We had this at a kappo izakaya (Japanese-style restaurant) in front of Fukui Station on our way to Eiheiji Temple. It is said to be a limited edition completely made-to-order by the restaurant. It was refreshingly dry and went well with their specialty, grilled mackerel on the beach.
Honami is a 16% alcohol, unadulterated, undiluted sake.
It is made from Sakahomare produced in Fukui Prefecture and uses the same in-house yeast as that used in the Daiginjyo "Gin no Shizuku," which won the Gold Prize at the R5 National New Sake Competition, and has a refined finish that takes advantage of Sakahomare's unique sweetness and flavor.
It is a rare type of Echizen-misaki with a gorgeous aroma.
Sweet and gorgeous aroma 🎵
Soft and full of flavor 😋.
Slightly acidic aftertaste ✨.
Clean aftertaste 👍️
Only a few bottles per year 🍶, a rare one.
The price was also humungous 😲😲😲😲😲.
Echizen Cape for the first time in my life. In memory of Mr. Noodle Sake King who has gone home.
The aroma is good. It's gentle, refreshing, easy to drink, and you can get drunk easily.
It was so delicious that I recommend it.
February Tasting at Icoma Sake Shop ④.
Echizen Cape Ihyakumangoku
I first drank it at room temperature, which was fine enough for me personally, but when I heated it up, I felt like I could drink it forever and ever 🤣.
It's like an all-rounder that can be drunk at any temperature!
In the mouth, the sweetness spreads immediately followed by a sudsy alcohol sensation.
The taste is rough and fresh with a touch of elegance.
Despite the high alcohol content and strength of the sake, it is easy to keep drinking.
It's Cat Day, but I haven't prepared any particular cat labels or anything 😹.
I've been wanting to drink a draft version of this sake since the fire-aged one I had before was so good.
I bought it at Ikoma together with the tobin-tori.
It is fresh, fruity and delicious with a strong umami flavor. The higher the temperature, the sweeter it tastes.
Good evening Mr. Noodles 🌃
I've always wanted to try this sake since Mr. Noodle said it tasted good raw before😃.
I would like to try the plum yeast sake next 🤔.
I went to buy it as soon as I saw it was in stock on Icoma-san's SNS 😁.
It has a little color.
It has a slightly ripe taste and a beautiful umami.
Sake that is easy to drink with a good balance of sweetness and spiciness while being a little refreshing.
It feels refreshing but has a strong umami.
The cost is great, at around 1,000 yen for a tobin 😳.
Fukui Pref. Yoshida-gun. Tanabe Sake Brewery Co.
Echizenmisaki, tank pressing, junmai, revived rice, Kutouryuu, hi-ire, bottle enclosure, 2023BY.
It is very cold today.
First, I had only one cup of cold sake.
The color is a clear yellow with a gentle and sweet aroma.
It flows smoothly on the palate, with a rich umami that spreads gradually and an elegant, fine sweetness. As I expected when I tasted it, it is very well-balanced and to my liking. When the temperature rises a little, lactic acidity can also be felt.
The aftertaste is moderately sharp and spicy, with a slight bitterness and pungency lingering in the aftertaste.
Next, heated sake.
The aroma is the same as that of the cold sake, but milder. The sweetness and umami are not too assertive, but the dignified bitterness and sharp pungency spread gradually, stimulating the tongue. There is a citrusy bitterness in the aftertaste.
When lukewarm, the bitterness is still present, but the bitterness is in tune with the acidity, mellowing out the spiciness and making it delicious. I prefer it lukewarm to cold.
Heating sake is too deep...

Echizen tasted sake from Eiheiji Town.
We received this sake as a gift in return for our hometown tax payment.
The balance of sweetness and umami was pleasant, and the sake was a delight to sip.
It was a truly delicious sake with a beautiful harmony.
