I was surprised by his unique form when I saw him at the Saitama Prefecture Fall Tournament last fall, but he is a real talent.
I wanted to drink some sake from Saitama Prefecture, so I put it to sleep, Shinkame's Green Label, sweet sake.
It has been stored at room temperature for 2 years and 4 months since purchase, but it has little coloring and little maturing aroma or peculiarity.
It is mellow, stable in quality, good from room temperature, and can be heated to a very hot temperature.

When served cold, it has a slight flavor of rice.
Not too much sweetness.
No aftertaste.
When warmed up, the rice flavor is full of flavor.
A savory caramel-like flavor remains.
It is quite robust.
Ibushigin" is a word that fits this sake well.
Shinkame is synonymous with dry sake, and dry sake is synonymous with Shinkame. It is also a pioneer in the extremely avant-garde field of Junmai (pure rice).
Last time, I had a medium (sweet) sake called SWEET SQUASH, and I wanted to taste again the quality and robustness that is typical of Shinkame, so I decided to try the standard version.
The quality of the sake is as strong as ever! However, it is not as harsh as I expected, perhaps because it is more dry... 15.5% alcohol? The normal sake is 16%, so it is only 0.5%... Perhaps it is a gap from my imagination of 17-8% rather than my sharp taste buds. I wonder if it is because of this degree that I felt it was slightly different from what I imagined or remembered?
The aroma of alcohol is not related to ginjo aroma or anything like that, and is not flirtatious. When heated up, it was delicious. It may be hard to convey to those who are more interested in Capulet, but it is definitely good for those who are accustomed to dry sake. It can be served with a wide range of foods.
It has the appearance of a veteran actor who is very graceful, as if to say, "I am who I am, but I will show you what is good, and even if you don't like it, it's my personality. I would like to try the other wines in the series!

The pouring sound is good, the smell is strong, almost like soy sauce, and the initial impression is light, but you can feel a medium sweet/smelling stimulation at the back of your tongue.

The taste is not scorching and does not cling to the body, but the sublimation smell is of grain. 3 for the taste and 7 for the aroma is not a good balance.

Unfortunately, I don't know what to find in the modulation section, there is no change in the texture in a good or bad way, and the sublimation smell is also giving me rice smell.
The sublimation smell is also a bit too much, and it makes me smell like rice.

The sweetness is quickly followed by a shift to a full-bodied rice flavor.
The acidity is moderately tight. The aftertaste is spicy and tangy.
It is a delicious sake without being sweet.

I was attracted by the POP saying it is perfect for warming sake. I enjoy it slowly, especially on cold days.
It has a similar flavor to Kikuhime, but this one is a little milder. The label says it is dry, but it is not that dry and soft. I am sure it will make you happy when paired with oden.
This is a sake made by Shinkame, the Yokozuna of the East (by the way, the Yokozuna of the West is Akizuka).
