It's called Rokunozo, which means "six farmers' breweries", and they seem to be very particular about their brewing, so it has the feeling of being a traditional sake brewery, with a complex aroma.
It's very tasty, but the alcohol is still a little strong.
But it still has a strong alcohol taste.

This is a comparison of the Sanchi Roku Nojo sake, which I had carefully stored to open in this month, my birthday month. This sake is made with the brewery's six specialties: rice from the Kikuchi River basin in Kumamoto Prefecture, cultivated without pesticides or fertilizers, sake brewed from a traditional sake brewery, no yeast added, and brewed in wooden vats. The Yamada-Nishiki is more fruity, while the Hozu has a profound rice flavor. The effervescence is pleasant!
It is not easy to purchase sake from Kyushu here. My daughter drove an hour to take me to a sake shop in the northern part of the prefecture. I was nervous about opening the bottle, but it ended with a small sound without the contents overflowing. I felt a slight effervescent shriek. It had a sweet and sour taste of green apple, but the sharpness was sharp. It may have a bitter taste. It seemed to go well with meat dishes. I was told that the taste changes on the second day, so I left some for fun.
Sundo Ni Nozomi Yamadanishiki and Brownie.
The light acidity and gassiness wash out the sweetness of the chocolate nicely.

Following on from the recent 2023, here is a bottle of Hozasu Roku Nozomi that we obtained at the Sansho Shinen. The label design has been slightly changed this season, and the character for "Riku" can be seen in the microorganisms!
The nose has a strong cedar nuance derived from the wooden vat behind the banana and pineapple.
In the mouth, the texture is thick and fresh gasses stimulate the throat pleasantly. The taste is accompanied by a full-bodied sweetness, and a wild flavor spreads out. The wine is complex yet harmonious, with an exquisite balance. The aftertaste is even more bitter than that of 2023, and finishes crisp and clean. It is the best Hozu yet!

Compared to Kako, it seems quite refreshing.
The aroma was quite strong, so I thought it would be suitable for many meals compared to Kako, and would be suitable for all people. I think it would be suitable for all people.
It's not overly sweet and umami, but you can also taste the acidity and bitterness.
However, Rokunozo is expensive... you may not have to buy it by force...
I was so shocked when I drank Yamadanishiki Gononozo at a restaurant that I had been looking all over for it.

It has a gorgeous aroma and acidity with a full sense of the sake's origins.
I didn't feel it so much when I had Yamadanishiki, but it also feels similar to Shinmasa's No.6.
In any case, it is very tasty.

It's indescribably complex and you can taste a lot of different tastes, which I really like ✨.
