So when I got home, I couldn't decide between a strong carbonated drink or a sweet drink, but I was tired, so I went with the sweet drink, Yu Hatsumura! Now, I'll have some!
The aroma is faintly sweet. It has a soft, soft mouthfeel, with a clear, dense sweetness, and a mild acidity that slowly rushes in.

This is my second time to drink Sairai but my first impression was good so I had high expectations 🫣.
I was expecting it to have a fruity aroma like muscat? It has a fruity aroma like muscat. The gas has a soft mouthfeel and a slight shrieking sensation. Juicy sweetness and refreshing acidity with a long finish.
The sweetness is stronger than I expected 🤔 Maybe it's because I just received the bottle and opened it so it was only slightly chilled.

まつちよKoueikiku's Ikumochi 2022BY brewed with natural lactic acid bacteria 🍶.
I opened it once last autumn because I heard it was better to let it sit for a while, but the balance was not good, so I kept it in the fridge for another half year 😅.
The first aroma is sweet with a hint of acidity, which is typical of natural lactobacillus brewing (Yamahai).
When you taste it in your mouth, it has a full-bodied sweet and sour aroma that is typical of Yamahai.
However, it is not that heavy like Koei Kiku.

I opened a bottle of 2022BY unfiltered draft last year and let it sit for another 6 months 😋.

I guess real Yamahai never goes bad.

We bought this sake out of curiosity when we heard that there was a very good sake in Nagasaki, Tobiran! It's a good thing I had a regular sake. Today, I'm going to drink it with motsu nabe (hot pot)!
It has a very sweet, raisin-like, grapey aroma. The water goes in very softly and smoothly, and the ripe sweetness of raisins and bananas envelopes you. The waitress said it is a sake like Shinmasa.

A beginner's sake recommendation was introduced in the video. As I am still a novice, I thought I would like to give it a try.
So here I go!
According to the brewer, it is recommended to drink it on the rocks, so I put ice in it and drank it. The aroma had no hint of alcohol. It has a sweet and sour taste like yogurt. The mouthfeel is a bit hard watery, but not enough to be bothered by it. The taste is very strong. It is like drinking undiluted Calpis, which is definitely not good straight. It is sweet and sour like Calpis, with a little citrusy sweetness. There is no alcohol taste at all, and if you don't like sake or have never had it before, this sake will go down a treat with those who have never had it before. It is a great sake because it is made with sake technology.
