Soba noodle restaurant in Sapporo Raccoon Alley. They attack the dry taste. Tagami" is made from 100% Hitanishiki produced in Hitachiniku, Ibaraki. It has a clean aftertaste. It is a delicious sake.

I was curious about Raifuku's stag beetle when I saw it last year!
The large picture of the stag beetle on the label is impressive!
The aroma is gorgeous, like tropical fruits.
It is somehow mixed with a slight citrus aroma that is very pleasant.
In the mouth, the first sensation is a fruity sweetness that is just as impressive as the aroma and surprisingly smooth on the tongue. This sweetness is not sticky and disappears quickly. After that, a mild acidity appears and tightens up the whole experience.
The aftertaste is clean and crisp, and you can't help but reach for another cup.
It is fun to see the brewer's playful spirit and solid technique in the yeast used in this sake 😊.
