[The 2nd Annual Bishu Competition Grand Tasting Is it a turnaround around here? I'm going to try to make a review of this year's sake tasting. Next up was a sake tasting that had a certain connection to the sake I was interested in drinking this year 🍶. Motobun Junmai Ginjo Hana Yeast Abelia The floral aroma in the rich sweetness of rice, the soft sweetness and umami like the honey of flowers, and the bitter taste that lingers on the tongue after the sweetness spreads and finishes. The temperature was slightly close to room temperature, but the impression was similar to that of "Rairaku Abelia". When I talked a little with the brewer, he told me that he had a connection to the area where he lives and that he had talked with my father, and we got into a long conversation 😁. I could feel his love for Gifu 🥰.

[The 2nd Annual Bishu Competition Grand Tasting Let's refill our tickets and drink more 😁. First, let's try some of the brands we liked when we visited the booths 🍶. Chitaburu Junmai Ginjo Wine Yeast The aroma was a bit acidic, similar to white wine, and the mouthfeel was like a white wine, from the plump and spreading umami and sweetness to the sharpness and astringency that lingers on the tongue. Excellent balance of sake-like and wine-like flavors.

[The 2nd Bishu Competition Tasting Event ⑥ Ishikawa and Toyama, also from the Hokuriku region, had a booth at the Bishu Competition in Hokuriku ✨. Looking at the Toyama booth, I had to ask for it if I could drink it 🤣. Kachikoma Daiginjo. The sweet aroma of rice with a hint of alkaloids, the umami that flows smoothly through the body with a clean mouthfeel and a mellow sweet aftertaste from the sweetness of the alkaloids. Yum! I can't believe I can drink "Katsuma" for only 400 yen per ticket 😲and it's a daiginjo 😋! Hooray for tasting events!

[The 2nd Bishu Competition Tasting Event (5) Next up was another sake tasting from the "Local Sake Tourism" section, this time featuring Fukui sake, which is surprisingly too popular to drink on a regular basis. Bon Sasayuki The clear sweet aroma of rice, the strong carbonation on the tip of the tongue, the sweet and refreshing finish, and the pleasantly sweet aftertaste........ Bon" is a representative of Fukui along with "Kuroryu", and many izakayas in Fukui have these two major brands, so I usually don't drink them actively, but it's good after a long time 😁. This one won the "Top" award in the sparkling category at this year's competition, congratulations 🎉.

[The 2nd Bishu Competition Grand Tasting Next, we had a glass of local sake from Fukui, Japan. Echizenmisaki Tank Pressed Junmai Revived Rice Kutouryu The aroma of rice with a slight sense of maturity, the firm umami that quickly enters the mouth, the strong acidity after a sharp taste, and the bitterness that lingers on the tongue at the end. The taste is firm even though the temperature is close to room temperature, and the evening chilliness makes you want to warm it up. In addition to the sake competition, the "Jizake Tourism" event will also offer tastings of Fukui's local sake, as well as local wine, beer, plum wine and other liqueurs ✨. The tickets are tied together, so there's some Fukui sake in between 😁.

[The 2nd Bishu Competition Grand Tasting ③. The tasting is still in its early stages✨ I personally am short on Hyogo sake, so here's the next one 🍶. Kamiike Junmai Daiginjo Deiran Aroma of mellow sweet rice, smooth, full-bodied flavor and fruity sweetness, unique aroma that escapes from the nose, bitterness on the tongue, and a strong bitterness that lingers in the throat after it finishes. My gut feeling is that it will be very good when heated. According to my research, the annual production is quite small (only 20 sake blocks), and the brewery used to be mainly a "tub seller" that sold sake for packaged sake to other companies. However, when sales dropped due to the Corona disaster, they started brewing their own brand of four-pack bottles.

