June 3, 2023 At Japanese Sake Satou in Matsuyama, Japan. I took a new employee to my favorite restaurant to drinking sake. The last and seventh drink of the day was Koei Kiku Tsukishita Muyori. It is a mellow, sweet and delicious sake, easy to drink easy to drink without feeling the alcohol content. It is easy to drink without feeling alcohol content. When the bottle is opened, bam! As expected...it's a fresh and fruity aroma...and the mouthfeel is fresh, sweet, and bitter...with a hint of sourness. I'm sipping it with seared sea bream, sea bream, and seared Spanish mackerel as snacks...a little...sweet...but delicious...(^^)

Mie Pref. Matsusaka City. Shinra Sake Brewery Co. Yumemado Tokubetsu Junmai Sake, undiluted. Purchased at a sake shop in Tsu City Station, where the brewer himself took us on the way back from the Mie Sake Event. It is a rare sake with a very small production. We will drink it cold. When I looked closely, I noticed something floating around in the bottle, probably the lees of amino acid clumps. The color is clear and dark golden, like amber. The top aroma is mushrooms, humus, and a slight roasted, aged aroma derived from malted rice. On the palate, the aroma on the nose is complex, with an axial strength that is typical of the original sake and a sense of nostalgic old, withered sake, with a mild acidity that would have been sharp without the sweetness, and a slight astringency and a slight umami taste. After swallowing, there is a skittish spiciness, and the sense of maturity is gone, which is a strange sensation. When I heated it up, it went from amino acid sweetness and mellow umami to a sharp dry aftertaste. This is a sake for connoisseurs. I learned a lot from it. The 5th Shinmame Festival, the 5th Kanno Thanksgiving Mie Shinshu Matsuri (10) I was a little excited to see the brewer of Shinra Sake Brewery, who was a part of the Mie Sake Enjoyment Group event, but he did not show up this time, which was a shame. ◉Yumemado Tokubetsu Junmai Sake Genshu This sake is produced in extremely small quantities. It has a thick nutty flavor. It has a chocolate and caramel taste, which is also quite unique. The richness has a classical feel to it. I think I can understand why the brewer made old, matured sake. I bought it at the Mie Sake Festival, and it's sitting in the fridge, but I might leave it alone for a while.

1948 2025/10 Yumemado Tokubetsu Junmai Nama-nazake 60% 17° 25/8 A+ Matsuzaka City, Mie 720 1776 This sake is a pure sake that has been aged for a long time. The aroma is mild on the palate, and the flavor is somewhat nostalgic, but with a robust taste and a bit of character behind it. It was my first time drinking this sake, but I got the impression that it was a simple but very tasty sake I used to drink in the past. When heated up, the flavor became more mellow and different from that of cold sake. While everyone is trying to be modern and end up with the same old thing, this is a sake that is safe to drink and tastes like the old-fashioned way, I am thankful for the old-fashioned sake that I can drink with peace of mind. Although the type of sake is a little different, I felt happy to have found a new sake in the same Mie region as Miyamasugi, which I can no longer drink.

I've always wanted to drink Taniizumi! I wasn't sure which one to choose, but on the other hand, it looks like the regular sake is harder to find, so I chose this one😃! It's a regular sake, but apparently it's Fukuroshibori! The first sip gave me the impression that it was a traditional sake☺️. The first sip was like a traditional sake ☺️ I could taste the strong grain flavor but then the sweetness and mellowness came through 😚 it wasn't dry 😆.

The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. This will be my first time in Sanin Togo🍶. The first aroma is sweet, with a hint of grain rather than rice. In the mouth, there is a moderate acidity and a sweet umami taste of rice. It has a slight peculiarity similar to that of Ten Asahi or Benten Musume, but this is acceptable. I enjoyed it with oysters in oil 🦪. San-in region's heated sake has its own peculiar taste 🤔. Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

There is no mention of it, but it is probably nama sake. It is not labeled as Nama-shu, but according to the information on the Internet, the label on the back of the bottle says it needs to be kept chilled, which means it is Nama-shu. Am I right? The rice is Ginbukiyo and Nihonbare. It also looks like a raw sake. It does not feel as spicy as the sake level, and although it is spicy, there is a good balance of sweet and spicy. The taste is light and refreshing. The spiciness finishes with a lingering sweetness. There is a good amount of graininess.
