ジャイヴ[Fukui Spring New Sake Festival (9) The event was coming to an end with a series of sake from Ishikawa. We decided to try something a little different and had a drink here 🍶. Hayaseura Special Junmai Sake "Umi-no-Otoko This is an old sake that has been stored in the brewery for 3 years and was served warmed 😁. The aroma of rice flavor, the gentle texture on the tongue, the impact of the flavor at the back of the throat, the warm aftertaste of heated sake, and the bitter taste at the back of the throat at the end........ It is a "man of the sea" respecting fishermen who work at sea, and I feel that it is strongly made to go well with local fatty seafood and salty preserved food 😋. The entrée sold out unexpectedly quickly, so I emptied it before I could check its true value💦.

ジャイヴ[Fukui Spring New Sake Festival (8) Also from the Ishikawa booth, this sake was too good to pass up. Kaga no Tsuki Junmai Ginjo Reconstruction Assistance Sake: Ishikawa's Sake The breweries that survived the Noto Peninsula Earthquake in January were supporting the recovery efforts through the Ishikawa Sake Brewers Association, and each brewery offered a version of "Kaga no Tsuki" as a relief sake. The clear and delicious aroma of rice, the smooth taste on the palate, the lingering aftertaste, and the bitterness at the back of the throat that lingers at the end. We hope for the earliest possible recovery and that you can return to your daily life with peace of mind ✨. Support Ishikawa by drinking 😊.

ジャイヴ[Fukui Spring New Sake Festival] Usually, this event is held only for sake breweries in Fukui, but this year, in conjunction with the opening of the Fukui Shinkansen bullet train, sake brewers' associations from Ishikawa and Toyama also set up booths and worked together to make the event a great success 😁. While I was looking around the Ishikawa booth, I was curious about a brand I had never seen before, so I had a taste of this one 🍶. Miyuki no Homare" brewed by Tezuka Sake Brewery in Komatsu City. The aroma of rice with a hint of umami, the taste of rice with a strong impact on the palate, and a gentle aftertaste. The gentle first taste and the impact of the umami that comes afterward is a bottle that will become addictive 😁.

ジャイヴ[Fukui Spring New Sake Festival (6) Next, visitors can enjoy a glass of sake from their own local brewery. Hanashoku Junmai Daiginjo Betsuatsurae The aroma is like grapes with a hint of sourness, the mouthfeel is clean and sweet with a pleasant aftertaste, and there is a lingering bitterness in the back of the throat. I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. I think if I recommend [salted sea urchin] to people outside of the prefecture, they will be puzzled how to eat it 🤔.

ジャイヴ[Fukui Spring New Sake Festival (5) We also visited the Tanabe Sake Brewery, which we are sure will be of interest to the King of Noodle Sake, and of course we had a glass of sake. Echizenmisaki Sakahomare Junmai Daiginjo. The aroma of rice with a refreshing acidity, the sweetness and umami from the mouthfeel, and the lingering aftertaste are pleasant with the spring breeze! Sweetness and mellowness increase as the temperature rises. [I think you can tell that the brewery has been working hard to create a delicious sake through trial and error since its development.

ジャイヴ[Fukui Spring New Sake Festival (4) We'll drink more and more! Next up is a visit to a brewery within walking distance from Fukui Station for a cup of sake 🍶. Tsuneyama PREMIUM Nama Spring New Sake Festival LIMITED Sweet rice aroma, slight carbonation on the tip of the tongue, and a pleasant aftertaste from the sweetness that flows down the throat and leaves a pleasant aftertaste on the nose. It is too good not to be sold to the general public! This bottle was brought by Tsuneyama Shuzo for this event only and will not be sold to the general public. This was the most impressive sake I drank this time ✨.

ジャイヴ[Fukui Spring New Sake Festival (3) The third sake I chose was from the Torihama Sake Brewery, which brews sake on the banks of the Mikata Goko (five lakes) in the Reinan area of Fukui. Torihama Junmai Ginjo Sweet fruity aroma, light umami, impactful bitterness, and a clean finish. Some time ago, when we were talking about the fact that there are many sake with "Kamo" in them (Kamotsuru, Kamonishiki, etc.) and it is hard to know which sake is which, we were told that there is also a sake called "Kamoei" in Fukui! The brewer of "Kamoei" is this "Torihama Shuzo". I was impressed by the fact that they posted on SNS that they were selling Junmai Daiginjo at half price because they had no money to buy rice to make sake last year, and I wanted to try it once 😁.

