Today I visited my first sake shop, Yanaseya in Asagaya. I was expecting to taste Taman Juho Hiyadoroshi, but was a little disappointed to find that they do not carry it, but I was pleasantly surprised to find that they carry Yamori, which is also from Tokyo.
So I had a glass of Yamori's hiyaoroshi. The aroma is soft and sweet. Contrary to the aroma, the taste is not too sweet, but has the richness of having been unfiltered and unpasteurized for one summer. The smooth, rich, yet moderately sweet flavor is so appealing that one could easily drink too much of it.
Thanks to my first visit to a sake shop, Yamoru will become a familiar presence in my life.
Hello, Jay & Nobby. I have taken the liberty of thinking that Yamori-san is a nationally recognized sake that represents Tokyo. I hope Mr. Yamori will do his best to improve the recognition of Tokyo's local sake.
Forgot to upload this one a few minutes ago. I bought it at a liquor store because I saw it was called "Nakadori". It is a slightly dry sake with a strong aroma. It has a full-bodied flavor, so I guess it is a sake to drink slowly. There is a bit of bitterness afterwards. It seems to go well with strong dishes.
I heard there were more drinks on this day.

It has a slightly sweet aroma, but is it a bit dry? Too bad it is not sold directly at the brewery 😢.
It has a juicy sweetness and richness with a well-rounded aftertaste.
It is a well-balanced sake that conveys the quality of Nakadori.

It has been a long time since I last had a yamori, although I refrained from doing so because the taste had changed so much.
I am looking forward to seeing what kind of changes there will be now that it is a fire-retardant type.
Last time, it was directly pumped, so the acidity was too pronounced and I didn't like it very much. But this time, the acidity has been lightened by the aging process, and at the same time, the heaviness has been added, which is just right. When you put it in your mouth, you will feel a slight tanginess and sweetness. Then comes the spiciness and sourness. Toward the end, there is a bitter taste and the pungent taste remains.
I used to avoid the fire-brewed types because they were too heavy, but this one is just the right thickness for when the weather gets a little chilly. It made me want to try a different spec next time.
