Purchased with Kido summer sake at Iwai Kotobuki Store in May 🍶. Rice type:Fukui Gohyakumangoku Rice Polishing Ratio : Koji Rice 55% Kake Rice 58 Sake meter: +4.0 Acidity: 1.7 Alcohol content: 15 I bought a bottle of Sakurazumi in spring at the brewery and it was so delicious that I checked out a distributor in Hyogo and bought it 😀 It has a little more gasiness than Sakurazumi. It is a little more gaseous than Sakurazumi, with a sweet taste at the beginning but it is sharp and dry at the end, also very tasty 😋. I don't like gaseous or sweet tastes, but for some reason I'm into Hakugakusen 🤣. I would love to try the recently released "Umimatsu" 😋.

Hello, Maa-san ☀☀☀☀☀☀☀☀. I see you opened "Natsumushi" right away 🥰. Personally, I think the reason why "Hakugakusen" is so easy to drink is because it has sweetness, but the acidity is so clean and sharp that you don't feel the sweetness too strongly 🤔.

I'm getting very drunk, the sixth station. Hakugakusen, sake for Fukui Prefecture, made only with sake rice produced in Fukui Prefecture. With a bowl of hamo. Rice used: "Gohyakumangoku" from Ono, Fukui Prefecture Polishing 50%. 15% alcohol by volume

Commentary. The dry label "Shinku" is dyed bright red. It is a very sharp type of sake even for Hakugakuzen. It flows smoothly and softly on the palate, and the umami of the rice spreads softly. So, if you are thinking, "This is a beautiful sake, but I don't feel much spiciness," it suddenly becomes sharp toward the end of the bottle. It is just like a "snap! The crisp finish makes you want to drink another glass. It is a very troublesome sake. It can be enjoyed at a wide range of temperatures, from cold to warm.

This sake was drunk during a trip to Awara Onsen. It seems to be a sake that is only available in summer. It was dry with a refreshing sharpness typical of summer sake, but had a mellowness typical of sweet sake, which was quite unusual. It tasted even better with sashimi.

Hakugakusen Aged Junmai Daiginjo GAKU. This is the first Hakugakusen from the series I received as a farewell gift. The Yasumoto Sake Brewery is located in Yasuhara-cho, Fukui City, Fukui Prefecture, and is proud of its long history, with the 47th generation of the Yasumoto family being in charge of the brewery. The name "GAKU" comes from Lord Matsudaira Harutake, the 16th head of the Fukui domain, also known as the "Four Wise Lords" at the end of the Edo period. 100% Gin-no-Sato produced in Fukui Prefecture is used, and the package is wrapped in Fukui's famous habutae furoshiki, or wrapping cloth. The slightly tinted color of the sake and the ripe, banana-like aroma on the nose led one to imagine a matured taste, but the taste on the palate defied expectations in a good way, with a refreshing acidity and crisp, clear, and clean flavor. As the concept of "dancing acidity" suggests, we were able to enjoy a light taste even after aging!

On a fine day, a good coworker invited me over to help him make charcoal ❗It was the first BBQ of the season 🥩. I brought along my first Hakudakesen (🍶). Mr. Jive gave it to me 😆. It was a bottle I wanted to try since it always looked so good on Kiri-ban! Thank you so much, Gyve-san 🙇. It has a gentle acidity and rice flavor and gently disappears ❗It is fresh but has a calm and mature feeling 👍"crisp, fluffy, and smooth" is a comfortable way to use the calculation 😋. Gybe, it is delicious! I really appreciate it 🙏.

This is the third pole run 🤪2025 for the record this year alone. Pears before! but once I learned to describe it as green apple, it started to feel more and more like that 😂 and the fresh sauvignon blanc aroma. Is the aroma a little milder this year? It's got a nice, tight gasiness, a clean sweetness, a refreshing acidity, a mellow umami that spreads out and finishes with a bit of bitterness! One of the best sake brands in Fukui! One of the best sake that makes me glad I came to Fukui! Summer sake is out... but it's just barely spring, isn't it? 🤣 It has a malty but elegant aroma similar to Hakuneri (Hakugakusen Jungin)! After the necessary sweetness, the sweet, sour, and bitter flavors flow like a clear stream with a beautiful effervescence! It's the kind of flavor that makes you want to drink it in gulps! This elegance...Good Echizen quailty..... I'm sure you like Hakugakusen's raw sake! I used to avoid Hakugakuzen's low alcohol seasonal sake because of its low alcohol content, but it's still delicious 🧐.
