The Edo shogunate granted the right to manufacture ironware called "nabeza" to famous families in various regions. The predecessor of this brewery was the one that was in charge of nabeza in the Shimousa area.
In the Genroku period (1688-1704), the Sakura Clan, which ruled this area, gave the brewery shares and began brewing sake in front of the Narita Mountain gate, known as "Narita no Ofudo-sama.
It is said that at that time, long-established breweries were called "Onana," and the name "Nabe-ten" was derived from the combination of "Nabe-za" and "Onana," thus giving the brewery the name "Nabe-ten.
It has the robustness of a pure sake, but the umami and acidity are mild and gentle.
It is perfect for this season and can be drunk at a leisurely pace.
I've been slacking on posting, so let's bring it all up together. First, Fudo.
It is a long-established restaurant in Chiba, and it is still delicious. The flavor and sweetness of the rice is directly fragrant. I think that the slightly peculiar fermentation aroma of Fudo can be felt more directly when it is made by hanging it.
It is the opposite of "tanrei," or not at all smooth!
Sake from Nabedana (鍋店), which is a summer-spec Junmai Daiginjo, according to the company.
The gorgeous aroma is sweet and wafting. It is light but sweet enough, and the refreshing acidity combined with a clean aftertaste makes it easy to drink.
I think it was a good decision to drink it as the first sake.
The one that had a pure white label last year was delicious, so I'll have it again this year. The addition of the light blue fudori on the Āmodori letters made it more refreshing✨.
I don't have a picture of it, but the stopper was also clear plastic-like, giving it a more summery look.
The aroma is citrusy, sour, and rice.
On the palate, it's as schwishy and squeaky sour as you'd expect! The bitterness comes to the side of the tongue, which is more sour.
The fluffy rice sweetness and sourness are in good balance, and combined with the effervescence, it tightens to a refreshing dryness.
This is a good summer sake 🎐.
I think it is more sour and tasty than last year! ...but maybe I just don't remember! I'm sure I'm not the only one 😝.
