It's the day of the start of November after one of the most difficult days of the vacation season, and before you know it, there are only two months left of the year 😅.
It was more of a hassle than a challenge, but I finished it professionally, so let's have a drink 🍶.
Shinjo Junmai Shu Neo-Classic Nao Kumi Nama Shu
I got it when I went for a drive in Gifu the other day!
I had been curious about this sake from Ibaraki, which Manachie and Aladdin had been drinking for a while.

It has a slightly matured pear-like aroma. The aroma is like a pear, and the soft umami and fruity aroma that flows smoothly through the mouth and nose, followed by a lingering fresh bitterness.

A clean aroma, a smooth taste, and a unique aroma that flows smoothly through the nose, followed by a lingering fresh bitterness.
What is this? The balance that I have never experienced before, the smooth and fruity flavor, the fruity aroma and the lingering bitterness, the changes are quite drastic, but it's a wonder that it's all in one sake.
I served it with kimchi motsu nabe and bonito tataki.
The umami part goes well with it, but it leaves a bitter taste, so it would be interesting if you try it with other dishes 🤔.
