermented sake that you can drink while eating snacks. It was delicious 🍶✨.

When you open the bottle and pour it in, the aroma is like sweet baked sweets like sponge cake or kawara senbei. The mouthfeel is round and robust.
