This is a seasonal sake from spring to summer of Onikoroshi, the main brand of the Uota Shuzo brewery. It is a junmai daiginjo unfiltered raw sake that is stored in a snow cellar. It is sold at the brewery, at a roadside station in Kiyomi, Takayama City, and at supermarkets in Takayama City. The color is hazy with lees, and it has a rich aroma of rice like doburoku. The rich flavor is reminiscent of onikoroshi, and the sweetness spreads out from the rich umami. It is one of Misobagi's favorites with a long-lasting aftertaste.

The 5th Sagajo Shoten Presents at the 5th Bishushu Raku Kushan Shokai 😃. Tenryo, which I ordered at a meal on my trip. It was a freshly brewed and stored Honjozo brewed with Hidahomare. I usually don't drink Hidahomare, Honjozo, or Nama-Seizou, so I thought it would be a good opportunity to drink it. The color was crystal with a slight yellow tinge. The aroma is quite mild, with mineral and earthy notes. When you drink it, it has a slightly fruity overtone. Next comes a sense of minerality and a hint of sweetness. There is also a slight white ball-like feeling. The acidity is smart and not too assertive. Bitterness appears a little at the end. The lingering aftertaste is pale and slowly fades away with the bitterness. As is typical of honjozo, it has the sake-like flavor that is generally imagined by those who do not normally drink sake, but it is a food sake with a fruity character that is typical of freshly stored sake. It's meant to be served at ryokans, as it goes perfectly with fish, vegetables, and other Japanese dishes! I've been drinking a lot of sake that can be drunk on its own, so I'm very satisfied with my first "food sake" in a long time! It may not be a hit with those who only accept easy-to-understand sake, but for those who like dry sake, or those who want to enjoy a marriage between sake and food, or to complement food, this is a naturally delicious sake.

The rice used is Yamadanishiki and Shunyo. This is Izumo no Kuni's newest brewery, created (reborn) last year. Naturally, it was the first time for us to visit. The image of sake in this area is that of powerful sake-like sake, all of which are unique. This sake is unique in the sense that it is, but the image has been overturned. It is very fruity and lightly sweet and sour, with a pleasant citrus bitterness spreading from the sweetness and acidity. The mouthfeel is clear and crisp. I went to Tabe Takeshita Sake Brewery and Sake Brewery Museum 😆. But all the sake was sold out there 😭 So I went to a liquor store that sells this sake and bought Rihachi👍. I wanted to drink it and I couldn't bear to end up not being able to buy it 😣. But I'm glad I was able to buy it safely 😌. I've had this drink before and I know it's good, so I feel safe drinking it 😌. I wasn't sure whether to buy Rihachi's white label or black label, but this time I went with this one ✨. I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.
