I had the opportunity to visit a sake brewery in Tokyo that is well known for its delicious and famous gecko, so I paid a visit for the first time: ❗️❗️ I don't know if it's only available here, but there were a lot of sake that I had never seen before, so I bought this one that seemed to suit my taste while expressing my gratitude to the sake brewer for always letting me enjoy their sake. ❗️🍶 Now let's start with the aroma: ❗️ When you open the bottle, you hear a pop ❗️, which means it's a gas chili type of sake. ⁉️ I'm looking forward to it! The aroma is a little bit sweet. I don't know if it has any particular characteristics. If I had to say, it's a bit like the Sentori we drank last year. Then, take a sip. It has a sweet, berry-like aroma, but the flavor of the rice spreads quickly. ❗️ sweet and juicy 🍶. The aroma is much stronger in the mouth, more complex and a bit peculiar. It's not the ramune juwa~❗️ like Yamamori, but this is a delicious one that you will want to repeat. It's hard to describe, but it was that kind of sake that felt fun to drink 🍶.

The 5th Sagajo Shoten Presents at the 5th Bishushu Raku Kushan Shokai 😃. We were honored to have the opportunity to visit the Umaue Sake Brewery in Hiroshima ❗It's a rare sake to drink, and we had to have another one 😉. So this one is made with Ginpu! At home. This is my favorite Sei Masamune. I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

Tenryo, which I ordered at a meal on my trip. It was a freshly brewed and stored Honjozo brewed with Hidahomare. I usually don't drink Hidahomare, Honjozo, or Nama-Seizou, so I thought it would be a good opportunity to drink it. The color was crystal with a slight yellow tinge. The aroma is quite mild, with mineral and earthy notes. When you drink it, it has a slightly fruity overtone. Next comes a sense of minerality and a hint of sweetness. There is also a slight white ball-like feeling. The acidity is smart and not too assertive. Bitterness appears a little at the end. The lingering aftertaste is pale and slowly fades away with the bitterness. As is typical of honjozo, it has the sake-like flavor that is generally imagined by those who do not normally drink sake, but it is a food sake with a fruity character that is typical of freshly stored sake. It's meant to be served at ryokans, as it goes perfectly with fish, vegetables, and other Japanese dishes! I've been drinking a lot of sake that can be drunk on its own, so I'm very satisfied with my first "food sake" in a long time! It may not be a hit with those who only accept easy-to-understand sake, but for those who like dry sake, or those who want to enjoy a marriage between sake and food, or to complement food, this is a naturally delicious sake.
