Tonight's sake is "Eikun Junmai-shu Akigari" from Fushimi, Kyoto 🍶. First at room temperature... It has a light yellowish color, a smooth and mild acidity mixed with umami, and it ended with a slight bitterness. It goes well with autumn flavors 🍁. Next, we tried it lukewarm... The acidity became more pronounced and the sharpness sharpened. The third day... The umami has increased. At the store, if you scan the QR code next to the Eikun and say the keyword in the code at the checkout, you will get a present. (I got a boar cup! Fourth drink outside: 🍶🍶🍶🍶 Finish with Nara "Okura -2020- Special Junmai Unfiltered Nama-shu S.yedo Sake degree -30 👀! Acidity 5.3 👀👀👀! Yeast Saccharomyces yedo 👀👀👀👀! →Saccharomyces yedo Ed. a.k.a. "Edo Yeast". Just looking at these specs, I can't stop getting excited already! 😆 When I tried it, it had a perfect balance of sweetness and sourness that made it addictive 🥰. I can't wait to try some of the other sakes from the thrusting "Okura!" --------------- Okura" was less than 90ml so they opened a new bottle of sake for me 🍶. It's "Igarashi Junmai Ginjo" from Hanno, Saitama 🍶. Wow! I was so excited to try this sake ⤴️⤴️️. I often see Igarashi Shuzo's "Tenranzan", but I've never come across "Igarashi" before 👉👈. This sake is limited to 30 bottles, and right after opening the bottle, the taste was still a bit hard, but it will change a lot in a few days 😊.

The third drink outside 🍶🍶🍶🍶🍶🍶. Yamagata "Haeganuki Hiyoroshi" (Hiyori) It is made from "Haenuki" rice produced in Sakata City. It has a mildly dry taste and went well with the hamburger set 😄. The katakana "fumotoi" comes to mind, but the kanji "fumotoi" and the calligraphy on the label (seal script, perhaps?) are also nice 👍. The kanji "fumotoi" and the font on the label (seal script?) are also nice👍.

Last time my first Genmai was Kinmon-Nishiki ✨Good to see you again 🤗. Calm and neat taste! I would love to have it in my home... 🏠🍶. I actually wasn't sure if I wanted to have the first glass, but after checking to see if they were sold out 😁 I was relieved to have the second glass. Along with the additive-free hamburger set --------------- I usually order the snack plate, but this day I'm in the mood for some guts! 💪. Not a children's lunch, but a dream "adults' lunch" ✨(not even a lunch 💦) I wanted to flag down the rice ≧∇≦)/. Hamburger steak & brown rice with Akita komachi was delicious 😋!

We have been busy in October and finally opened a new sake 😅Niigata "Koshinoketora Junmai Sake" 🍶. I added some kanzuri, Tochio's deep-fried tofu, and ego, and voila! The label on the back of the bottle reads exactly what it says: "Drinks as smooth as water, and the more you drink, the more you can taste the rice flavor..."! Aburage→Keitora→Ego→Keitora...every time I eat something, I naturally reach for the sake cup. Hiraccio, I opened Kanzuri🌶 😆. I put kanzuri, green onion, miso, ground sesame, and cheese in abura-age, microwaved it for a minute, and then grilled it until the surface was crispy! It was a perfect match for the Echino Katora! The "ego" was also delicious with a firmer texture 😋By the way, the vinegared miso that came with it was made by a maker in Fukuoka 😉 Eichichi Haruka.

Tonight's sake is Fukushima "Daishichi Junmai Namaishio, cold grated" 🍶! I saw a familiar checkered pattern in the fridge at the liquor store... "Ah! 👀 Daishichi's Hiyoroshi 💕"! The label on the back says, "Enjoy it at room temperature, slightly cooled, and lukewarm. First, I took it out of the fridge and let it warm up a bit... After the smooth umami, it quickly cooled down 😊Oh, it's surprisingly refreshing, goes well with a meal! Next, I raised the temperature to about 50℃ and let it cool down a bit...the acidity and umami rose up, and I felt my body and soul relax 🥰I wanted to shout, "Heated up is the best! I wanted to shout "I love heated sake! With stir-fried green bell pepper, pork and bamboo shoots in XO sauce The second day...it went well with squid sashimi 😋.

