I received this sake to compare with Yamanoi's 50. I found out later that this one seems to be made from four different types of rice.
It has a melon-like taste, and the yeast may be the same as that of Yamanoi 50. This one has a little more umami and sweetness, and has a mellow and delicious taste.
I drank it with Matsumae pickles, and it was quite good. It might be good with something salty.
Yamanoi is a brewery in Fukushima, and the toji, Kagehiro Watanabe, makes sake based on the concept of "brewing sake with a free spirit. Fukushima Prefecture has many high-level sake breweries, and we have high expectations for this one.
My impression is that it has a fruity, melon-like flavor. The rice polishing ratio is 50, and the taste is clean and refreshing without any cloying flavors.
I had never been aware of Yamanoi before, but it was very tasty.

I couldn't resist the urge to drink some of the mountain wells, so I went to Antenna House and bought some 🤗.
As I thought, it's not too sweet and refreshing ✨.
It has a little bitterness at the end 😖.
Without the bitterness, it might be too clean and not enough 🤔.

Last time, I wrote that the sweetness, spiciness (in this case, I imagine the alcohol aroma cutting through), acidity, and bitterness were in perfect balance, and the flavor disappeared smoothly without changing from the attack to the aftertaste, but the overall impression is that the flavor has become gentler.
In addition, I don't know if it is a kind of aging aroma, but I felt a lingering aroma like that of Shaoxing wine.
I don't know the specs so I can't say for sure, but I got the impression that this sake is more like something that has been laid down to sleep.
