This is the first time I have heard of Yumesansui sake rice.
Oku seems to be a sake that aims for both high aroma and thickening.

We ended the day with this sake in collaboration with mushroom and kiss tempura.

It is a refreshing and refreshing summer sake. So it seems sweet for a moment, but when you taste it more closely, it seems dry. I think the label "Oku" is always cool.

The bubbles rise vigorously. The strong bubbling sensation that can only come from secondary fermentation in the bottle is pleasant, and the drink is refreshing and crisp.
The flavor of rice spreads softly on the palate, and the firm acidity tightens the outline of the flavor. The light flavor, which does not rely on sweetness, is finished with a sense of depth and clarity.
It also has nuances somewhat reminiscent of Yamazaki's "Harukasumi," a delicate nigori sparkling wine that can be enjoyed to its fullest. The bright and gentle flavor, which seems to be cloaked in lingering springtime afterglow, makes it a perfect toast or a bottle to be enjoyed leisurely in the late afternoon.

All of the rice used for this sake is "Yumesansui," grown locally in Okumikawa under contract.
Polishing and pressing are carefully adjusted to bring out the full flavor of the rice, and you can sense the down-to-earth and careful craftsmanship of the brewery.
It is cool and refreshing, but not too light.
