Tonight's sake is Tokyo's Juemon Junmai Unfiltered Nama Sake 🍶. I went to the direct sales place of Toshimaya Shuzo, the brewery that makes Yamori, and asked about a sake with a great flavor, and they recommended it to me 😊. I was torn between the nama-shu and the hi-iru sake, but I bought the nama-shu and was told that "it is also delicious warmed up. He said "It's also good heated"... I tried it cold first... I took a sip and said "Delicious! 👀This is delicious! I couldn't help but say it twice 😆. It has an austere appearance like a grandfather ("Juemon" was the name of the founder of Toshimaya ^^;), but after the fresh acidity, it was deliciously spicy and snappy! According to the website, "Compared to Yamori, the aroma is relatively mild and can be enjoyed as a mid-meal sake. It certainly goes well with meals! Next, we tried heating it up... I was excited to try it, as I had never warmed a draft sake before, and the sapidity stood out, making it even fresher and lighter 🥰. It tasted different and more appealing than the Yamahai when heated ✨. With quickly seared Satsuma-age! (Sent to me by a relative in Ibaraki 😊)

On the way home from Shiatsu Seitai, I stopped by Izakaya 🏮 with a limp... The second drink to treat myself! Yamagata "Jyushidai Sake Mirai Junmai Ginjo" 🍶. I had decided to have two drinks tonight, so after much deliberation, I ordered a bottle of Jyushiyo that I probably wouldn't be able to have at home ✨ (also supported by PayPay's 30% reduction for local government campaigns 😁). First impression... The label is the same shade as the "Akabu F" label I just drank 🤣🤣. It's a cool label 😉. The sweetness and umami flavor really hit me! I drank it with care, but I don't know when I will be able to drink it again... it was delicious 😌. With seared white liver of Miyazaki Jidori chicken Checking in 💯. Thank you all for everything! 🍶😊/🍶

The other day, I received a myofascial adjustment treatment from my left thigh to my sole at a Shiatsu Seitai clinic a bit far from my home🦵. In the beginning I was able to have a conversation, but in the middle of the treatment, I had to endure an hour of pain so bad that I couldn't even speak 😵💫 "reference...💦. He told me, "The muscle pain will continue for about 48 hours, but it is a normal reaction, so please don't worry." When I asked him about drinking today, he said "as long as it's not in large quantities" (Yatta 😆/← my heart). So, limping along, I went to the izakaya at the transfer station on the way 🏮. The first drink to treat myself Iwate "Akabu F NEWBORN" 🍶. My first Akabu ♫ I've always wanted to try it! It has a good balance of sweetness, flavor, and acidity, and it really sunk into my aching body 🥲. The light aftertaste is due to the brewer's alcohol doing a good job, I guess? I found out later that the "F" stood for "For you" ✨Sake for me on this day... 😌. Angler's liver as a side dish with smoked mackerel ↑As the menu said "like a cured ham", it had just the right amount of saltiness and thinly sliced 👍.

Tonight's sake is "Nanakanba" from Hikami sake brewery in Shimane, Japan. In the evening, I went to Kadokami Gyorui and found Shimane red sea bass for one-pot dishes at a discount 🐟. In my bag for sake that I had just received from the liquor store was a bottle of "Shichikanba" (🐎) from the hanpukai sake distribution... ✨ That's why It's Shichikanma & Miso-style Ankou nabe!!! 😆 A blend of "Sakanishiki" and "Koudou Omachi" (non-standard rice) from Shimane Prefecture 🍶. Citrusy aroma Charming acidity followed by umami and bitterness. A sake that goes well with food, and makes the nabe go further! When warmed to lukewarm, the acidity was even more pronounced and the umami spread gradually! -------------------- This Shichikanma is the November edition of the Nihon Meimon Sake Club's "Autumn Junmai Sake Hanpukai 2022", and this year's theme is "Junmai Sake brewed with local rice"! There are two brands each month from October to March, and it's fun to drink them while reading the pamphlet.â My first encounter with Hanpukai was when I bought a sake at a liquor store and couldn't find it on the brewer's website. 🤔 and I found it on the website of the Japan Famous Sake Brewers Association. By the way, from April to September, I participate in the cheese hanpukai at the liquor store 🧀.

Today is Labor Thanksgiving Day. Thanks for your hard work, everyone! Souvenirs from Yurakucho (1) Tokushima "Hisagotaikou" Junmai-shu (pure rice sake) 🍶. Tokushima's famous sweets "Saoshika" 🦌. I wanted to match Japanese sweets with sake... â I was attracted by the name and 80% polished rice of "Kodou". I bought "Saoshika" because it arrived on Saturday and I felt a connection with it. The aroma was like ripe bananas! The taste is rich with a complex combination of acidity and graininess, as some of the malted rice is white! The pattern is like Bambi! Awa wasanbon sugar and azuki beans give this steamed confectionery a gentle sweetness. It is chewier than sponge cake due to the inclusion of yams! I enjoyed the contrast between the rich sake and the gentle wagashi ✨. A bonus! I thought this sake would go well with mackerel simmered in miso, so I cracked open the can! It supported the mackerel flavor beautifully 😋. ----------------- I have been to Shikoku only once on a graduation trip (traveling alone). I took a boat from Wakayama to Tokushima, then went to Kochi, Ehime, and Kagawa on a Seishun 18 ticket 🚃. My memory of Tokushima is the Bizan ropeway in the rain 😊I would go to the sake brewery now 😁.

