It's been a long time since I've encountered it.
Sweetness and sourness.
The umami is mellow and light, with a slightly full-bodied aftertaste, and it comes out slowly.
Tasted chilled. Nose is forward to match a big forward flavor of cantaloupe rind, lychee, and cashew. Flavor lingers and gets alcohol and somewhat spicy on the finish which is long. Very dry and somewhat bitter on the finish. Would be interesting with food.
The amount of lees is so large that you can feel its roughness on your tongue.
It is thick, but unexpectedly light, and the main flavor is umami.
When slightly warmed, it has a softness like drinking amazake (sweet sake).

Let's have this second drink, which is typical of the season of new sake 🍶.
Ippongi Hatsushibori.
Rich rice aroma, fresh and rich umami, a hint of sweetness, and a pleasant aftertaste with a bitter aftertaste.
It is 21% alcohol, so drink a little and add an ice cube as recommended by the brewery and drink on the rocks.
The aroma is at once gorgeous, the mouthfeel is full of gorgeous aroma, and the flavor is typical of Ippongi, and then it finishes with a fresh aftertaste with a low bitterness.
I wonder if the difference from last year can be attributed to the difference in the brewing of the year or a change in my palate 🤔.
Regardless of the answer, it was a pleasure to drink it again this year 🥰.
It is indeed spicy and refreshing. It has a strong sense of transparency.
It goes well with all kinds of snacks. Is it good with a heavy steak?
Maybe it's just too clear (laughs).
Almost water. The mouthfeel is almost watery. It has a strong flavor, but it is not too assertive. It is more suitable for everyday drinking than for special occasions.
