This is the first time I have received a Masho.
I bought it on the spur of the moment for no particular reason😙.
It has a yellowish color when poured.
Once I tasted the delicate acidity, the sweetness enveloped my entire tongue from the tip of the tongue 😋.
It is a honey-like sweetness, but thin and slight.
When the sweetness fades on the back of the tongue, some flavor comes over it, but I can't really tell what it is, it feels like the aftertaste of ...... cooked rice.
The bitter and spicy taste appears at the back of the throat, and the sweet taste returns on the tip of the tongue.
You have even more sweetness lingering on the tongue.
As the day goes on, the flavorful shiitake mushrooms and dried bonito flakes mixed with the broth is absolutely delicious 🥰.

The aroma doesn't seem to rise much.
The rice is 80% polished and the taste is robust? I thought so. It has a light umami and a fresh acidity like a makami-style wine 😭Yumami!
I kept it carefully refrigerated, but upon closer inspection, I found that it was stored in a cool, dark place.
I wonder if it can be kept cold or at room temperature? Let's take it out of the fridge and leave it there: ☺️

I got it when I went for a drive in Gifu the other day!
I had been curious about this sake from Ibaraki, which Manachie and Aladdin had been drinking for a while.

It has a slightly matured pear-like aroma. The aroma is like a pear, and the soft umami and fruity aroma that flows smoothly through the mouth and nose, followed by a lingering fresh bitterness.

A clean aroma, a smooth taste, and a unique aroma that flows smoothly through the nose, followed by a lingering fresh bitterness.
What is this? The balance that I have never experienced before, the smooth and fruity flavor, the fruity aroma and the lingering bitterness, the changes are quite drastic, but it's a wonder that it's all in one sake.
I served it with kimchi motsu nabe and bonito tataki.
The umami part goes well with it, but it leaves a bitter taste, so it would be interesting if you try it with other dishes 🤔.
The fourth one is "Jidori Chicken and Shellfish Foam Shiratsuyu" from Mahoroba, the only ramen restaurant in Fukui to win the Michelin Bib Gourmand award for its ramen.

Basically, it's an acidity-based assembly...
The sweetness comes from the acidity and finishes with the acidity.
(It may be a little strange since it is after a certain amount of drinking...) There is an alu feeling in the sensation after drinking, so you may not like it here.
However, the short aftertaste after drinking means that it is easy to drink, so I think this is a plus.
Personally, I like the taste!

I bought this makami because the nigori I drank before was so good. According to the liquor store, it is a refreshing type.
The aroma is citrus, melon. Maybe a little bit of makki too.
When you include it, it is ooey-gooey and chili-chili-chili-chili-chili-chili-chili. The sweetness comes at first, but it turns to sourness and spreads out, and then it is tightened up with a bit of bitterness.
This is the kind that goes well with a strong entrée!
As the day goes by, it seems to become more classic.
The name is Casual Modern, but it may not be that modern at the time of opening the bottle. The impression is that it is a clear classic with sweetness, umami, and acidity of rice.
It is very drinkable and can be easily paired with meals, but I think I liked the nigori I drank before better!
