When you drink it, it's ooey-gooey, thick and moist, and sweet. The tangy acidity is rounded out by a hint of bitterness.
This is delicious!
The next day, it seems to be mellower and less bitter than yesterday.
I wonder if the bitterness comes out as the temperature rises, rather than the passage of time. I like it better when it is chilled because it has less bitterness and is clearer.
It is clear but has a moderate umami flavor, and is a delicious sake that can be enjoyed on its own or as an in-between-dinner drink.

Drank a bottle of Kamo Kanehide. It has a nice sweetness, umami, and a good acidity. 300ml is a great price for such a delicious wine. Yumachi and Hachikan Nishiki. With anago-meshi (rice with conger eel).

This special junmai is designed to finish at 13% alcohol by volume. It has a pleasant gaseous sensation that is pleasantly tingling in the mouth, and can be enjoyed lightly as if it were wine. It has a rich sweetness and umami, accented by a crisp acidity, making it an excellent match for meat dishes. It goes in refreshingly, and from the middle, the subtle swelling of sweetness gives it a slightly white wine-like taste. Adult Ramune!
It was getting chilly and I wanted some heated sake, so I went to a liquor store. I was attracted by the label, which looked like it would warm up the sake, so I bought it. I started with it at room temperature. It was clean, refreshing, and easy to drink. It is easy to drink, clean and refreshing, with a bit of bitterness and astringency afterwards. As the name suggests, it is easy to drink.
Next, I tried it lukewarm. The flavor of the rice comes out and it's nice and mild. There is a slight bitterness at the end, but not enough to be bothersome.
Next, we tried it topped up with warm sake. The rice flavor is still there, but the bitterness and astringency are gone. It can be served at any temperature. We had it with bonito tataki and wakasagi tempura. It was delicious.
