When I opened the bottle, the liquid level was sizzling, and after opening and closing the bottle twice, the bottle was safely opened. The aroma is a bit sour, like Senkyoku. When you drink it, it is dry with a touch of sourness, acidity, and rice. It is quite light, but you can feel its richness. It is a comfortable wine that makes you want to drink it, and it lands right where you want it. The next day, the supernatant is light, acidic, but the rice atmosphere is fluffy. When mixed, the rice tastes richer and tastier. I like it better when mixed. At the end of the day, I think I can feel the wood, which I couldn't tell at first... it feels more like a wooden vat than at first? Overall, is it similar to 0.0 Dobrok? I thought it was, but I think it's quite different... my memory is what it is... this one is a little less sweet and feels relatively dry with a fluffy cooked rice feel. I'm looking forward to this year's Sengoku, which recently returned to Edo.

When I peeled off the metal cover, there was a yellowish sticky ingredient around the lid...had it been stored too long? I opened the bottle with a sense of excitement. (And it was as hard to open as the Purple Space.) The aroma is soy sauce...! When you take a sip, you can feel the bubbles, the soy sauce, and the burnt caramel-like aroma. The mouthfeel is sweet and...what is it...sweet, like mirin (sweet sake) or mitarashi (sweet sake). But the taste is surprisingly quick. It's like a "shuwashuwa, amajoishii ichisshuhu"! It's like that...(?) It's a little too strong because it is soy sauce based. Because it is soy sauce-based, it goes very well with foods that have a slightly strong soy sauce flavor. Is it originally this kind of flavor, or did we let it sit too long? The next day, when I drank the supernatant, I felt less soy sauce than the day before. The next day, I drank the supernatant and found it to be less soy saucey than the day before, with a savory but sour taste. When mixed, the mild soy sauce and rice flavor increases. When heated, it tastes like rice and sweet sake, but not as sweet as when chilled. As it cools, the sharpness improves. Furthermore, the next day, it becomes less soy-saucey. It was Ryoma Sakamoto's birthday, so I opened a bottle of this sake. (I remembered it in the morning of the day and bought a bottle on the way home, thinking that it was a Tosa sake. ㊙️) The aroma is more fruity than I imagined. A little sourness. It is quite faint. When you drink it, the umami of the rice comes gradually, but it cuts off before it spreads too much. This is a nice dry sake 🍶 It is a classic dry sake for when you want a dry sake. I think I would like to pair it with bonito. It has no strange sweetness, so you can drink it with Japanese food for a long time. It was a sake that I enjoyed deeply. By the way, I was looking up Sakamoto Ryoma while drinking this sake, and found out that he died on the same day, November 15. (Both are on the lunar calendar).

Is it sweet? It looks delicious and I'm curious... but what if I don't like it... yeah, buy it! So I bought it. The aroma is fruity, sour, rice, and also some young peach flavor. When you drink it, a little chili, cotton candy-like sweetness hits you for a moment, but it doesn't linger, and it finishes with a soft umami and a crisp acidity. The taste is definitely sweet, but it is not sticky, and it has a moister flavor (?) that I feel I am not good at. I can't explain it because I don't have the vocabulary...), and I can drink it easily. It has a clean aftertaste and goes down your throat without any stickiness. It was so good that I couldn't help but go on to the next cup.

I opened a new bottle of sake and now it's back to summer again, going back and forth between seasons 🎆. I decided to go through with this one because I was buying too much, but after a while I saw it in the fridge at the liquor store...so I ended up buying this one. The aroma is slightly citrusy and sour. It's Sentori. When you sip it, you can feel a little bit of a sourness with a slight lemon-like bitterness, and it lingers on the side of your tongue. It has a delicious flavor, but there is no sticking point, and you can drink it easily. It is a delicious sake that can be drunk in large gulps due to its crisp acidity, or rolled around on the tongue to enjoy its gradual umami.

I decided to start my new sake with Yokoyama 🍶. The aroma is slightly rummy and acidic. When you drink it, it has a fresh, chiri-chiri-chiri-shuwaku mouthfeel with the delicious taste of rice spreading through the mouth, and finally, a slight sweetness that gradually tightens up. Delicious! It is not so hot as to be super spicy, but not so hot that you can clearly feel the sweetness on your tongue. There is a citrus acidity and a juicy muscat-like flavor. As the temperature rises, there is a bitterness at the end? It has a fizzy and light mouthfeel, but it has a robust, or rather rich, juicy flavor that is typical of nama-zake, so it goes surprisingly well with oil-based meals. Even after a few days, it is still fresh sake? Even after a few days, it's still good because it's a new sake, and even if it doesn't go all shwashy, the gas is still well dissolved. Is it sweet? It has a subtle hint of rummy gas, and the acidity tightens it up. It was a delicious sake with a strong flavor that made me want to drink the next one!

