Kamo Kinshu Summer Jun Dry Junmai
The aroma is crisp and acidic.
The overall smell is subdued.
Anyway, it is spicy.
The spiciness comes with a bang at first, and the umami spreads gradually in the aftertaste.
The lingering aftertaste is very nice.
The label is cute and looks like Bokunatsu.
I bought it because of the striking summery label design featuring an iridocumulus cloud 😊.
When poured, it turns white with fine bubble bubbles 🫧.
Sweet limey aroma, gentle microbubbles in the mouth, soft flavor, refreshing bitterness in the mid-palate, sharp and dry in the finish 😋.
It is a slightly dangerous food wine that can be drunk with a quick gulp 🍶.
The pleasant gaseous taste and light mouthfeel make it easy to drink even in summer. It goes well with all kinds of food and is also cosmetically pleasing.
I asked for a clear dry sake, but since it had been open for a while, it was surprisingly mellow and had a strong aftertaste.
It is a delicious sake, but I would like to pair it with dishes that have a strong flavor.

It is a Junmai Daiginjyo that is only available at the Yamada Sake Brewery. Originally intended for blending and not for sale as a stand-alone product, this sake was never intended to see the light of day (Black), but because it was of such high quality (Beauty), it was specially bottled as a stand-alone product.
It is a one-time-only limited edition sake.
So I bought it.
It was easy to drink and delicious.

I am a Kamo Kinshu lover, but this is good...regrettably, I should have had it with a strong flavored dish with broth...smoked salmon would have gone well with it, but...!

The aroma is almost imperceptible. When you put it in your mouth, for some reason, even though it's not a draft sake, there is a tingling sensation on your tongue.
Once the stimulation subsides, I think it is a dry sake with a clean aftertaste.
