Sweetness in the bitter taste.
Then sweetness on the tongue, then umami.
Not flashy, but a perfect food wine.
This is the kind of sake that you never get tired of drinking.
It's a sake that will last for a long time.
Delicious!

Iyokagiya Seiryo
Seiryo from Seiryo
It is a little dry and refreshing food sake with a cutout of fireworks, which is also summery.
Seiryo was founded in 2002 by Seiryo Shuzo, a sake brewery that was named after its founder, who was a "key shop keeper" of a rice brewery before its establishment in the Meiji era.
Kagiya from Saijo, Ehime!
I drank Junmai before, so I went for Junmai Ginjo.
The moment I opened it, I could smell the ginjo aroma. It is a very elegant sake. It is a dangerous sake because it can be drunk like water.
It's getting hot, so I chose a summer sake 🍶. Delicious 😋It is soft on the palate with a crisp aftertaste! The aroma is just right and lingers in the mouth. I served it with scallion butter with more butter.
It has a subtle sweetness and a sharp finish. It is good as a food sake. It is also delicious with just the right amount of flamboyance. Highly recommended.
I forgot where I bought it, but I was curious about Iyo Kagiya.
I was told it was sake brewed with Ehime Sakurahime yeast.
Contrary to my expectations, it was dry.
It has no harsh taste, so it is good as a food sake.
