The aroma is faintly grapefruit.
On the palate, lemon squash 🍋 not so much bubbles, slightly carbonated. But the chili freshness is perceptible. It's a lightness that goes on without thinking. It's so good, I could drink it forever.
When mixed, it doesn't add another flavor, but it does add more rice. The rice is not the sweetness of cooked rice, but rather the simplicity of rice flour.
It is good to mix it to add complexity, flavor and sweetness, but it is also good to nigori, which gives a refreshing taste. I am also attracted by the light and mild aroma, which is just like a grain of rice.
Combined with the acidity, lightness, and freshness of the liquid itself, the taste is clear and softly cohesive.
As usual, Akabu is a sake that is always available before you know it. It's terrifying.
