When mixed, the sweet and sour flavors are concentrated in a well-balanced manner. The mouthfeel is silky and smooth with fine lees, and although it is not intense, the finish is moderately dry and quite refreshing.
As the day goes by, the wine becomes more cohesive, but the chili and juicy acidity is still there when you taste it. The sourness is always the first to go, followed by the umami, and then the apple flavor gently melts away.
It is common for the acidity to tighten up, but this opposite feeling may be surprisingly rare among the others I have tasted.
The taste, which is gentle but with a gentle, rapid change of pace, is perfectly suited to the illustration of the Emperor Juntoku playing a flute in a quiet snowfield.

Kadoya Sake Shop started to carry it, so I bought it immediately. Basically, I try new brands starting with the cheapest ones.
This is good! No wonder it is so popular. The sweetness and acidity are elegant. This sake seems to be one of the drier ones in the series, but it has a nice flavor. It also accentuates the goodness of the sake I drank with it, which is exactly the kind of sake that fits my own sake philosophy. A few days later, I bought a second bottle.
