I bought it immediately when I saw it because it looked so delicious in the reviews of MIZUCHI🐍 who were also eating it at Sake-no-wa! The aroma is sour, alcoholic, and a little apple? On the palate, it was a slightly carbonated muscat-flavored lemon squash (?). And, oh, this is delicious! It is light, easy-drinking, white wine-like, and smooth. However, compared to a white wine, it has a pleasantly refreshing taste, without the alcoholic acidity. It has not only acidity, but also moderate sweetness and umami, and it is smooth without any stickiness. It was so good that you could drink it without thinking too much. I wonder if this is just a test brew. I hope I can drink it again.

Turn the cap and slowly open it as the liquid level slowly rises. The aroma is sour and apple. I couldn't get the supernatant because it got mixed up, but when I drank it, it still had a dense fruity apple flavor, and it was refreshing, light and dry. I wanted to pair it with a strong dish...so I ordered some stewed beef from Marusan Restaurant in Mito, which was recommended by Manachie-san, and it was perfect! Thank you very much 🙏. (I looked closely at the expiration date...well, if you heat it up, it should be good to go!) After a few days, including only the top layer, it is sweeter. Apples and a candy-like taste? The fizziness is still there, and a little bitterness at the end. When mixed, it mellows out and the rice milky taste increases. The taste is robust and refreshing, yet satisfying. The end is sweet and rich like cotton candy. I think I prefer it when it is freshly opened and apple-dry, but it was a delicious sake that I could enjoy changing its flavor.

I opened a bottle of a souvenir I bought in Hawaii. This one is a so-called craft saké of lilikoi (passion fruit). I had heard that they had built a brewery relatively close to Waikiki and wanted to go there, but unfortunately, the brewery has moved to the Big Island of Hawaii in 2022, leaving only the store. The aroma was sour and koji-like, with a hint of Japanese sake, and a soft tropical breeze! It is not as fruity as one might imagine. When you taste it, it has a light, acidic flavor, but it is not a citrusy, sour sake either. It has a refreshing sweetness and acidity with a clean aftertaste, but it also has more rice than expected, making it more like a sake. It has a tropical flavor, but I thought it would be more like a juice. It goes well with vinegar-based foods such as salads. The volume is blinding, but the end of the bottle has more lilikoi than the beginning. The flavor is refreshingly tropical and astringent when you bite into the seeds, and the sake flavor is light. I enjoyed it with thoughts such as, "I want to go back soon. By the way, the store that handles Junmai Ginjo...which part of Junmai is Junmai? I thought, "What part of Junmai is Junmai? If I have a chance, I would like to try the Junmai one.

With a sideways glance at the summer sake still in the fridge (is it still there?), I open a bottle of hiyaoroshi. The aroma is typical of the ROMAN series, with a rummy and acidic flavor, but not strong. When you drink it, you can feel the slightly chili-chili-stingy taste of ramune, but the full-bodied sourness comes in slowly. It is also sweet but not sticky, refreshing and pleasant. This is a delicious Mimuro Cedar! This is the feeling of drinking a delicious Mimuro cedar. Even though it is hiya oroshi, it has a fresh feeling and a clean aftertaste. Even after opening the bottle, the taste remains stable. The umami, acidity, and sweetness are well balanced, and while it has a full flavor, the clear mouthfeel makes it easy to drink for a long time. It was finished long after the bottle was opened, but the stable Mimuro cedar flavor made it delicious all the way through.

