I've had something like this before, I've had something similar before! It's always difficult to describe it in writing. It's not like whiskey, but it smells like wood. There is no peculiar aftertaste!
Aroma modest.
The palate is watery, with a slightly pungent, fruity acidity, but generally subdued. The aftertaste is light and does not linger. Light
Alcohol 15%.

This is definitely an Izumo exclusive. The aroma is subdued. It has a refreshing, light mouthfeel. It is a dry sake with a simple yet deeply delicious taste. It is recommended to drink at room temperature.
The standing aroma is mild. The mouthfeel has a moderate sweetness and a fullness of rice, with a lactic acidity accentuated by a refreshing finish. It is an easy-drinking sake with a classical flavor rather than a robust, sturdy sake.
While the umami of the rice can be felt, none of the five flavors are too strongly pronounced, making it easy to pair with food. It would be good with autumn flavors such as the standard autumn fish and mushrooms, but it also went well with fried foods and nabe (hot pot). ☺️

Purchased at Yamatoya Shuho.
Pairing at a somewhat nice kappo restaurant.
Since it was a fish dish, a very dry wine was served.
It was indeed crisp and good!
