Aromas of muscat, green apple, nuts, and chocolate 😂. The mouthfeel is like water, pure and clean, with the umami of rice and the aroma of koji, it feels thick, but the aftertaste is refreshingly sour and bitter, leaving a lingering aftertaste. Hmmm...yummy😳! Every time I drink it, a different taste comes out, but it's always delicious. 😂😂😂😂

Bought this sake on a trip to Fukui. There was a lineup of junmai, junmai ginjo, and junmai daiginjo, and this was recommended to me. I liked the aroma and the unexpected acidity when cold, and thought it might be too acidic when heated, but it turned out to be the best when cooled. A good sake that makes you want to eat snacks. The staff at the store was very friendly and helpful. 770 including tax (300ml)

Sake Katsudo at Japanese Sake Bar Emmi (2) After "Natsumushi", I had to try this one as well, so I chose this one 🍶. Hakugakusen Junmai Ginjo Umimatsu The aroma is more mild and refreshing than Natsumushi, the taste is gentle, the acidity is more robust than Natsumushi, and it finishes with a sour aftertaste and a bitter taste at the back of the throat. We were able to compare the Hakugakusen summer sake, which we have not been able to do every year 🥰.

I will digest it little by little. ✨️ Continuing from last time, I went back to Fukui from Kanazawa and went to one more restaurant 🚶. I went to "Japanese Sake BAR Emmi" where you can drink all the made-in-Japan sake you want for a fixed price and unlimited time! First of all, I chose this one because I hadn't had it this season! Hakugakusen Junmai Ginjo Natsumushi Nama Shu! The aroma is a little refreshing with a summery flavor, and the mouthfeel is clean and tart with a refreshing aftertaste. [I had it in a glass supervised by Hakugakusen, and I wanted to have it to capture the nuance of the aroma, but it's a bit expensive, so I'm not sure what to do 🤔.

I drank it outside before opening the bottle at home 😅. I bought a bottle because I really liked the previous summer sake "Natsumushi", but as I felt when I drank it outside, it left a little bit of sweetness, so even though they are summer sake from the same brewery, they are quite different 🤣. It was also a good experience to feel the difference of summer sake from the same brewery 😁.

The second cup is Hakugaku Sen. This one is a straight, straight-forward, light, dry sake from the middle of the line 🙆‍♂️ I have the impression that there are many light and dry sake in Fukui, even in Hokuriku. Except for Mai-bijin.

Reminiscences of Drinking in the Neighboring City of Sabae (2) [After leaving Tenjikiya, I moved on to Jizukura, which I had heard had a great selection of sake. It was a humid night and we were sweating just by walking a little, but we managed to get there, only to be turned down by the owner for leaving early. So instead, I went to Sou, a restaurant I had been curious about in front of the station. The restaurant is a stylish dining bar with a bright wood-grain atmosphere, and I saw many groups of women only. Well, I looked over the menu to see what I could order, and decided to order "Szechuan style Mabo-dofu rice" from the Chinese dishes they are putting a lot of effort into, because I thought I wanted something drunk to end the meal. I looked at the sake list and found a comment that it goes well with rice, so I had to give it a try 🤣. As the name "Szechuan style mapo" suggests, it is spicy, but the sweetness is balanced by the spiciness due to the sweet shiitake mushrooms in it. This time, the dish is called "Bai Gak Xinhong X Bean Curd Bean Curd Bean Curd Bean Paste" 🥰.
