This is the first lime label in two years. I'll spare you the details, as I've already reviewed it before. It's still as piquant, fresh and sweet as ever. I was right to choose this one instead of the Mimuro Cedar I saw at the first Mochizuki I stopped by🥰.
Queeen of lingering grass...what's that, three e's?
The aroma is subdued. It has a nice yellow tinge to it.
The wine has a pleasantly sweet, almost honeyed apple-like taste. What's that? I didn't know it had such a rich flavor. It gives a different impression, but it is very tasty.
Zanko Hourai's new sake, special junmai. The aroma is a bit subdued, but it has an apple aroma typical of Zanzou with a refreshing acidity and sweetness. It also has a rough aftertaste, as is typical of new sake. It also has a somewhat salty and hard taste.
Rice polishing ratio 60%, alcohol content 16%.
The aroma is restrained. When you drink it, it has little sweetness and a rambunctious acidity. It has a nigori sweetness, but its core is strong and assertive.
New sake nigori from Zanso Hourai. The aroma is a banana type of cottage tropical fruit from yogurt. It is not sweet. But there is plenty of umami. It has a tropical banana flavor. It is not too strong. The overall flavor is very rich for a zanso.
This is the first freshly squeezed raw sake from Zancho Horai. Because it is a tokuso-jun, the ginjo aroma is low. In the mouth, there is a light gasiness, followed by a nutty sweetness that is nothing short of delicious. The specs are as follows
Rice used: Chiba rice
Polishing ratio = 60
Sake meter = -3.0
Acidity = 2.0

After seeing the brewery's Instagram, I was right to go straight to the liquor store after work. So, a bottle from one of my favorite breweries in Kanagawa, Japan, was delicious. _.) _(. _.)
