Refreshing Summer Sake
Fruity aroma, thick attack. Light and dry. Light and full-bodied.
Accompanied by a summer evening set (shrimp and squid with sea urchin, deep-fried tofu, deep-fried eggplant, stewed beef tendon). So I had to refill my sake 🤣.
Today's third bottle is a low-alcohol sake from Koshinotaka purchased in Tsuruga.
Even though it is a low-alcohol sake, the alcohol content is a whopping 3%😳.
It has a sour taste like black vinegar.
I have had many low-alcoholic beverages, but I did not know it tasted like this.
In a way, I was shocked by this alcohol 🤣.
I got it at an antenna store in Fukui Prefecture.
There were so many kinds, I was so worried. In the end, I just bought the jackets!
I felt the taste was quite robust. It might lose if it is used with light white fish or something. It has a strong sense of umami.

It is a sake that can be served with any accompaniment 🤣.

Ito Shuzo located in Fukui City, representative brand is Koshinotaka.
The representative brand is "Koshinotaka".
It is a perfect combination of sweetness, flavor, and richness. It is a high priced sake.
Ito Shuzo is the brewer of both Madenome in Mie Prefecture and Koshinotaka in Fukui Prefecture. There was also a brewery in Gifu Prefecture that made a brand called Karasuminescence, but it was merged into Tokyo Port Brewery (Wakamatsu Co., Ltd.) in 2016.
