I bought Yodogawa-san's recommendation again. Soyomyo is generally my favorite brand. This time, it was the first Shibori-Ginjo Nama-shu. Personally, I thought it had a muscat-like aroma. The taste was dry and full of umami, and I felt it had a strong Soyojo flavor. It is perfect for New Year's dishes!

The aroma is a hint of sourness and rice🌾.
When you drink it, it has a smooth, watery mouthfeel, and you can taste the rice and acidity.
Oh, this is a nice dry sake!
It goes well with fatty sashimi, with both a synergistic effect of richness and a crisp, clean feeling that cuts right through.
I guess it's light among Souhyo's wines, but I don't think you can find 13 degrees Celsius with a more classic flavor...so I appreciate it.
I have heard (according to Kotaro's father) that many people from Tochigi Prefecture like Souhyo the best sake in the prefecture.
I don't know if this is true or not, but it definitely tasted good with Japanese food and dry moods. 🎖️

The refreshing acidity, moderate sweetness, not-too-flamboyant aroma, and the freshness of the freshly pressed sake are in perfect harmony.
I had an image of Souhyo as more rugged, but it was so well-balanced that it was a bit of a letdown.
No, it is delicious.
But it's too neatly put together, and I think it would be more memorable if it had a little more individuality.
Clear on the palate
There is no sense of junmai ginjo because there is no aftertaste at all.
Not sure if this is because it is an aroma bottle or a characteristic of the brand.
