A special taste only available in autumn. A standard autumn sake made with Shimane Prefecture's own sake rice, "Kaijo Omachi," produced locally in Okuizumo. Aged for about half a year, it has a smooth, square texture and a mellow, deep flavor. The sweet umami flavor is typical of Omachi. Although the convergence is acidic, it leaves a lingering sweet-umami aftertaste that makes it an easy match for autumn dishes.