[The 2nd Annual Bishu Competition Grand Tasting The next drink was 🍶. Ginrei-Gassan Junmai-Shu Sasarazuki It has a thin, fluffy rice aroma, a light, refreshing sweetness, followed by a sweet and sour sharpness and a lingering aftertaste. According to the brewery, the sweetness is enhanced when chilled to a crisp. This sake won a gold medal in the "Raw Alcohol" category of the current competition! The system is to select multiple gold award winners in each category, and the first place in each category and the first place overall [Bishu of the year 2024] is decided from among the gold award winners 🤔. I've had "Gassan" before, but this is my first time to try "Ginrei-Gassan" 😁. The sweet and sour aftertaste was fresh and I would like to try the brewery's recommended drinking method✨. It's a [moon sake] with [crescent moon] written firmly on the label 🌛.

To commemorate the opening of the Shinkansen bullet train, we are participating in the 2nd Bishu Competition 2024 in Fukui this year 😁. I was told that the sake tasting would feature sake that is hard to find in Fukui, so I joined the event after working the night shift. First of all, I found a sake that I was interested in, so I opened the event with a drink 🍶. Fukuwagura Junmai Ginjo [The sake brewery owned by Imuraya, famous for its Adzuki Bar, so let's see what it's like! A fruity rice aroma similar to muscat, a smooth, slightly thickened mouthfeel, a sweet umami reminiscent of syrup, a sharp finish, and a sweet aftertaste. You can feel the brewing quality of an ice cream maker. I think this may be the first sake I've ever tasted that has this much molassesiness. [It would be fun to pour it over an adzuki-bar ✨.

October 17 was the annual supermoon for October's full moon: 🌕️ I was working at night on that day, so I decided to just look up at the moon, and the next day I had a cold-like symptom, so I rested for a few days. Now that I'm feeling better, I'd like to go out and have a "moon-viewing party tonight" 😁Now, here's a drink 🍶🌕️ Kuroshozenjo Kurakamatsu Senjo Kurakamatsu Senjo Kurakamatsu Senjo Kurakamatsu Senjo Sanshoyo Junmai Ginjo Nama Shuzake Also purchased at Jizakeya Miyajima, which we visited on our trip to Shinshu ✨. [Gugumeumi.] The freshness of the sake goes without saying, but the apple-like aroma of rice that is typical of Shinshu sake is also noticeable in the nostrils. [Tsuki no Oubai.] The aroma of rice is like the flavor of apples, and the mouthfeel is deep and juicy, with a hint of apple flavor. The first snowfall was observed in Hokkaido and the nights were getting colder, so we served miso-flavored "motsunabe" and sashimi of kochi (small fish) landed in Okayama Prefecture, which went well with the refreshing sweetness of the crunchy kochi meat. Shinanotsuru" opened last time, I had decided to drink the next sake to compare as well, well, I'll give you a taste. Shinanotsuru Shinshu Secret Sake Hanpukai Gold Course This sake is the Secret frame of the sake I bought on my trip to Shinshu ✨. At first glance, it looks just like the "Gantaku" we opened last time, but it's actually a "Hanpukai Limited Edition". The label is on the regular "Gakutaku" label, but the contents are an assemblage of a fire-aged Junmai Ginjo and a Junmai Daiginjo! You can tell the difference by the "G" on the lid of the fourth collage photo, which is the "G" for "Hanpukai Gold Course. [Gugumi-nomi] The aroma of rice with a fruity apple-like flavor that is typical of Shinshu sake, a sweet atmosphere and deep lingering aftertaste from the robust umami of the first sip, and a lingering bitterness at the end. The lingering aftertaste is quite long with a trip time of 53 seconds, a new record! [Mokkiri] The aroma of rice is typical of Shinshu sake, and just like the gulping sake, the mouthfeel is firm and sweet, with a long and pleasantly intoxicating aftertaste. It is characterized by a pleasant lingering aftertaste that can be felt with each sip, and its even stronger flavor and lingering aftertaste than regular "Gantaku" can be drunk as a bedtime sake with light appetizers. Shinanotsuru Junmai Ginjo Kakutaku Nama Sake We were lucky enough to find the last bottle of the "Gakutaku" that Takeshon had praised so highly on a recent trip to Shinshu, and we found it at Nakajima Sake Shop in Matsumoto City ✨. [The gulp.] Mellow apple-like aroma, mellow flavor and apple-like sweetness on the palate and nose, then a sharp finish with a deep aftertaste and a lingering bitterness that lingers in the throat. [Mokkiri.] A clean apple-like aroma, juicy flavor, sweetness, and an apple-like aroma on the palate, followed by a sharp, pleasant aftertaste, and a bitter taste that lingers in the throat at the end. Both are characterized by a deep lingering aftertaste from the umami sweetness and aroma reminiscent of apples, which is typical of Shinshu sake, and no~ this is delicious 😋. This is one that I will actively seek out when I visit Nagano 🧐. The entrées are the seasonal "bonito tataki" and the "seared shime saba" which I've been really into lately! The origin of the name "Stubborn" comes from the fact that the second president [Takuji Kitahara] was famous for his stubbornness and was called "Stubborn Takuji", meaning "Stubborn Takuji", which seems to have nothing to do with "Mushyagandamu" 🤔. The next one I'm going to open will be linked to this "stubborn table", so stay tuned 🥰.