Suddenly I wanted to drink the sweet and tasty type, so I bought Denshogiku on impulse. The aroma is sweet and fruity. When you take a sip, you feel a fresh chilli and a rich umami catch. I split it over several days, but I think it rounds out after a few days and has a milder, more refreshing aftertaste overall. It was a dinner party at a relative's house, so I opened the bottle of the one I brought (or rather, the one I had originally evacuated to the relative's house in terms of refrigerator capacity). After all this time, the label looks like stained glass, a beautiful summer sake from Jiran 🍶. Aroma is slightly sour? I don't think so. It has a sweet, slightly carbonated taste with a slight sourness and a light bitterness that gives it a grapefruit 🍋‍🟩 feel. The official description says it is like a sports drink, so you can gobble it up. It is light and refreshing like white malted rice! After a few days, it mellows out, but it doesn't get much sweeter. It's more like a grapefruit with acidity and a bit of bitterness. Although it has some flavor, it is quite light in the mouthfeel, so it was a perfect match when served with a light, acidic meal rather than as a greasiness cutter. This is certainly a sake I would like to drink in the summer.

I'll open the one I've had laying around since last year (already got this year's or not...). When I twisted the cap, the lees started bobbing around and it took me a few minutes to open it, it's almost a year old but quite healthy 🫧. The aroma is sour and a touch of fluffy sweetness? Firmly schwaggy when included! The wine has the same kind of sapidity and juicy wineiness as the Cotton Candy of the same brand. It also has a floral note with a hint of honey like flowers in the back, and although it is cloudy, it is more floral than ricey. Since it was late in the day, I thought it would be light, but it was so sweet, sour, and juicy with a strong flavor that it killed me in the blink of an eye. Well, it is 9 degrees and 500ml, so it is in the category of light!

Opened this bottle on Halloween👻 night. The aroma is slightly sour, malted rice, and apple? Although it is only 16%, and you can feel more alcohol than other Seasonal Akabu for a moment, the clarity through the throat is still there as usual, and on the contrary, it is amazing how smooth it is at 16%. After a few days, the taste becomes safe to drink while thinking, "It's Akabu. It is a sour slurp and the spicy taste is not so noticeable. The sourness that slowly creeps up on the side of the tongue is delicious, and it's so refreshingly sweet and acidic that it makes you want to drink the next one. It was a delicious sake with the excitement of Halloween and the stability of an Akabu sake 🎃.

I bought it immediately when I saw it because it looked so delicious in the reviews of MIZUCHI🐍 who were also eating it at Sake-no-wa! The aroma is sour, alcoholic, and a little apple? However, compared to a white wine, it has a pleasantly refreshing taste, without the alcoholic acidity. (I looked closely at the expiration date...well, if you heat it up, it should be good to go!) After a few days, including only the top layer, it is sweeter. Apples and a candy-like taste? The fizziness is still there, and a little bitterness at the end. When mixed, it mellows out and the rice milky taste increases. The taste is robust and refreshing, yet satisfying. The end is sweet and rich like cotton candy. I think I prefer it when it is freshly opened and apple-dry, but it was a delicious sake that I could enjoy changing its flavor.

I opened a bottle of a souvenir I bought in Hawaii. This one is a so-called craft saké of lilikoi (passion fruit). I had heard that they had built a brewery relatively close to Waikiki and wanted to go there, but unfortunately, the brewery has moved to the Big Island of Hawaii in 2022, leaving only the store. The aroma was sour and koji-like, with a hint of Japanese sake, and a soft tropical breeze! It is not as fruity as one might imagine. When you taste it, it has a light, acidic flavor, but it is not a citrusy, sour sake either. It has a refreshing sweetness and acidity with a clean aftertaste, but it also has more rice than expected, making it more like a sake. It has a tropical flavor, but I thought it would be more like a juice. It goes well with vinegar-based foods such as salads. The volume is blinding, but the end of the bottle has more lilikoi than the beginning. The flavor is refreshingly tropical and astringent when you bite into the seeds, and the sake flavor is light. I enjoyed it with thoughts such as, "I want to go back soon. By the way, the store that handles Junmai Ginjo...which part of Junmai is Junmai? I thought, "What part of Junmai is Junmai? If I have a chance, I would like to try the Junmai one.

With a sideways glance at the summer sake still in the fridge (is it still there?), I open a bottle of hiyaoroshi. The aroma is typical of the ROMAN series, with a rummy and acidic flavor, but not strong. When you drink it, you can feel the slightly chili-chili-stingy taste of ramune, but the full-bodied sourness comes in slowly. It is also sweet but not sticky, refreshing and pleasant. This is a delicious Mimuro Cedar! This is the feeling of drinking a delicious Mimuro cedar. Even though it is hiya oroshi, it has a fresh feeling and a clean aftertaste. Even after opening the bottle, the taste remains stable. The umami, acidity, and sweetness are well balanced, and while it has a full flavor, the clear mouthfeel makes it easy to drink for a long time. It was finished long after the bottle was opened, but the stable Mimuro cedar flavor made it delicious all the way through.

I wanted to drink it after reading your review, but I saved it... so I decided to compare Mikumari with each other. The first one is the prototype that was released first. The aroma is a cage of alcohol and koji malt? The aroma is a bit like a cage of alcohol and malted rice. It is thin. When you drink it, the mouthfeel is smooth and slightly carbonated. It has a slight sweetness and a light umami flavor, and the acidity and bitterness make it dry. I drank the rest of the bottle, sobbing with anxiety about how it would taste. The sushwashiness was almost gone, but the rice aroma, light umami, and light acidity made it still easy to drink. It is a pity that I could not taste the changes between sips, but I enjoyed it to the end. The difference between the two is not noticeable to my taste buds unless I drink them at the same time...but when I drank them at the same time, they were definitely a little different and interesting.
