The rice polishing ratio is a delicate 59%, a common ratio for Nagano sake. The aroma is mild, as is typical of Daisetsukei, with a slight gasiness. The slightly dry taste is probably due to the acidity. It has a thicker umami than the freshness that is typical of nama-shu.

The aroma is intense with a strong alcohol taste.
The rich rice flavor spreads in the mouth.
It also gives the impression of a strong white wine.
It is very drinkable.
The nose...apple, with some sourness.
But there is a herbal...refreshing breeze flowing behind it, and it seems to converge smartly rather than swell.

I thought it was pretty sweet and it has a sake level of -29😅.
But it also has a strong sourness, almost like a plum wine?
It also has a hint of gas and an aftertaste that's not so bad.
It's very refreshing: ❗️
Even people who don't like sake can drink it.
It's like a white wine with strong sweetness and acidity. ❗️
Good for western food 🤔.
I have other summer sake from Daisetsukkei on standby.
