It has a good balance of richness, sweetness and umami, and finishes gently, leaving a pleasant aftertaste in the second half. It is easy to pair with meals, and is also delicious on its own. The beautiful acidity is impressive, and the flavor of the rice can be felt and the sweetness is moderate, making it easy to pair with meals and also tastes well on its own. Weaving water is also good. It is a craft sake made with a domestic hop called Karakasou, but the bitterness is not as bad as in most sake, and it is nice. When you peel off the label, you will find another strange device on the label (lol). The label shows a rural landscape with a poem written on it. The cap is a crown type, but I was told that it can be reused if opened properly... I was able to re-cork it safely. It went well with scallop sashimi, pork cutlets, fried shrimp, and fried oysters, which were frozen test samples given to me by the president of a fisheries company.

The same aroma as the topping, rather firm rice flavor and soft sweetness spreads pichijuwatto with apple-like acidity, leaving a lingering sweetness and a mildly bitter, sharp finish. The umami of rice can be felt well for its 13% alcohol content, but the acidity that rises from the mid-part of the bottle and the bitterness of the second half give it a refreshing impression. It goes well with meals and is also delicious on its own. It went well with a recipe from "Boys' Gohan" (a Japanese cooking program for men): braised sea bream, stewed beef tendon, octopus macaroni salad, and oyster and egg soup. It also went well with the mysterious salami that Mr. Funau, a mountain guide, gave me as a souvenir from Chamonix.

It has a rather robust, slightly classical, mellow, dry taste that goes well with meals and can also be savored on its own. It resembles Funaguchi's Ichiban Shibori Aged Ginjo-Nama Nama-shu (the red one), so perhaps this is its base? It went well with a Japanese dish of baked sweet potato (Silk Sweet) and blue cheese (Hanabatake Farm's Blue Camembert), a recipe from Abe-chan in Fukaya, Sake-no-wa, and a macaroni salad with octopus head. It also went well with low-temperature-cooked steak (Kumamoto's red beef from Furusato).

On the second day, the white wine-like acidity is good. It went well with kawara soba noodles from Yamaguchi Prefecture, which I bought at the Aeon Sanin Sanyo Fair. It also went well with my wife's (left) curry of beef and mushrooms based on loi thai (panem curry) and my own (right) curry of chicken and mushrooms based on various spices, tomatoes, and yogurt.

It is rather floral and silky with a hint of nigori, but the sweetness is moderate, and the strong gassiness and firm bitterness give it a particularly dry impression in the latter half of the bottle. It goes well with food and is refreshingly delicious on its own. On the second day, the gaseous sensation subsides, but the bitterness still bothers me. It went well with homemade Bolognese pasta and bread. I have good memories of going to the store several times during the sales period, and when I entered the store, a familiar waiter told me the last bottle of the day was left and looked out for me. I was so happy, I took a preview of it right there in front of the store.

It has a modest but pleasant aroma and a good balance of rice flavor, and goes well with meals. It is also delicious as a stand-alone sake. It went well with boiled lighthouse tadpole in salted water, macaroni salad with squid, spicy pickled okra, grilled herring, fried oysters, and chilled tofu. Kewpie's lemon tartar is a nice touch, but the lid is not the type that pops open.
