Hidakami Drinking Comparison
Yamada Nishiki has its roots in Watanabune No. 2 and Yamadaho. We often hear which one is the father and which one is the mother, but it means stamen and pistil, right?
Personally, I prefer Watabune because it has a better balance of sweetness and acidity. Yamadaho is a bit thin.
However, we had it at a sushi restaurant, and when it comes to fish, it is Hidakami. I couldn't go wrong with either one.
