The aroma was of ripe red melon, mango, and other tropical fruits, with some graininess. The sweetness was more subdued than the Yamae-Nishiki Junmai-Ginjo we had last time, but the taste of the rice was more pronounced. The balance of acidity, umami, and bitterness is excellent. I haven't been stocking up lately so all I have is rare liquor. I'm releasing them because they can't help getting old. Gransta is not interesting because of all the standard sake. I like the Nihonbashi phone better.
Shinshu Kamerei after a long time. It was delicious and elegant. A perfect gem with a perfect balance of elegant, melon-like and gentle, with a sense of piquancy right after opening the bottle.
Ingredients Rice, Rice malt
Rice used: 100% Hitogochiki grown in Nagano Prefecture

Nagano is a treasure chest of local sake, and is famous for its delicious sake. I happened to have a chance to buy some this time. Now, let us begin!
The aroma is sweet, not fruity, but more like a chemical rummy aroma. But it is mild, so you can drink it calmly. The water is a little gassy and a little hard. It is also smooth and easy to drink. When you drink it, you can taste the sweetness of rumminess, but the gaseous and umami flavors that dance around the glass suppress the sweetness and marry the sweetness, so you can drink it lightly. The astringency and sharpness come later, making it more drinkable. This wine is certainly good to drink in the summer time. I highly recommend it as the next step after sweet and fruity. I've been on a 2 week alcohol abstinence recently due to a medical checkup 😭 and I've also been busy with work 🧳.
Today is the end of that, and I'm back to the sake life after a long absence 🍶, so today I chose the best sake in the fridge 💁.
I went to Nagano this year and bought a bottle of Shinshu Kamerei (aka Kin Kame🐢) from Okazaki Sake Brewery 🤔 I probably would have lost track of when to open it if I didn't open it today.
I opened the bottle immediately 🍶 and it was delicious 😋.
It has a juicy sweet umami taste and a slight gaseous sensation that is very delicious 😋I think Junmai Daiginjo has a strong umami taste, but it has a very elegant or clear taste that is very delicious 🤤.
Personally, I prefer this Kinkame to Ginkame 😚 I will go back next year to buy more 🚗.

Also, on a side note, I just bought a new sake fridge that I've been using for 4 years 🍶 It's a cooler box type with a larger size so it can be cooled without worrying about the outside temperature 🥶.

Fruity and beautiful aroma
A perfectly balanced sake with a pleasant sweetness and acidity that is expressed in a light body, just like a food sake.
The sweetness is a little stronger than the Jungin Hitogokotchi, which was quite refreshing.
It is different from the juicy taste of Miyamanishiki, including acidity and umami.
I can only say that this is a great sake for 1,400 yen plus tax nowadays!
Next time, I'll buy a bottle (if I can afford it).
