☀️ Tokorozawa Sakura Town's "Sake Brewery Fest Made in Saitama 2025" 😁. The rice is said to be Gohyakumangoku 🌾. The rice is said to be Gohyakumangoku 🌾 It flows down the throat without any resistance and has a straightforward mouthfeel. It has a light, refreshing sweetness and a clean, astringent taste and a lingering ginjo aroma. It is an honorable type of sake 🤗. Tickets were 20 for 2,400 yen and the price was set as low as 1-3 per sake 🤩. It was a pretty good price 🉐, but I decided to go home here, as I thought it was indeed impossible to buy additional tickets to drink 😇.

Visit Tokorozawa Sakura Town in Kadokawa🌸 Sake breweries in Saitama Prefecture gather I went to the sake brewery festival 🍶. First of all, I wanted to try Koshu Umebayashi! I started with a special junmai, which is their most popular sake. It's delicious! Delicious! The pleasant mild sweetness of the rice was well utilized! It was a good salt 👍(only for Koshu Umebayashi lol)

National Sake Fair 2025 in Osaka ㉖ Saitama Prefecture booth ①. Sato Sake Brewery is located near Koshu Bairin, one of the three major plum groves in Kanto. The first female toji in Saitama Prefecture, Mariko Sato, the eldest daughter, assumed the position at the age of 26. Her younger brother Tokuya serves as the representative. ◉Koshio Umebayashi Special Junmai Slightly fruity, sweet and sour. It has a slightly complex flavor with a hint of umami. Saitama is not considered to have an image of sake, but it seems that the prefecture as a whole has a strong individuality of its own, with breweries such as the traditional Shinkame and now Hana-yoso having a strong individuality. The prefecture ranks fourth in the nation in terms of shipments, and the battle for fourth place always seems to be between Chiba and Saitama.

National Sake Fair 2025㉖ Saitama Prefecture ① By the time we arrived at the Saitama booth, about an hour had passed... Sato Sake Brewery in Echigo-cho! In Kanto, you can buy it at Yamaya, but in Kansai, you won't find it at all💦. Polishing ratio 60%, sake brewer's alcohol level -2 to +2, acidity 1.3, amino acid level 1.0, 15.0 In-house yeast, 1,540 yen. Sake level varies from site to site. Slightly sweet and refreshingly delicious acidity. It is a food sake type that doesn't interfere with food. I imagined it to be more floral and fruity, so maybe it is different from what I expected. Maybe there is such a type in the lineup 🤔. It won a gold medal in a heated sake contest, so maybe it's not what I was expecting...

Nigori Umeshu (plum wine) from Koshu Umebayashi. This is an extra post because it is a plum wine, but it is a sake based plum wine. I was about to have a glass of sake when I came home, My wife reported that she hadn't had Koshu Umebayashi's plum wine for a long time, and it had become mellower and less angular. My wife is not a drinker, so I thought it was unusual and therefore went with it on the rocks. It is a nigori plum wine with plum pulp, basically dry, and it may indeed have become mellower. I bought it last spring at a direct sale at a brewery in the Koshu Plum Grove and had drunk more than half of it so far, and it had been sitting in my kitchen. I think it is quite good👍. As for sake-based plum wine, my personal favorites are from Niigata sake breweries I personally like sake based plum wine from Niigata breweries such as Shimehari Tsuru, Koshino Katora, and Tsururei. It matches my taste for sake.

#Koshu Umebayashi Jungin Nao Kumi Nama Sake . Almost no gasiness, but the flavor is somewhere between sweet and gorgeous fruity and refreshingly food sake. I thought it was delicious, neither too flashy nor too subdued, but exquisitely flavored. If you find the summer sake that comes out of the bottle to be too thin, this might be a good choice for you😊.

I had only purchased Koshu Umebayashi a couple of times at a sake brewery's direct sales outlet, but I never expected to see it at Koyama Shoten, a sacred place for Japanese sake. I couldn't believe my eyes and looked twice. And I was told that it was from Koyama Shoten PB, so how is that possible? I was even more confused. Sato Shuzo also produces another brand called Nakadaya, but I have yet to try it. I have never had a sake from Sato Sake Brewery, let alone a straight kumi, and my only impression was of Koshu Umebayashi, but I was aware that it was a brewery that made a very classic food sake. I took a sip without paying attention to the aroma, and at that moment, I felt a strong impact similar to a sense of deja vu: "I know this aroma. This is like...Kameizumi cel24? Or is it a hana-yosu? Yes. It is a tremendous pineapple aroma. Both the standing aroma and the hint of pineapple! I happened to get two bottles of Hana-yosu recently, but I'm fine with this one. It's so similar to the pineapple that I think I'm already full of pineapple. Did you replace the label with the contents? LOL! If you drink it thinking it is Koshu Umehirin, you will be confused by the gap in aroma and taste, which is so different from the standard product. However, I think it is a sake that will impress those who like this type of sake.
