Shunoten Junmai Daiginjo from Manya Brewery in Yamanashi Prefecture, purchased at the Shingenkyo Festival. It is made from 100% Yamadanishiki grown in Yamanashi Prefecture. It is clear and has a very nice aroma that fills the mouth. It was my favorite type of sake.

Yamanashi's Sake, Haruyingchu
I can't read the kanji at first sight.
Gentle sweetness and umami, with a slight nice aroma.
It has a nice sharpness.
This is a sake with good potential to be warmed up!
It is better to drink it at room temperature to lukewarm than chilled.
I think that's the true essence of this Haruyingtongu.

I went to the brewery I wanted to visit on my trip to Yamanashi. We jumped in just before the store closed and the Junmai Daiginjo we were looking for was sold out. This time, we bought a set to compare. The first one was Junmai Ginjo! It is a strong but light sake that can be enjoyed with a meal.
I think it has a modern finish. Its gorgeous aroma and freshness can be felt even after some time has passed since it was unsealed. The aftertaste is not too strong, making it a very drinkable sake.
It has a clean aftertaste and you can drink it like water!
It is delicious!
