I bought this one because last year's Infinity (beer yeast noble brew) was so good. The aroma is muscat, pear, and lemon soda too? When you drink it, it's a pear soda with a chili-swirling, thick mouthfeel 🍐I don't think it has that much acidity. It also has a sweet honey feeling, but the soft acidity and fizz make it a refreshing drink. As the official recommendation, it is perfect when paired with Chinese food. It is also good with meat and miso 👍. Pon even after a day! and open the bottle. From the formula here too, cheesecake is still very good with it. In a conversation with Sakerabo about pairing the unclouded normal Reborn with vanilla ice cream with olive oil 🫒 and pepper 👀. I thought cloudy would work too, and since I didn't have vanilla ice cream, I diverted the cheesecake in front of me and was amazed! It goes well with it! First of all, I thought the olive oil would make the cheesecake blue, but it's so fruity ✨ wow. The peppers are a nice accent. I had another sake with pears the other day and it was delicious, pairing is fun.

As usual, I'm not sure when to open it. I opened it on a day when there was an Italian menu to look at. The nose is wine-like acidity, muscat. When you drink it, it is chili chili with soft rice sweetness and wine-like acidity. It is sweet and delicious, but light and easy to drink. I thought it would become sweeter with the passage of time, but it turned out to be more refreshing. While it is rich and sweet, it has a wine-like acidity that keeps it from becoming too deep. Delicious with cheese. After a week, it suddenly became a juicy Muscat! At first, the sweetness seems to deepen, but then it takes a sharp turn and breaks off with the sweet-sourness of the muscat. It is also delicious! I could drink it slowly and enjoy the taste change 🍶.

夏酒…だけどいつ飲んでも美味しいから、今飲んでもいいですよね。 香りは、ラムネ、マスカット、グレープフルーツ。 含むと、チリチリ！で、香りの印象のままの透明な液体がスーっと喉に落ちていく。後味にほんのりハーブやミント的な清涼感🧊これが夏要素かな？ 去年も飲んだけどやっぱりあべの夏酒好きだなー！いくらでも飲める〜〜〜。 日が経っても美味しい。穏やかにまとまってはくるものの、甘酸スッキリ＋清涼ハーブ🌿の軽快感はそのまま。 秋酒の合間だとよりライトに感じて、味わいで季節感を出すのってすごいなーと思いながらいただいた🍶

I was curious about this one because it was a low alcohol from Nishida Sake Brewery. I happened to come across it and bought it. The aroma is softly sweet. It smells like white grapes. When you drink it, it's just a little bit thick, but clear ✨. The white grape-like sweetness comes, but the aftertaste is not unpleasant as it ends nicely and cleanly. After a few days, the aroma has an apple-like atmosphere like that of Tazake. The mouthfeel is also like a light rice wine. The low alcohol is appreciated and it is sweet but clear and delicious. In terms of flavor, I think I like it better when the umami is on top of the flavor like usual Tasake...?

It's Hello World's 4th 🌏. I was saving it for safekeeping, but suddenly I wanted to drink it, so I opened it. The aroma is citrusy with a hint of cider. When you drink it, you get a happy chili shuwa~♬! It's sweet and sour like grapefruit or lime, the kind that makes the sides of your tongue squeak! Delicious as expected. I'm thankful for Sentori because I drink it when I'm in the mood for Sentori and it never misses. A little more acidic than the 3rd? Maybe it's because I left it out? It is a great wine to drink on its own, but it is also perfect with tomatoes, cheese, and fried food.

I wanted to drink Kibotsuru Hiyoroshi🍂. It seems that the specs are still different from the Meimon Sake Kai ver. The aroma is not so strong? When you drink it, it's like a chili, citrus-flavored, sugar-free, slightly carbonated beer. Personally, I don't dislike it, but I think it would be better to raise the temperature a little. When I raised the temperature, I got a little grapefruit-like sweetness. Overall, dry. Maybe unusual in the image of hiyaoroshi. But I like it! I can drink it easily. It's refreshing, but not too sharp or strong, but dry. It has a slight citrus sweetness and umami. It's a delicious sake to savor as you chew the rice 🍶 It would be great with kabosu-squeezed autumn fish👍.

I enjoyed the summer sake of Azuma Tsuru that I drank before, so I also enjoyed the autumn 🍂 sake! The aroma is rummy. When you drink it, it is surprisingly chili and fresh. The umami flavor soaks in, the sweetness spreads, and then the acidity comes in and tightens things up. Wow, it is delicious. It is refreshing, but has a lot of breadth. The sake is warmed up, and the warmth of the sake is very refreshing! I had to try heating it up as well. Heating up sake: ♨️ When it's lukewarm, it's softly sweet and tastes sour. When it's hot, it's a bit dry, but the sweetness disappears and it becomes crispy. I like it lukewarm! Overall, it is sweet and acidic, but it is also fresh, moist, and has the flavor of an autumn sake. I enjoyed it with a meal.