ジャイヴ[Fukui Spring New Sake Festival (1) My father-in-law invited me to the Fukui New Sake Festival, which was held in front of Corona, and I went drinking with him. Thanks to the opening of the Shinkansen, the venue was moved from Phoenix Plaza to Hapilin in front of Fukui Station, which greatly improved the accessibility of the festival. First, a toast from Kato Kichihei Shoten, which was closest to our table. My father and his friends had "Chogin" and I had "Sakahomare Junmai Daiginjo, Polishing 30%-5%" 🥂. The aroma is plump and fruity, the mouthfeel is soft with a gentle sweetness and umami, and it finishes with a gentle aftertaste. ジャイヴThe other night at the hot springs, I tried to have a few drinks in the room, but I was so tired from my recent trip that I went to the hot springs, had a few drinks, put the kids to bed, and almost all of it ended up back at home 💦. I was a little short on drinks, so I decided to have a quick drink at home the next day 😁. I bought a small bottle of this for the spa 🍶. Gassa Junmai Ginjyo Nama-Storage" brewed by Katayama Shuzo, a sake brewery in Takefu, a local town. Clear rice aroma upon opening the bottle. The first sip has a clear rice flavor, and the aroma of rice passes through the nose, followed by a sharp, clean aftertaste and a slight bitterness at the end. It is a dry sake with a clear, not too sweet umami that is typical of nama-zake. The creamy taste of smoked cheese and the clear umami go well with each other, and the smoky aroma of smoked cheese comes out through the nose at the end. The saltiness and umami of the seasoned cod goes well with the gentle dry sake. [Kansai is another main brand brewed by Katayama Shuzo, and most restaurants in Fukui carry Ippongi as their hot sake. Katayama Shuzo has started to offer Junmai Ginjo and Junmai Daiginjo in their "Gekizou" series! Since we're here, we'll have it in a "tsukimizake" (moon-viewing sake) 🌛 tonight.

ジャイヴMy grandma and grandpa took me to a hot spring to celebrate my eldest daughter's graduation from a small group preschool for 0-2 year olds to another preschool for 3 year olds (so called "younger children") starting this spring. We had a buffet of freshly prepared food at the live kitchen, and we could drink as much as we wanted from the automatic draft beer server in the alcohol corner 🍺. We decided to try some sake and had a drink at the only sake bar in the corner 🍶. I had never seen the brand name "Tsurumi" brewed by Rikisen Sake Brewery in Fukui before, and the name sounds like a rival character in a popular Hokkaido-based "Zavival Battle for Buried Treasure" 😁. Aroma of full-bodied rice and a hint of acidity, sweetness and umami, and a shallow aftertaste. The specs are unknown, probably a honjozo, but it is quite easy to drink for a honjozo at room temperature 😋. The junmai ginjo sake "Onnajo" made by the proprietresses of Ashihara Onsen was available for a fee, and when I tried to buy a bottle as a souvenir, it was over 3,000 yen for a four-pack, so I gave it up💦.

The end of the fiscal year has been so busy that when I was drinking the last "Snoqualmie", I was thinking that tomorrow (April 1) I have to attend the company's ceremony again, and then I thought, what? I was thinking to myself, "I've been with this company for 20 years already? I was surprised at how time flies💦. I opened a bottle of my treasured sake to celebrate my successful completion of the previous year and my 20 years of service 🍶. Toyo Bijin Togin Junmai Daiginjo Aizan This is the first time I've had sake in a leather bag 😲. Cherry blossoms were in full bloom, so we compared two sakes, one in a glass and the other in a spring sake cup. [Masu (glass) and Spring Sake Cup A clear sweet aroma typical of Aizan, not too sweet, not too light sweetness, just the right amount of Aizan-like gorgeous sweetness, and a lingering aftertaste that makes you feel like you're soaring to the heavens. [Spring Sake] A juicy, gorgeous sweetness with a cool, refreshing aroma that leaves the nose, and a clear, moderately sweet lingering aroma that is as refreshing as the clear sky after it finishes. For the entrée, take out yakitori from Akiyoshi and boil it in hot water on a cassette stove so that you can enjoy it hot at home. We were intoxicated with the finest "Toyo Bijin" 😁.