Drinking at Kamima, a long-established izakaya in Kyoto After drinking the restaurant's original "Nada no Roku-kind Blend", we looked at the menu to try another sake and found a rare sake, so we had a drink. Tsukijyo Junmai Daiginjo. A clean, sweet aroma of rice, a clear mouthfeel, a mellow, fruity sweetness, and a pleasant aftertaste of sweetness that quickly fades away. The sake rice is grown in Saga, where Arashiyama is located in Kyoto, and it is brewed by Saito Shuzo, famous for Eikun. It is named "Gassho" after Saga, which is said to be famous for its moon. The dish was the "squid lizard meat" which was tempted by the menu, and the texture of the crispy and tasty squid meat and the saltiness and umami of the miso accelerate the sake. [While we were enjoying Kamima, Hirupeko-san and his friend came to join us and we had a great sake discussion ✨. The picture of the bottle was taken from the internet.

My destination, my first visit in about 5 years, was Kamima, a restaurant well-known in Kazuhiko Ota's books and known as a "izakaya" (Japanese style bar) heritage 🚌. We started off with the store's eponymous "Nada no Roku-kind Blend" sake, served warm or at room temperature 🍶. [Heated sake.] The aroma of the rich rice and heated sake with alkaloids, the mouthwatering flavor, the sweetness of the alkaloids, and then the sweetness of the alkaloids that remains at the end of the drink. The pleasant aftertaste you get when drinking hot sake is long, but the exquisite taste makes you want to have another cup! [At room temperature] A slightly heavy aroma of rice and alosoze, a clean flavor, and the sweetness of the alosoze on the back, followed by a smooth finish and a gentle aftertaste. The entrées were eel tempura and hamo steamed in an earthenware teapot with matsutake mushrooms and hamo pike conger eel. If you mix the broth from the hamo steamed in an earthenware teapot with sake, it turns into a superb sake with broth.

[This is the third and final round of drinks at "prking Kitahama Hakkosho". Ayu Masamune Honjozo. The aroma is full of ayu, and the mouthfeel is full of umami and ayu sweetness, and the taste is crisp on the tongue, followed by a clean and pleasant aftertaste. [I was surprised to find a sake with such a name after reading other people's reviews of it on Sake-no-wa. We left the store with some souvenirs ✨. The fourth picture shows a restaurant near Shin-Osaka station that serves Kochi's famous "Jang-men", which I had been interested in for a long time, so I stopped by for lunch before heading to "Kitahama Hakkosho" (Kitahama Fermentation Factory) 🍜. Jang-men" ramen noodles with egg sauce, full of leek and hormone, delicious 😋.

[The second sake at "prking Kitahama Hakkosho" (prking Kitahama Fermentation Plant). Hokusho Junmai Ginjo Hokusho in Fruits. The aroma is a little difficult to smell due to the wind, but it gives a cool and refreshing feeling. I've been curious about "Hokusho" ever since I saw a review of "Hokusho Mild Nigori Hon Nama Nama Sake" by the King of Menshu about a year ago, and I finally got to drink it 😁. It has a delicious fresh flavor typical of Niigata sake 😋.

