Hirotogawa is stable and reliable. The nigori is also good, but this standard special junmai is as good as ever. From the aroma, it has a pleasantly gorgeous flavor that lingers on the palate, yet there is nothing heavy or dull about its body, making it easy to drink. A sake that can be paired with any dish.
I recently found it at a liquor store near where I work and couldn't resist buying it. I felt the sweet umami flavor lingered softly with a long aftertaste and complexity. If I find it again, I will buy it.

When I opened the bottle, it almost blew out, but just in time! It was so vigorous that even though I tried to pour the supernatant as much as possible, it was almost agitated, resulting in a cloudy white color.
The taste starts out moderately sweet and tasty, and gradually shifts to tasty and bitter.
After mixing well, the sweetness settles down and becomes balanced with the bitterness, and the final taste has a nice sharpness!
The alkalinity seems to have dropped one degree from last year to 15 degrees, but it was outstandingly delicious again this year 😋.
Passing on the highly rated "nigori", I purchased the "Bessen Jun Dai".
It has a sweet aroma, umami, good acidity and sharpness, and is a well-balanced sake.

On the first day, the carbonation was not fully removed, so I drank it with dissatisfaction, and although it had sweetness and acidity, the carbonation attack made it hard to understand.
After 2 days of drinking, the sweetness and acidity became more familiar, and the taste was so good that you couldn't help but say "wow"!
When warmed up to lukewarm, it is a gentle, slightly carbonated amazake, which I prefer.
We compared the Hirotogawa nigori sake from a year ago, which had been sitting at the bottom of the fridge, with this year's new sake.
It is still a bit stiff after a year, and the sweetness has rounded out, making it delicious. The acidity is a little stronger this year.