Pre- and post-event drinks [Part 2]. Enjoyed strolling through bookstores📖 in Jimbocho and went to Budokan again in the evening🚶. The event ended at 9:00 p.m. as planned, and I walked to Iidabashi to avoid the crowded Kudanshita station 🚶. I wanted to go home with a drink, so I slipped in at the last order at a yakitori restaurant and had a quick drink 🍶 Miyanoyuki Yamahai Special Junmai Sake from Yokkaichi, Mie. The label has a classical flavor, and the brewer, Miyazaki Honten, makes Kimmiya shochu! It has a full flavor and went well with the liver and tsukune (fried chicken bones) 😊. ------------ When I'm at home, I often have the radio (TBS or NHK) playing and sometimes listen to it on my phone (radiko time free) 📻. This time, TBS Radio daytime band program "Tamamusubi in Budokan - 10 Years of Fruitfulness - The Great Harvest Festival! I participated in The gathering of Tamae Tamao & her partners for each day of the week with a packed Budokan full of listeners was a convivial affair and a lot of fun! (Guest Keizo Nakanishi's singing voice shook my heart🥰)

First, we had a drink at a soba noodle shop in Kojimachi 🍶Hitakami Super Dry Junmai Sake from Ishinomaki, Miyagi! We had reservations for lunch, so we looked at the menu for something to drink, but they didn't have any sake! 👀I asked the waitress and she brought me another menu item called "Sobaya no Tomoni Sake" 😁. Yesterday, September 10, was the fifteenth night of the year, the Mid-Autumn Moon 🎑. The sake I chose was "Yuho Yamahoroshi Junmai" by Mioya Shuzo, Ishikawa 🍶. The term "Yamahoroshi" sounded fresh to me, so I bought it 😊. According to the label on the back, it was pressed in February 2017 using the raw brewing method and then stored and aged! Beautiful yamabuki color and matured aroma made me excited 💕As soon as the acidity and umami went down my throat smoothly, I got a hot feeling in my stomach 😆. It has a strong flavor, especially good with fried chicken, pork dishes such as kakuni, and cheese! I just got a coupon for free original chicken on the Kentucky app, so I bought the moonlight Japanese cutlet sandwich for Saturday lunch ☀. It was a deep saké that also accepted the sauce flavor of the pork cutlet sandwich 😋. The next day, I followed the recommendation and warmed it up hot, which gave it a smoother and broader flavor, and with the mackerel in miso sauce as a side dish, I couldn't help but say "haha, it's delicious" 🥰. The fourth one is "Asahi Premium Draft Beer Mature Select Keg Draft" sold by volume at the liquor store 🍺. Koshitanrei is a variety of rice bred by Niigata Prefecture for sake brewing and is a cross between Yamadanishiki and Gohyakumangoku rice. Today is September! That's why we have a new sake on tap! Tonight's sake is Akita "Mansaku no Hana Aikame Label". It is a junmai ginjo once-fired sake brewed with Aizan and Kame-no-o in the same tank! It has a soft ginjo aroma, a sweet mouthfeel, then a delicious bitterness, and finally a mouthwatering taste that will make the back of your throat hot 😊. August is almost over... Tonight's sake is Cardio's original "Junmai Ginjyo Hozu Ginjyo Chiru Ginjyo Usu Nigori Kinryo" 🍶. They sell sake at Cardio! 👀 It's made by Shotoku Shuzo in Fushimi, Kyoto! It doesn't say on the bottle, but according to the POP at the store, the rice used is Gohyakumangoku and Kyo no Kiraki! At 240ml, it's the perfect size for when you just don't have enough for a single brew... 👉👈! (👉👈...👉👈!) Open the one-cup cap... 👉👈. After the smooth sweet and sour taste, it was pleasant to feel it pass through the nose with a slight bitterness 😊It was a good end to a good summer 🎐. The third one is the 🐏san carbonated drink I had the other day! I saw Shinshin SY's post before and wanted to try it this summer 😆. First, 1:1...ah, the "sheepishness" has faded 😅. Next 🐏2 to 1...it's slightly more carbonated and crispy to my liking 🥰. both with red pickled chives (I ran out of shiso leaves...) (I was out of shiso leaves and made this with red perilla that I saw growing in a cluster next to my front door.) Chi-chan, it was delicious - I'll be making a repeat! 🤗

Tonight's sake is Haneda Summer Junmai Sake from Kyoto 🍶. The other day at the sake corner, a beautiful blue bottle labeled "Kitayama, Kyoto's local sake" caught my eye and I bought it! It is a refreshingly dry sake, and as the temperature rose a little, I could taste the full flavor of the rice. It has a nice sharpness and is suitable for a mid-meal drink! The rice used is "Kyo no Kiraki", a rice suitable for sake brewing produced in Kyoto. The brewery is located in the town of Shuyama, Keihoku, Ukyo-ku, which is said to be rich in nature. I remember that when I was staying at a boarding house in Kyoto, I often saw buses bound for the Shuyama bus terminal... The image of Kyoto Gozan Okuribi (Bonfire of the Five Mountains) with a brown rice crepe The shape is like a yatsuhashi-style 😁. This time I grabbed 2 bottles at both ends out of 4 kinds 💚💙♥♥💛 and paid the bill 🤣¥¥¥. The guy at the store said "You've conquered it 😉" I said "I'm glad you still have some left! 😄" The guy at the store said "Wow, it's so beautiful 😅" and many customers walked by... 😅 I won't pass by today 🤗.
