A ginjo-shu with a strong sweet aroma of rice. It is made from Gohyakumangoku rice produced in Fukui Prefecture and has a yogurt-like sweetness, but it is a refreshing and crisp sake that goes down the throat easily.
I received this from Jive-san at the offline meeting.
Yutaka Sake Brewery in Sabae City, listed as SINCE1753, so it must have been founded in the mid-Edo period🧐.
A little research on Fukui Prefecture around this time revealed that a sumo tournament was held at Obama Hachimangu Shrine.
I will enjoy it while thinking about such history.

A fruity aroma with a sour taste, a firm umami taste with a modern sweetness, a sharp finish, and a dry, refreshing aftertaste.
HAKKINO was awarded a gold medal for HAKKINO METHOD LURAL in the sparkling category of the current competition ✨.
The aroma is melon-like with a hint of sweetness.
After the taste, which is mainly rice flavor, it finishes with an alcohol taste that tightens up the taste.
It is neither too bright nor too mild, just the right sake that can be drunk without being overbearing.

But we wanted to make a toast with sparkling wine, so we started with a toast with candles brought by Umaisan.
This time, there was no professional to open the bottle, so those who brought their own bottle opened it by themselves.
It was a crowned type, so it took a second to open and then it spurted out 💦.
It tasted sweet and sour, like it wasn't sake!
It tasted like a cider like the one I had at the Japanese Sake Festival.

Fukui Reinetsu Trip in Summer (2)
A 3-day/2-night trip based on the Echizen coast.
On the second day, a footbath at Awara Onsen (hot spring), Tojinbo, Borgara rice, and a sake brewery are called "Hana Candle".
The sake is served lightly chilled.
The aroma is of ripe apples with a hint of barley.
The overall taste is light and smooth.
The nose has a soft apple-like sweetness, followed by a brandy-like smokiness, and the taste of rice cake. The aftertaste is bitter with a sharp acidity that gradually fades away with an astringent taste that lingers on the tongue.
The peak of sweetness and umami, which changes from soft sweetness to smoky and thickens, is followed by an astringent finish that is interesting.
After a day of drinking, the smokiness settles down and the sake becomes lighter and easier to drink.
On the second day, we enjoyed a leisurely evening drink while watching the sunset on the Echizen coast and re-searing grilled mackerel sushi.
I can't tell you how happy I am to spend the time leisurely as the sun sets and the moon turns to a crescent moon 💕.
And all the while pretending to be a stylish dinnertime drinker,
In fact, I made the painful mistake of forgetting to bring a sake cup this time.

After the sunset on the first day 🌅, we had a stylish time with grilled mackerel on the second day 🥹....but then we had a big mug 🥛 for dinner 🤣 what a relief 😁.

They do eat "oroshi-soba" and "chuka-soba" though 🤔.

Hello Nobu Nobu-san. I was so impressed that even just the free footbath at Awara Onsen can make you feel like you are in a hot spring. ♨️ It was a very satisfying trip to Echizen, where I thoroughly enjoyed the nature, food, and drinks! Today and tomorrow will be great days for sure😊.
I bought this at a Japanese sake festival.
I bought it because it can be heated.
It has a light freshness that is typical of a freshly stored sake, but it also has a rich and somewhat ripe taste.
It definitely tastes better when heated and is juicy!
The aroma is also very pleasant!
It's interesting to note that they also have a heated version of their honjozo sake!
I heard that the brewery is located in Sabae, but I used to go to Sabae just to see the spring water and never drop a penny, so I was able to atone for my sins by buying it here!