I'm the type of person who likes to eat my favorite foods in the second half of the year, so I left the Yamae Nishiki🌾 out of the two Yamasan 2-year aged varieties. If I have fun, I'll open it. The aroma is rummy, grapefruit, and softly sweet malted rice? Chilli shuwa when you include it! The rice is sweet and rich, with a sizzling acidity that ends with a slight bitterness. Mellow, calm, roundness and chili freshness coexist...amazing! Delicious even after a few days. Fluffy sweetness and light bitterness - clean and tight. Come to think of it, it may not have the same Mori🌳 feeling (?) that I always get from Yamazan's Yamae Nishiki. I always feel that the forest🌳feeling(?) that I always feel in Yamazan🌳 Nishiki is not so much. The unaged version is the same, but the Hitogokochi is a bit more sharp and bitter. Yamae Nishiki is softer and fluffier and sweeter. Both were delicious✨.

The aroma is sweet with malted rice and rice. And grapefruit? When the supernatant is included, it is puchi-puchi! It is quite gassy. It is full of the sweetness and umami of koji, but the bubbles give it a clean aftertaste and it is not sticky. When mixed, the creamy rice sweetness spreads softly. After a few days, the gassy sensation weakens, but the mild sweetness of the rice still remains. It is not that sweet, but it is sweet, mellow, and delicious. It also has a sharpness that makes me go for it, but it's 18 degrees, so it's a dangerous one: ⚠️ I wanted to drink it with hot pot like Hiro, but I wanted to drink it with hot curry. Spicy food and nigori go well together! Next time I'll have hot pot with nigori.

New product planned by La Jomon💪. The rice is Rikuwa No. 132 from the same producer as "Screaming in the Dirt". Is this Mr. Nieda's first participation? I opened the bottle looking forward to it. The aroma was white grape, grapefruit? When you drink it, it's chili, very clear on the palate✨I also sense light red grapes. The red grapes are not as sweet and astringent as the black grapes, but more acidic. It's kind of like wine... 🍷. I imagined it would be sweeter, but the acidity was so good that I couldn't stop drinking 🍶. The third one is the sparkling sake that everyone is drinking 🍶. The aroma is sweet and sour. When you take a sip, it's like a shwash! A stomach-turning type of gassy feeling 🫧The flavor is also light, sweet and sour! I wonder if it has a strong koji-like sourness. I think 11 degrees is quite a lot for this flavor. It's available at convenience stores and might be good for when you want a quick sparkle? But I think I need to reduce the stock of bottles in the fridge first.

The aroma is softly sweet, typical of Akabu, and a little citrusy. When you drink it, the mouthfeel is clear and the fluffy sweetness of rice, umami, and acidity spread slowly. The sweetness is just right for this time of year when the weather is gradually getting cooler! A delicious sake that can be drunk smoothly and comfortably 🍶. I've been seeing a lot of posts about ramen lately (and for a while now), and I really wanted to try some ramen.... The chashu pork is thin and tender and the best 🍜✨.

It was a bit expensive, but I bought it just to try it 🌳. The aroma is soft sweet rice with a hint of fruitiness? When you drink it, you can feel a little chilli and a great sense of transparency! The sweet and sour flavor and acidity that spreads quickly and comfortably. This is the kind of wine you can easily drink.... Only because it is expensive...? It's worth it. The cost-effectiveness ratio is not good, but it is good because it tastes good! I think I like it better than the Silver and Indigo I had before. Overall, it is just so fresh and clear. I think I'll be tempted to drink this clear and tasty acidity, though maybe not when I'm in the mood for a very strong drink. ....while consulting with my wallet 👛.

The aroma is sweet rice? A little bit of classicism. There is also a sourness like tangerines 🍊. I paired it with some pears and some Shine Muscat that I had at home at that time. It's delicious, and it's good on its own, but I definitely prefer to pair it with fruit! Pears especially go well 🍐 Japanese style of pears? The mild but juicy, low-acid sweetness is already perfect! Malo's mild sweetness and pear's freshness are too synergistic. Repetition of sweetness 🔁. At first I thought it would be a little sweet, so I thought it would be like a little sip, but I'd drink this in a heartbeat. After a few days, it becomes even clearer and smoother like fruity water. Pairing is really great. Pears, they went together so well 🍐.

