Last post before the sakewa short break 🤣. I'm opening a bottle of my cherished Shinshu 🐢 age-san 😀. It's still delicious😇 I really prefer it raw, but I can feel the freshness that I can't believe it's fire-roasted 😇. I'll be away from Sake no Wa for a while due to time constraints, but I'll do my best and come back as soon as possible with a power up...no need to power up that much 🤣.

I am in the middle of Kochi sake... I was able to purchase it on the first day of GW with various connections. I won't go into details, but thank you Rafa for connecting us 🙇. It's commonly known as "Kinkame. It is gassy, sweet and juicy. Citrus and apple type. The second half is a little bitter, but the aftertaste is very fruity. Delicious but too luxurious, I would like to drink an everyday 🐢. I can't afford it though 🙄. I can never drink Hexagon on this 😭

Fusashimaya Junmai Unfiltered Nama Sake Omachi I wanted to drink Boshimaya after a long time So I bought it 😊. It's Omachi from the White Koji series: ✌️ The unique acidity of white malted rice and The unique acidity of white malted rice and the rich umami of Omachi The unique spiciness of Fusashimaya Each flavor complements each other and they come together beautifully... The taste is as good as expected 🤤. The bottle went quickly... I'm running out 🤣. Rafa was trying to get my entrée... Guarded with ponzu and dressing 🛡️ His pathetic face is a little sad 😢.

Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.

Re:vive KUGA Unfiltered Unrefined Genshu May 12 was a tour of liquor stores in Hokusetsu area 🚗 with Mr. Wakata and Mrs. Yuki. With Mr. Wakata and Mrs. Yuki We went to Hata Sake Shop for the first stop... We chose Re:vive KUGA ✌️ I had already decided before we went there after seeing their instagram! Hizume Hirai Residence, the place where Kiku no Tsukasa was founded. Revived as a sake brewery 100 years after relocation Craft saké due to liquor tax law A portion of the moromi is fermented with glutinous rice germinated with brown rice malt is added to fermentation When poured into a cup, it is very smooth and clean. It has a very clean and refreshing taste 😋. Full sweetness and pleasant umami of rice Delicate and fresh acidity 🤤. Yuki-san is very good at getting the owner on board. The sake tasting kept coming out one after another 🤣. I didn't know you could sample this much... 😳 New discovery 💡. I, the driver, was watching with my fingers in my mouth😅.

Honkin👍‼️ At Hata Sake Shop in the first half of GW... I went to the cash register for a bottle of Hokian Okuni Yuki-Chu-Age and a bottle of Honkin... Then the owner smiled and said 😊... I've got it for you 😳 Put the honkin back in the fridge😅... 🐢Take it home 🤣 Very lucky ✌️‼️ So many people want to drink it but can't... Maru wrote about it in her zenkichi review... I wasn't expecting to be able to buy it this time... I drank Hitogochiki Junmai Ginjo on draft... So I bartered with Maru-san: ✌️ We went to visit a liquor store with a reason for delivery. Revisited Hata Sake Shop... I bought some more Honkin that I put back in the fridge the other day 😌... Gentle sweetness and rice flavor with beautiful acidity. There is also a slight gassy feeling. Delicious and sweet, but I think the sweetness is a little weak, so I personally would like a little more sweetness. I think it tastes better if it is left outside for a little while rather than being chilled to a crisp.

Kitaan Okuni Aged in snow☃️ Junmai Ginjo Unfiltered Nama-shu One of the heaviest snowfall areas in Nagano Prefecture☃️ Kitayasu Ookuni is a sake matured in the snow for about 2 months in Kotani-mura, Kitaazumi-gun. Aged in the snow for about 2 months in Kotani Village, Kitaazumi-gun❄️ It's a sake that's exclusive to Hata Sake Shop 😌. Sake wrapped in newspaper 📰 is definitely delicious 🤣. Definitely delicious 🤣. You can really taste the flavor of the rice and Sweetness with a gentle mouthfeel 🌾. with a moderate acidity and a beautifully sharp taste. The unique bitterness leaves a slight aftertaste Very mellow and full of flavor🤤. A limited edition sake that will make you feel luxurious 👍‼️

Today we had Nozomu's active nigori 😀. The opening went without a hitch, and we were able to collect the supernatant and nigori for tasting 😀. I compared it with Hanaboe's Splash and Hanamup, which I opened yesterday, and it tasted even more like a lactic acid drink than Hanaboe's Splash, which is my favorite sake 😇. I still love nigori sake 😀.

Spring Sake & Nigorinpic1️⃣ 3️⃣ Today's sake is from Ibaraki Prefecture and is called Magami-san 😀. The owner of Hata Sake Shop, which I've been working with recently, recommended this sake to me as it is absolutely delicious 😇. The owner knows that I love Shinshu Kamerei and recommended it to me, so there is no doubt about it 😀. It is a muddy sake, but the supernatant was removed without incident 😇. The aroma is melon, but the supernatant after being brought to room temperature was quite dry and robust tasting 🤣. However, after mixing the lees and making muddy sake, it tastes more like melon 😇. But because of the dryness of the supernatant, it was a great melon sake with a sharp taste that did not interfere with the meal 😇.

I thought it was time to start a spring sake comparison, but before I do that, I'm going to open a bottle of sake that I prepared for warming up😇. I opened a bottle of Mutsu Hachisen's ISARIBI 😀. My image of heated sake is one that goes well with fish dishes, but today I'm going to start with a cold sake 😇. It's a special junmai, but I could smell the same ginjo aroma as a ginjo-shu, but it's not as dry as it should be 😀. It was a delicious sake that didn't interfere with the food 😀. Of course, the dish I paired it with was sashimi, which was delicious 😀. Tomorrow will be the last time I warm up sake for the year 🤣.

The hundred spring is the first time 🍶. Hyakushun, brewed by Kosaka Sake Brewery, is a wish that the drinker will enjoy sake and be in good health for a hundred springs. The brewery is dedicated to producing fresh sake with a slight gassy taste by direct pumping. Fraise" is French for "strawberry. The sake has a sake strength of -18 and an acidity of 3.0, and the alcohol content is slightly light at 14%. The appearance is crystal with a slight yellow tint. The ginjo aroma is soft, with a hint of berry sweetness and sourness with a strong acidity. On the first day, the unique powdery lime-like nuance was bothersome, but by the second day of opening the bottle, it was almost unnoticeable, so the following is a review from the second day onward. The stimulation of fine gassiness in a smooth spread. The first sip has a white malted rice-like acidity. After that, it starts with a clear sweetness, followed by a cute, berry-like acidity that spreads softly on the palate. The fruity sweetness rides on the tongue, and the acidity flows down the back of the throat and finishes. The lingering slight stimulation of the acidity gives it a nice sharpness. From the specs, the taste is surprisingly clear and clean, with a moderate sweetness and a fruity, firm acidity that brings it all together 🍓.