I wanted to drink it after reading your review, but I saved it... so I decided to compare Mikumari with each other. The first one is the prototype that was released first. The aroma is a cage of alcohol and koji malt? The aroma is a bit like a cage of alcohol and malted rice. It is thin. When you drink it, the mouthfeel is smooth and slightly carbonated. It has a slight sweetness and a light umami flavor, and the acidity and bitterness make it dry. I drank the rest of the bottle, sobbing with anxiety about how it would taste. The sushwashiness was almost gone, but the rice aroma, light umami, and light acidity made it still easy to drink. It is a pity that I could not taste the changes between sips, but I enjoyed it to the end. The difference between the two is not noticeable to my taste buds unless I drink them at the same time...but when I drank them at the same time, they were definitely a little different and interesting. When it comes to Mikotsuru, Yamae Nishiki, and active nigori, there is no way to avoid drinking it. The aroma is sweet? The aroma is sweet, with a hint of cotton candy. When you drink it, it has a surprisingly smooth texture on the tongue, but as the bottle opener warning tag says, it is very soft and smooth. It is typical of Shinshu sake (?). It has a forest-like richness. It is easy to drink even after a long time. It has a gradual umami flavor. It is not too peculiar and can be drunk easily. It seems to get a little sweeter as time goes by, but it has a bitter taste and is not sticky. It is also full-bodied. You can feel that you are drinking Mikotsuru! To be honest, I can't deny that I was attracted by the name... because it's an active nigori, and it's umma.... When the bottle was opened, there was a strong gas feeling, although it did not blow out! The aroma is of rice and koji, and it spreads softly. When you take a sip, it is just as sizzling as you would expect. The taste is neutral, in a good sense, without much variation. When the lees are mixed, the rice and acidity seem to increase. From what I hear, it is white malted rice, so I wonder if mixing it with that makes it a little more sour. I had a similar feeling when I got Shirofudo. It was like it came right in the middle of the flavor I wanted to drink when I was in the mood for active nigori, and it tasted just as good as the name implies.

We will be having sake from Ishikawa. It was the first liquor store I visited, and they told me that they keep their customers' sake and age it at room temperature in the store. I bought it from a place that has a relatively matured-oriented lineup. The aroma is sour and grape-like rice? When I sipped it, there was definitely a bit of grape, but it didn't spread to my nose as much as I had imagined, and it was smooth. The taste has a strong sweetness and umami of rice, the Junmai-shu-like flavor, and a nice sharpness at the end. Even when heated, the richness of the flavor can be felt and enjoyed.

I really wanted to drink it, so I went to a liquor store a little farther away to buy it. The aroma is sour, orangey citrus...and I guess apple? And then there's the rum. It's juicy apple 🍎 white yeast, but not too acidic, just right. It's a white malted rice, but it's not that acidic, it's just right. The fizz continues the next day🫧. If you don't mix it, it's apple? Orange? The flavor is a little sweet, and it tastes more sour when mixed. It's a refreshing rice and apple soda. I drink it without thinking...I've been making comments like this for a while now, but maybe it's better to drink summer sake that way. Modern Yamahai, which I purchased because Hello & Goodbye was so good. The aroma is a hint of... tangerine? Not too strong, but citrusy with a hint of sweetness. When you sip it, it's still mikan🍊, with a little bit of 🍊squashiness. Delicious! I can drink it in large gulps. I'm very grateful that it's 9 degrees (original). I can drink it after taking a bath. It tastes different, but it is almost like beer. But it is not too dry...not too thin, not too thick, just right and tasty. I wish they serve this kind of beer all year round. My impression is a bit thin... but anyway, it was a delicious sake that just kept on going and going 🍶.

Urasato looks something amazing from the label. Sankhia mazakemoto? Is it sweet? I opened the bottle after it was kumqued with an easy imagination. The aroma was light alcohol, grape? and sourness. CWS Modern super-harakuchi Junmai Daiginjyo light nigori raw The aroma is faintly rummy. When you drink it, it has a fine effervescence, but with a strong shwash. It still has the flavor of ramune, but it is not sweet, and the light bitterness and carbonation give it a nice sharpness. It has a pleasant dryness that is not too strong. It has a slight sweetness to it. It is exactly what I was expecting when I heard it was a modern super-dry beer, and the taste exceeds my expectations! It does not lean toward sweetness the next day, and its lightness is still there. When paired with fried foods, it's a bit like beer with a rummy bitter schwarz dryness. I could drink this forever. The fizz decreases with time, but you can still taste the citrus. There is a bit of bitterness and a grapefruitiness. Not too sweet, but not too tasty or bitter either, just dry enough that I enjoyed it all the way through, both during the meal and on its own.
