Paired with yellowtail oyster shabu over 2024 😋 3 minutes to open 😅 slight melon aroma 🍈shuwa cider 🫧 pleasant sake. Goes great with betara zuke. Good with yellowtail oyster shabu, oroshi ponzu, sesame sauce 😊Lukewarm (40°) spicy and sharp. Top warming (50°): good with salty flavor. Nice aroma of rice. Deep flavor. Hot (60°): Rice, rice, rice. It fits well with the body. The hot sake is like this, but it may diminish the Hirotogawa's character.

Rice used: "Yumeko" from Fukushima Prefecture, Polishing: 50%, Alcohol: 15%.
It has a soft mouthfeel, a moderate sweetness, and a clear taste with a sharp, well-defined texture. The taste is sharply defined and well balanced. The gentle yet fruity aroma has a strong presence, making it a Junmai Ginjo with excellent balance.

The elegant flavor of rice spreads in the mouth at once. It has a moderate sharpness, making it the ultimate food sake.

I decided to take a peek at this restaurant since I was returning via Tokyo Station that day. The counter is empty. Let's have a cup of sake. I have not had Hirotogawa for a long time. It is sweet and mellow. The aroma is good. The bitterness tightens it up. It is a good start.
It is a good sake.
The full, sweet umami taste is smooth, with moderate bitterness overlapping the moderate acidity that gradually spreads, fading out naturally while leaving a lingering sweetness. It is a beautiful sake with a sense of unity. It has been three years since I have tasted anything other than nigori, but it is delicious.
