Pre-order because they said they don't have much in stock 😁.
I've been curious about this one since Mr. Noodle King used to drink it.
I don't know if it's rare or not, but I can't find anyone else drinking it 😅.
It's a raw unfiltered sake that is aged until autumn.
It has a soft mouthfeel, and you can feel the quality of the tobin-tori even more than the fire-aged tobin-tori. The juicy sweetness is well balanced with the spiciness at the end.
Echizenmisaki has a quality of sake that you can linger over and drink forever 😁.
The closer to room temperature, the sweeter and tastier it is.

Oysters at room temperature and recommended by Peering Oysters
but we couldn't stock raw oysters
I ended up with grilled autumn oysters.
But it goes well with it.

Since we met the president of Echizenmisaki at the Hokuriku Sake Fair, we have become familiar with the company and check it out frequently.
◉Echizenmisaki Tank Pressed Junmai Genshu "Akaneun" Autumn Limited Hiyoroshi 2024BY
The balance of maturity and acidity is good, deep and dark but mild.
◉Misaki Echizen Honami 2024BY Saka Homare Unfiltered Unrefined Unmatured Sake
The fruity taste is not too floral, but calm and fruity. The acidity is tight, and then a slight sweetness and richness spread out. The sweetness is not too strong and light.
◉Misaki Echizenmisaki Junmai Genmai Prune, brewed with natural plum yeast, 2024BY
A slightly unique sake with a low alcohol content of 12° and a sake strength of -35. It has a clear, smooth, and smooth mouthfeel. It is sweet but flows smoothly without viscosity, so the sweetness is not as intense as the sake degree. It is interesting that it has a plum-like taste.
They also make unique and interesting sake, so be sure to check them out.
Slightly smoky aroma.
It is fragrant and reminds me of iburi gakko.
It has a mild acidity, syrupy sweetness, and a malty aroma.
It has a mellow, umami taste, but it is beautiful without being overly full.
It goes down smoothly and calmly.
Taste 3/5 stars.

Personal Evaluation
This is an autumn-only hiyaoroshi.
The aroma is gentle. In the mouth, it has a strong acidity, which is why the alcohol content is also strong.
The astringency spreads moderately in the aftertaste, and the bitterness is slightly strong.
It seems to go well with sweet foods.
It seems to go well with meat and potatoes.
This sake is said to be made by collecting and bottling only "tailings sake" from the Daiginjo and Junmai sake of "Echizen Misaki" brewed that year.
First, the supernatant.
After a refreshing sweetness, there is a strong umami taste.
This is followed by a strong alcohol taste.
It has the umami of rice, but it is fruity.
The lingering umami flavor is also retained.
This is very good.
Then, it is stirred.
The pointy part becomes round.
It is wonderful.
The taste is refreshing and the umami spreads in the mouth.
The initial taste is sweet, but the aftertaste is sharp and tight.
It is a sake that can be enjoyed as both a light sweet sake and a dry sake.
