Tokushima "Hisagotaikou" Junmai-shu (pure rice sake) 🍶.
Tokushima's famous sweets "Saoshika" 🦌.
I wanted to match Japanese sweets with sake... â
I was attracted by the name and 80% polished rice of "Kodou".
I bought "Saoshika" because it arrived on Saturday and I felt a connection with it.
The aroma was like ripe bananas!
The taste is rich with a complex combination of acidity and graininess, as some of the malted rice is white!
The pattern is like Bambi!
Awa wasanbon sugar and azuki beans give this steamed confectionery a gentle sweetness.
It is chewier than sponge cake due to the inclusion of yams!
I enjoyed the contrast between the rich sake and the gentle wagashi ✨.
A bonus!
I thought this sake would go well with mackerel simmered in miso, so I cracked open the can! It supported the mackerel flavor beautifully 😋.

I have been to Shikoku only once on a graduation trip (traveling alone).
I took a boat from Wakayama to Tokushima, then went to Kochi, Ehime, and Kagawa on a Seishun 18 ticket 🚃.
My memory of Tokushima is the Bizan ropeway in the rain 😊I would go to the sake brewery now 😁.
