Hakugakusen Aged Junmai Daiginjo GAKU.
This is the first Hakugakusen from the series I received as a farewell gift.
The Yasumoto Sake Brewery is located in Yasuhara-cho, Fukui City, Fukui Prefecture, and is proud of its long history, with the 47th generation of the Yasumoto family being in charge of the brewery.
The name "GAKU" comes from Lord Matsudaira Harutake, the 16th head of the Fukui domain, also known as the "Four Wise Lords" at the end of the Edo period. 100% Gin-no-Sato produced in Fukui Prefecture is used, and the package is wrapped in Fukui's famous habutae furoshiki, or wrapping cloth.
The slightly tinted color of the sake and the ripe, banana-like aroma on the nose led one to imagine a matured taste, but the taste on the palate defied expectations in a good way, with a refreshing acidity and crisp, clear, and clean flavor. As the concept of "dancing acidity" suggests, we were able to enjoy a light taste even after aging!

It is a little fresh, refreshing, crisp, and clean. As the temperature rises, it becomes softer, but when served cold, it tastes just like Hakugakusen's summer sake made from Gohyakumangoku rice.

It has a malty but elegant aroma similar to Hakuneri (Hakugakusen Jungin)! After the necessary sweetness, the sweet, sour, and bitter flavors flow like a clear stream with a beautiful effervescence! It's the kind of flavor that makes you want to drink it in gulps!

It has a slightly bubbly taste. It is not sweet and has a sharp bitter taste! The aroma is gentle and refreshing, and it goes down your throat nicely.