ジャイヴOn March 31, the last day of the fiscal year, I was busy with preparations and coordination for the "Fukui Sakura Marathon 2024," which was held to commemorate the extension of the Hokuriku Shinkansen line to Fukui, which had recently opened. When I opened the bottle, it came off quite vigorously. I opened a good one and rewarded myself by thinking that I will never have a job of this scale in my life! [It's the opening of the Shinkansen line in Fukui! All of you!] I wanted to shout out "Shinkansen Fukui is open for business! Daigouji Junmai Daiginjo Slightly melon-like aroma! [Glass in the Masu.] The mouthfeel is slightly sweet, then slowly fades away, leaving a clear, pleasantly deep aftertaste with a slight bitterness lingering on the tip of the tongue. [Thin sipped from a thin boar's mouth.] The mouthfeel is clear and deep, with a deep umami sweetness, followed by a pleasant finish with a grape-like aroma that escapes through the nose and a pleasant, deep, floral aftertaste. It is characterized by its clear and deep aftertaste rather than by the assertion of umami, sweetness, and bitterness. As the temperature rises, the sweetness and deep aftertaste increase even more, and every time I drink it, I fall into a trip-like sensation, and when I measured it with a stopwatch, I fell into a pleasant sensation for more than 20 seconds! ジャイヴThe day after the Kansai Sake-no-wa New Year's Off-line Meeting, we were planning to go to the Nagoya Anpanman Museum early in the morning for our eldest daughter's graduation trip, but when she woke up, she was a little hot💦. We took her temperature and it was 37.8℃, so we decided to take a precaution and cancel the trip to the Anpanman Museum 😢. By early evening, her temperature had returned to normal, so we wondered what we had done. But for dinner, we went to Akiyoshi for yakitori (grilled chicken) at my eldest daughter's request. I wanted to drink a dry sake with my specialty "Jun Chicken", so I went here 🍶. Hyakujuro Junmai Ginjo Orion Daijakuchi Nama Sake. When opened, it smells like a thin melon. [The freshness of the mouthfeel is typical for a sake with a slightly soft umami (not quite sweetness) and a clean aftertaste with a hint of fruity aroma on the nose. After a day of drinking, we compared the sake with a glass of Buri Kama Yaki and a thin sipped sake cup. [Glass] The aroma is slightly sweet and melon-like, and the mouthfeel is full of umami and acidity, with a clean finish. [Thin sipped with a boar's mouth] Sweet fruity aroma, juicy soft mouthfeel with umami, then finishes with a full finish. Delicious with fatty food.

ジャイヴKansai Sake-no-wa New Year Off-line Meeting (11) After the first party which was a great success, there was still time before the train back home, so we joined the second party ✨. [We walked straight north from "Ojisan to Nihonshu" to "Wa dining Wadachi" 🚶. The menu showed a wide selection of sake from all 47 prefectures, including some rare ones, and some of the participants at the after-party were talking about how rare it was to find them here! I had a drink from this menu. Hatsumigayo Honjozo Aroma of fluffy rice, a slight sweetness, a clean umami, and a sweet aftertaste! I found out for the first time that there was a sake other than "Sentoku" in Miyazaki Prefecture, and later found out that it was brewed by the Unkai Brewery, which makes the buckwheat shochu "Unkai". I had to leave the after-party halfway through because my train was coming, and I was grateful for all the help [Umaisan] gave me on the way back to the hotel 🙇. I went back to Osaka station and bought a can of beer and some snacks, but I fell asleep without opening it 💤. I set my alarm in advance so I didn't miss my flight and got home safely 💦. Fruity aroma with a hint of honey, sweetness with no unpleasant taste, and a pleasantly clean aftertaste. This is delicious! I wonder if this is a private brand product of Nishibori Shuzo, a brewery in Tochigi that brews "out of the gate" and a liquor store 🤔. Tochigi love 🥰 even in Kansai offline meeting
