The last one was an original bottle of 🍶 from Sushi Restaurant KAIGETSU, one of the most popular sushi restaurants in Fukui.
KAIGETSU Aged Junmai Sake
It is made by Mouri Sake Brewery, which brews "Sari" in the Togo district of Fukui City, and the masters of the restaurant are good friends with each other.
It has a tranquil ginjo aroma, a rich umami taste, a slightly bitter bitterness, and a mildly sharp finish, with a bitter taste at the back of the throat and a mild aftertaste.
What a balance 😲!
The essence of mild fanniness and bitter bitterness is irresistible!
It was my favorite flavor among the ones I drank this time, but I'm wondering if I have to go to KAIGETSU to drink it 😅.
I was entertained by [Poziya] until the very end 🥰.
They are planning to open a Chinese course restaurant in Katamachi, a downtown area of Fukui, in the spring of next year, and I would like to go to the restaurant when it opens again ✨Till then, I'll say goodbye for a while!

ICHIHONYOSHI HIYAOROSHI Autumn Junmai Sake

Ippongi" will soon be the first sake to be served in the prefecture at the time of its new release.

Eiheiji Hakuryu Dochitekiteki.
It has a calm ginjo aroma, a soft sweet flavor, and a soft finish with a pleasantly sweet aftertaste.
The image of sweetness is the same as the first sake "Hakuryu Zen", but this one has a more intoxicating sharpness 🤔.
I ordered "Otsumami Menma" as a side dish.

Hakuryu Zen Unfiltered Nama Sake

Oki Junmai Ginjyo Namaishu.
I thought I had never seen this bottle before, but later I found out that it was from the "Shuten Doji" brewery: ✨️
The aroma is gentle and calm, the mouthfeel is slightly sweet, and it finishes with a juicy, sweet aftertaste.
The name is harsh, but the taste is so gentle that even the demons are enraptured by the taste.
This one seems to be brewed with "Gohyakumangoku" grown in terraced rice paddies in the town of Oe, where the legend of the "Ogre of Oe Mountain" remains 🤔.
To end the day, we ordered ramen at Pojiya, this time the seasonal "cold tantanmen" (cold ramen noodles) 🍜.
The sweetness of the sesame sauce and the moderate spiciness of the soup with a hint of pepper are well mixed with the noodles, making it a perfect dish 🥰.

Haginotsuru Junmai Ginjo Betsujikomi.
Full-bodied with a slightly less sweet aroma than Mita, it has a clean, fruity sweetness on the palate and finishes with a mild sweet aftertaste.

Houou Mita: "Tsurugi Junmai Bottle Heated and Fired".
The aroma is sweet like melon, the mouthfeel is fruity and sweet, and the finish is juicy and fruity with a sweet aftertaste.
The sharpness is like a sword, and while it is a dry junmai, it is balanced with the sweetness that is typical of Houou Mita.

Hakkaiyama Junmai Daiginjo Hyokushitsu Storage for 3 years.

Perfect for shime (Japanese rice wine).
The salt content was taken away by the decomposition of alcohol, so the salt ramen with its gentle flavor and richness was just the right amount of intoxicating!

The taste and aroma go well with the spicy gizzard as a side dish.
(I later found out that it was brewed using the facilities of Hata Shuzo of Daijiro, which the brewer of Nakazawa Shuzo studied when he resumed sake brewing, and that it was brewed with the facilities of Hata Shuzo when he resumed in-house production.
When I checked the label carefully, it is true that the "Haku" in "Ichi Haku" does not have a dot.

Hakuryu Junmai Ginjo Usu Nigori
Soft, sweet, milky rice aroma, strong creamy mouthfeel with a crisp acidity, and a calm, soft aftertaste.
Add more entrée 🍴.
Spicy Gizzard" which was on the recommended menu, deep-fried gizzard with a lot of garlic, garlic sprouts, and curry powder on top, it had a strong aroma, so it was not a good match for sake 😅.
I think it would be a great partner with beer 🍺, so next time I'll have it with beer 🥰. ジャイヴ[The second drink at Poziya.

Melon-like sweet rice aroma, a slight tangy gassy feeling on the palate, juicy sweetness like a melon, and a sweet aftertaste.

This time we shifted from relatively sweet to spicy, so the Chinese noodles at the end of the meal tasted even better 🥰.

The second and third "Hagi no Tsuru Kotatsu Neko" and "Machida Shuzo Nigori" were the same as the last time, so I omitted the review.
The fourth cup was this sake.
Shikishima Yamadanishiki Special Junmai Unfiltered Nama-shu with No. 8 Yeast.
The aroma is heavy with rice and a little citrus, the mouthfeel is heavy with umami and acidity, then there is a lingering aroma and a lingering aftertaste that is similar to that of cypress, like a barrel sake, with a slight sweetness at the end.
The last part is slightly sweet.
