ALPHA3 is Kaze no Mori's only fire-aged sake
ALPHA3, which was originally intended for the overseas market, will now be discontinued due to improvements in refrigerated distribution technology.
It is fresh and almost like a draft sake, but unlike the usual Kaze no Mori, it has almost no gassiness. It is one of the sweetest Kaze no Mori, with a slight bitterness in the second half.
It has an atmosphere like apple juice with a little bitterness.
I personally prefer it to the regular Kaze no Mori 🤔.
The moment I drank it, I thought it was so gorgeous! But as I ate it, I thought, "What's that? But as I started to eat it, I thought, "Is it a type that goes together unexpectedly? I also thought that it was a kind of food that goes together unexpectedly?
Sashimi of Hiramasa and Octopus, grilled Tuna, lettuce salad, and Nameko mushrooms!

When I visited Kushiro, I purchased this sake from a liquor store that focuses on Kaze no Mori. I have had 65% and 50% Akitsuho, so I was looking for something different and bought a Kaze no Mori called Rohafu, which is a sake rice produced only in Nara Prefecture.
When I opened the bottle, the sweet aroma was wonderful and stronger than Akitsuho. It has a strong acidity and spiciness, but it is easy to drink with little cloying taste. It has a moderate sweetness, so it is suitable as a food wine. I think it is similar to wine.
It is the type of wine that you think about a lot as you drink it, and then you realize it's gone. I think it is delicious.
Pear, green banana, and a bit of magic ink aroma.
On the palate, the aroma is green like bamboo and botanicals like cedar.
The palate is firm and complex.
Craft gin-like.
Taste: 3.5/5

I love Kaze no Mori😆.
I often drink it outside, but I haven't bought it in a long time ❢.
but it's been a long time since I bought it.
I tried to drink it,
It's like a "Kaze no Mori" as it should be.
It's gassy and petite 😆 and fruity 😆.
And fruity 😆.
And it also has a great taste of rice.
And the taste is thick and voluptuous 😆.
I could even feel the thickness and volume of the taste 😆.
I felt the breadth of Kaze no Mori 😆.
It's a great sake 😆.
Refreshing and mild on the palate.
It has a gentle sweetness from the rice and an acidity that seems to accompany it.
As you hold it in your mouth, the umami slowly spreads in a complex way, and at the end, you feel a slight astringency.
It was a sake that broadened my concept of sake.
It is delicious!
Taste Comparison
Because they are Akitsuho? They are very similar.
S-Kaze no Mori has a slightly more cypress-like aroma.
Both are delicious!
So far, I prefer the regular Kaze no Mori.
176th one.
First time in 🍃3 years 🍃 in the windy forest.
Fruity acidity stands out. Easy to drink.
Alcohol 13%, a bottle that pursues the possibilities of a new Kaze no Mori 🍶. Please try more and more.
Last run of ALPHA3...
Fire-roasted sake not found in the Wind Forest.
The aroma is La France.
The taste is dry but has a delicious flavor with a hint of graininess.
It is slightly slightly carbonated and has a pleasant throatfeel.
It has a good aftertaste and can be easily paired with any dish.
It is a sake to be sipped to the last drop.