I'll try to post in real time ✨ First of all, I've always wanted to visit [prking Kitahama Fermentation Station] 🚃. I saw ma-ki-san visited the other day and they have a great selection of drunken sake 😋. Well, let's start with the KEG bottle we were looking for! Harada Special Junmai Unfiltered Nama Sake The aroma of rice is classic, the carbonation is so slight that you have to concentrate on the tip of your tongue to feel it, the taste is fresh and KEG-like, and the fruity sweetness on the back is refreshing and fruity, with a sweet aftertaste. The gap between the classic aroma and the modern taste is pleasant and delicious 😋. The store even kindly let me pour it myself from the KEG server into my own sake cup 😁. I'm sitting on the shady terrace in the afternoon, feeling the autumn breeze while sipping my sake 🍁🍃🍶.

Looking back post 4 in SHIMA The last sake I had at SHIMA was a limited edition sake that I chose because of its powerful typeface. Limited edition Hououmida Hi Hiyaoroshi Junmai Ginjo-shu. The aroma of slightly sweet rice that seems to permeate the scene, the sourness and umami of the mouthfeel, and the sweetness in the background all battle it out for the long, sharp finish. The difference between the limited edition and the regular version is that it is said to be hiki-ired one less time 🔥. To be exact, the regular sake is fire-aged and grated, and then fire-aged a second time right before bottling, but the limited edition is bottled without this fire-aging right before bottling✨. I was led to the limited edition, but it's been a while since I've had a Tochigi Ai 🥰. As I was slowly enjoying my last sake, a waiter from a nearby Okinawan restaurant came in for a midway break and left with a coffee split shochu and a quick bite of cheesecake, which left a strange impression on me 🆒. Looking back post 3) in SHIMA The second drink I ordered after opening "Omine" was this one 🍶. Wakanami Junmai Ginjo Omachi. It had a strong apple aroma with a hint of umami, a slight tartness and umami that caught on the tip of my tongue, a sweetness that I could feel behind it, and a clean and refreshing aftertaste. First time to drink "Wakanami", I think it's the first time to feel the freshness and the astringent feeling that remains at the end 🤔.

Looking Back Post #2 in SHIMA On my way back from visiting my in-laws on a holiday weekend in September, I had some time to spare, so I dropped by SHIMA & Coffee & Sake 😁. It was about an hour before closing time, so let's go quickly and start with a cup of this 🍶. Daimine 3 Grains Summer Jun Kasumi Nama-Nishiki Nama-Nishiki. The aroma of rice with a hint of apple, slight carbonation on the tip of the tongue, and the mouthfeel is light and refreshing, with a slight apple sweetness and sourness that finishes with a refreshing aftertaste. Easy to drink and refreshing 😋. I've never had a "Daimine 3 Grain" at home before, but I finally got it the other day at Shusendo Horiichi in Nagoya ✨. I'm looking forward to opening it now, but it's going to take a while since I have so much in stock💦.

Okazaki Sake Brewery] which was one of my final destinations on my trip to Shinshu in August 🏠️ When I visited, there were two types of sake on sale: "Yumemizuho" and "Yamae Nishiki", so I bought both ✨. First, I opened the "Yumemizuho" and had a sip 🍶. I got my wish and drank "Shinshu Kamerei" at home for the first time 😋. [Gulping down the sake.] The aroma of rice with a full flavor and a hint of sourness in the background, a slight carbonation at the tip of the tongue, a strong umami and sweetness, and a lingering, slightly bitter aftertaste. [Mokkiri.] A slight aroma of white peaches, a firm umami and juicy sweetness on the palate, followed by a long, sweet aftertaste. The atmosphere of firm, juicy umami and sweetness is exactly the image of the "Shinshu Kamerei" that I have drunk so far 😁. I was surprised that even edible rice could be so deliciously "Shinshu Kamerei" like 😲. The entrée was seasonal "bonito tataki" and a gift "octopus teriyaki" 🐙.