I opened a bottle of 2 year old Yamazan that I was looking forward to: ⛰️ We started with Hitokochiki. The aroma is citrus, white grape type with a clean acidity. When you drink it, it is quite chili shuwa🫧 full and clear with a hint of grapefruit and forest! The last is a bit bitter and cuts off quickly. It is sharp, yet light and mellow. The sweetness of the rice spreads softly. Wow, it's delicious! I wonder if it becomes more grape-like and a little sweeter as the temperature rises. I like it kinky. After a few days, the aroma becomes fluffy and milky. When you drink it, the chili is alive and well, with a forest aroma of juicy sweetness and deliciousness, and a light bitterness. It's amazing how it establishes all this sweetness, bitterness, and acidity. It is not heavy in spite of its maturity. It's round, yet still light ✨. The slight tanginess of the alcohol is a nice accent. Fruity and clear rice 🌾. Clear and crisp as usual ✂️ Hitogochachi is usually a bit more sharp and bitter than Yamazan, but when aged, it becomes smoother and mellower. It was delicious...I hope to drink Yamae Nishiki soon.

They said it was a renewal of what they had been serving as "Mr. Apple Born in a Wooden Barrel" until last year. The aroma is faintly citrus and maybe some apple? When you include it, it is faintly chili. The first thing you notice is a simple sourness, and as you roll it over, you can feel the fullness of the flavor on the side of your tongue! Slightly rice, apple-like acidity, and finally, bitterness to finish. The label on the back of the bottle says that the acidity tastes best when chilled, so it may be a little bitter when it is close to room temperature. It is not that bad. However, I like it better chilled! It was delicious with salads and vinegar-based meals. 🍽️

Wakaizumi, which was served by Wakata and looked delicious: ⛲️ I went to buy it as soon as I found a store near me that carried it. The aroma is grapefruit and rumney. When I take a sip, it tastes sweet...? But the sourness is also assertive...strange! Is the aroma sweet when you include it? And yet, the taste itself is sharply acidic. It ends with bitterness. As the day goes on, it gradually becomes milder and mellower. It has a light, refreshing sweet and sour taste with a clean, dry finish. This is the kind of wine that makes you want to drink more and more of it! The liquor store I bought it from was one I don't usually go to, but upon closer inspection, I found that they carry a brand I've never had before, which was exciting! It's fun to be connected in this way ✨.

Rumored to be a high-cost main brew 🍶. The aroma is muscat, citrus, and maybe some rumminess. Overall, refreshing. On the palate, I get a little chilli grapefruit. The sweetness of the rice comes in softly and tightens up. Delicious...I really like this light and balanced taste! I could drink it all the time. Wakanami's Oumachi Wakasama and Dragonfly series were also delicious, so I would like to pursue them if the timing is right. Not related to sake, but I've recently become addicted to "Omasari" peanuts (I'm sure they are familiar to those in Chiba, but boiled in salt they are so delicious I think I'll eat them until my nose bleeds.... It is also perfect as a snack! If you haven't tried it, you should 🙌!

As a Mimuro cedar lover, I wanted to try it Imanishi💪. The aroma is rummy, sour and softly rice sweet. I feel the wind of Mimuro cedar... When you drink it, it's chili, soft and sweet, but with great clarity! Delicious the next day too. Chilli rhumune and rice transparency ✨And the acidity that squeezes in your throat is good too. Sweet but mild and moderately puffy, with a clear mouthfeel and no clinginess. It has a nice crisp aftertaste and is refreshing overall. It was a delicious sake that I could easily have another one on its own or with a meal 🍶.

Aroma, acidity, maybe a little alcohol? Very chili when you include it! I've put it down quite a bit and it's amazing. The soft grapefruit and rice sweetness comes, but is quickly swept away by the chili and clear mouthfeel. It's like being treated with a light bitter acidity. Wow, I love this. Delicious! Even after a few days, the impression is still there. It is packed with acidity. But it is well-balanced, modern and light. Its subtle umami flavor is perfect for the autumn taste! The instruments are delicious, but I'm starting to wonder about the other Shizenkou wines as well.

I tasted it at a craft saké event and it was so good I brought it home 🍶. I've seen a little bit of Librom here and there, but this is the first time I've bought it 🎉. The aroma is totally passion fruit! Tropical 🏝️ with a fresh sweet and sour aroma. When you take a sip, it's like a juicy passion soda 🫧. What is this, just rice, rice malt, and passion fruit? No flavoring, no sugar...too good to be true. I think it tastes more lilikoi than Islander's Mystery Junmai (lilikoi in) that I bought in Hawaii last year... The Hawaiian one tasted more like sake and I could taste the astringency of the seeds, so it tasted fresher, while this one tastes like a delicious lilikoi soda that you can drink even if you don't like alcohol 🍹. It's a bit expensive, but I'd like to try other kinds of sodas as well.