The other day at my first sake shop, I was looking at the fridge with excitement and was told that the Tenmei Zero had just arrived 🙌 My first Tenmei✨. After a fresh sour-sweet taste, it cut through with a bitterness that reminded me of grapefruit... Mixing in the ori mellows it out and it's also delicious 🥰 The joy of new sake was evident in the taste 🥰. Cheese (Colby Jack) Red bean jam (handmade by our neighbor 🍎) Chicken ham with garland chrysanthemum And new Koshihikari rice sent by our relatives in Fukushima! (We polish only the amount of brown rice we eat each time and cook it in an earthenware pot 🍚. By the way, the rice-polishing machine is made by Yamamoto Electric, a manufacturer in Fukushima 😊. -------------- Note for myself 📝. Yeast used Utsukushima dream yeast F701 +New Utsukushima sparkling yeast +Association 901 yeast + In-house yeast Sake degree -3.78 Acidity 1.9 Mizuho Kogane"...Edible rice A mutation of "Hitomebore" rice from Aizu Sakashita-machi's Hitomebore fields in 1993, when the area was hit hard by cold weather. It can be harvested about one month earlier than other common varieties such as Koshihikari.

Tonight's sake is "Yamori Junmai Nakadori Unadjusted" 🍶. I went to Toshimaya Sake Brewery the other day and asked "Yamori, which one would you like for your first bottle?" (It was available at a special distributor 😊). The rice used is Hachitan-Nishiki from Hiroshima Prefecture. Polishing ratio is 55 The sake was clear and gentle on the palate, with umami and a slight bitterness that went down my throat nicely. November 1st is an important day for our family...we went to Kadokami Gyorui to buy sushi and found a rare "Nodoguro Meshi" (rice with sea bream), so we offered it to them😇. The words on the back label fit the feeling of the day... 😌.

Tonight's sake is "Kaze no Mori Akitsuho 657" from Gose City, Nara🍶. This is my first time drinking Kaze no Mori 🌿I chose the standard Akitsuho 657 😊The label on the back says "Nara Sake" after "Japanese Sake", which shows the strong desire to brew from the local climate! The bottle was immediately opened and was full of petit minerality and a moderate sweetness that was followed by a touch of bitterness and a sharp finish! Oh, delicious... 🥰! I could understand why it is so popular at Sake-no-wa 😌 It is 16 degrees Celsius ☆ I felt pretty good while drinking it 🤩. Day 2...the fizziness has calmed down a bit and the sweet and sour taste has increased⤴️I'm looking forward to tomorrow and beyond😆. Snack (1) Salad of persimmon, turnip and prosciutto ham We dressed our persimmons, turnips we bought from a nearby turnip farmer, and prosciutto ham with white wine vinegar, olive oil, salt, and black pepper. I love Tsurezurehanako's snack recipes and have been making this salad for the past few years 🍴It's one of my favorite things to do in the fall 😋 It went very well with the "Wind Forest" ✨. Snack (2) LAWSON "Tokusen Chikuman" (special steamed buns) co-developed with "Edo Sei" in Yokohama Chinatown I haven't bought a Chinese steamed bun at a convenience store in ages! 😆 It's about twice the weight of a regular steamed bun! It's very satisfying 👍

Tonight's sake is "Shinkame Junmai Seishu One Cup" 🍶. When I saw this cup of sake at the store, I couldn't help but buy it because it was so adorable 🐢. It may look like a pop-up, but the contents are the same as regular junmai sake, and it seems to have been aged for more than 2 years! I tasted it at room temperature and immediately warmed it up... and when it was warmed up to lukewarm, it had a calm matured aroma and an indescribable mellow flavor that spread out in a whirlwind. Jazz music was playing on NHK radio late night news, and anchor Norio Ishizawa said in a nice, quiet voice, "I'd like to listen to it while drinking whiskey", and I thought, "Shinkame is good too! With sake lees raisins made with Kamikame's sake lees (w shinkame!). 🐢🐢😆) You can get lightly drunk on sakekasu raisins alone 😉.

Today's sake is "NEON ORANGE No.26 Junmai Ginjo Unfiltered Unrefined Nama Sake" 🍶. We went to the direct sales office of Toshimaya Shuzo in Higashimurayama City, Tokyo, where YAMORI is brewed 🏃. Inside the woody store with western music playing and no shoes on the floor, there were a variety of brands such as "Kinshin", "Juemon", and "Higashimurayama" (please buy "Yamori" at the distributor 🤣). I asked "What kind of sake can I buy only here?" I asked "What kind of sake can I buy only here?" and I bought today's sake (300ml bottle)! The rice used is Yamadanishiki. The sweetness is like the juice from biting into a citrus fruit 🍊 and it goes down the throat with a bitter taste 🥰. It is similar to "Sono Kangiku BlueSapphire" which I drank in the summer (NEON is more sour). (NEON may be more acidic) The day I went there was the once-a-month Kaku-uchi event 😆/ I drank 4 out of 5 kinds of sake (3rd picture) Kinmai Junmai Activated Nigori Sake Newly pressed the day before yesterday! Fresh ✨ Yamori Junmai Ginjo Unadjusted Nama My first YAMORI. Clear taste. YAMORI Junmai Unadjusted (Hi-iri) Junmai is also good ❤. Junmai Ginjo Matured Nama Nama Sake Aged two years, no label 👀. It has a deep flavor and is delicious 👍 The water is used for brewing.
